Term\u00edn b\u0159ez\u0148\u00e1k poch\u00e1z\u00ed z doby, kdy byl b\u0159ezen posledn\u00edm m\u011bs\u00edcem, v n\u011bm\u017e se dalo va\u0159it pivo. Pozd\u011bji ji\u017e teplej\u0161\u00ed po\u010das\u00ed podn\u00edtilo roz\u0161\u00ed\u0159en\u00ed divok\u00fdch kvasnic, co\u017e vedlo \u010dasto ke znehodnocen\u00ed fermentovan\u00e9ho n\u00e1poje.<\/p>\n<p>K v\u00fdrob\u011b b\u0159ez\u0148\u00e1ku se pou\u017e\u00edvalo kvalitn\u011bj\u0161\u00edch surovin a p\u0159id\u00e1valo se v\u00edce chmele ne\u017e bylo b\u011b\u017en\u00e9 u jin\u00fdch piv. Vy\u0161\u0161\u00ed stup\u0148ovitost b\u0159ez\u0148\u00e1ku zaji\u0161\u0165ovala bezprobl\u00e9mov\u00e9 druhotn\u00e9 kva\u0161en\u00ed a ochranu p\u0159ed kvasnicovou n\u00e1kazou.<br \/>\n<br \/>\nLe\u017e\u00e1k se tedy va\u0159il v b\u0159eznu a poka\u017ed\u00e9 se ho vyrobila velk\u00e1 v\u00e1rka. Na\u0161i piva\u0159\u0161t\u00ed prap\u0159edci si u\u017e\u00edvali tohoto le\u017e\u00e1ku po cel\u00e9 l\u00e9to a koncem z\u00e1\u0159\u00ed p\u0159i tradi\u010dn\u00edch slavnostech dopili zbytek z\u00e1soby.<\/p>\n<p>B\u0159eznov\u00e9 pivo pou\u017e\u00edvali sta\u0159\u00ed \u010cechov\u00e9 jako l\u00e9k a p\u0159isuzovali mu zvl\u00e1\u0161tn\u00ed, a\u017e nadp\u0159irozenou  moc. Bylo op\u0159edeno mno\u017estv\u00edm pov\u011br a legend.  Domn\u00edvali se, \u017ee na s\u00edlu b\u0159ez\u0148\u00e1ku p\u016fsob\u00ed obdob\u00ed jeho vzniku, tedy jarn\u00ed atmosf\u00e9ra o\u017eiven\u00ed a obnovy. N\u00e1sledn\u011b se tento typ piva rychle roz\u0161\u00ed\u0159il a tradi\u010dn\u011b se j\u00edm slavil sv\u00e1tek \u010desk\u00fdch sl\u00e1dk\u016f, den sv.V\u00e1clava 28.z\u00e1\u0159\u00ed. V pozd\u011bj\u0161\u00edch dob\u00e1ch se jednalo o pivo, kter\u00fdm se \u201evyt\u011b\u017eovala\u201c v\u00fdrobn\u00ed kapacita pivovaru v nejslab\u0161\u00edm obdob\u00ed, a kter\u00e9 bylo ur\u010deno ke konzumaci v l\u00e9t\u011b, kdy pivovary zpravidla nesta\u010d\u00ed vyr\u00e1b\u011bt. Aby vydr\u017eelo tak dlouho, muselo se samoz\u0159ejm\u011b jednat o siln\u011bj\u0161\u00ed v\u00edcestup\u0148ov\u00e9 pivo. Kup\u0159\u00edkladu v oliv\u011bt\u00ednsk\u00e9m kl\u00e1\u0161tern\u00edm pivovaru se na konci 19.stolet\u00ed va\u0159ilo pr\u00fd znamenit\u00e9 14 stup\u0148ov\u00e9 tmav\u00e9 pivo C\u00edsa\u0159sk\u00fd b\u0159ez\u0148\u00e1k (Kaiserm\u00e4rzenbier), kter\u00e9 z\u00edskalo na pa\u0159\u00ed\u017esk\u00e9 v\u00fdstav\u011b v roce 1890 a ve V\u00eddni roku 1898 zlat\u00e9 medaile.<\/p>\n<p><br \/>\nVe v\u011bt\u0161in\u011b zem\u00ed  Evropy se b\u0159ez\u0148\u00e1k st\u00e1l b\u011b\u017en\u00fdm pr\u00e9miov\u00fdm pivem plze\u0148sk\u00e9ho typu va\u0159en\u00fdm cel\u00fd rok. Pouze v N\u011bmecku se tradice \u201eb\u0159eznov\u00e9ho piva\u201c zachovala. A tak v z\u00e1\u0159\u00ed a \u0159\u00edjnu tam b\u00fdv\u00e1 zvykem nab\u00edzet M\u00e4rzenbier. V zemi je, jak zde u\u017e b\u00fdv\u00e1 zvykem, p\u0159esn\u011b stanoveno, jak by m\u011bl b\u0159ez\u0148\u00e1k vypadat a jak chutnat.<\/p>\n<p>M\u00e4rzenbier je st\u0159edn\u011b siln\u00e9, sladov\u00e9, jantarov\u011b zbarven\u00e9, pr\u016fzra\u010dn\u00e9, spodn\u011b kva\u0161en\u00e9 pivo, odvozen\u00e9 z v\u00edde\u0148sk\u00e9 varn\u00e9 metody. N\u011bkdy se pou\u017e\u00edv\u00e1 p\u0159\u00eddavek nakou\u0159en\u00e9ho sladu.
