Na ja\u0159e 2005 minipivovar produkoval sv\u011btl\u00e9 v\u00fd\u010depn\u00ed pivo a sv\u011btl\u00fd le\u017e\u00e1k a z\u00e1soboval jimi n\u011bkolik restaurac\u00ed na Vala\u0161sku ale i jinde.<br \/>\nV dubnu 2006 minipivovar produkoval: 10 sv\u011btl\u00e9 filtrovan\u00e9, 12 sv\u011btl\u00e9 filtrovan\u00e9, 12 sv\u011btl\u00e9 nefiltrovan\u00e9 &#8222;kvasni\u010d\u00e1k&#8220; a 14 tmav\u00e9 nefiltrovan\u00e9.<br \/>\nNa Olomouck\u00e9m festivalu (10.-14.5.2006) m\u011bl pivovar sv\u016fj st\u00e1nek a na \u010depu m\u011bl 10 sv\u011btlou, 12 sv\u011btlou kvasnicovou, 14 tmavou kvasnicovou a jako perli\u010dku 17 sv\u011btlou kvasnicovou. Byla uva\u0159ena jen jedna speci\u00e1ln\u00ed v\u00e1rka jako d\u00e1rek pro partnery a nebyla nikde na prodej. Tento festival byl jedinou mo\u017enost\u00ed, kde mohla ve\u0159ejnost ochutnat tento siln\u00fd speci\u00e1l. Na Olomouc bylo dod\u00e1no pouze omezen\u00e9 mno\u017estv\u00ed 4 sud\u016f.<br \/>\nPivovar na sv\u00e1tek svat\u00e9ho V\u00e1clava, patrona pivovarn\u00edk\u016f, dne 28.z\u00e1\u0159\u00ed 2006 otev\u0159el svou Hosp\u016fdku v Olomouci. Hosp\u016fdka se nach\u00e1z\u00ed na ulici Komensk\u00e9ho 5 pobl\u00ed\u017e Pedagogick\u00e9 fakulty pod D\u00f3mem. Na \u010depu byly: BON des\u00edtka, BON dvan\u00e1ctka a BON tmav\u00fd speci\u00e1l \u010dtrn\u00e1ctka.<br \/>\nOd prvn\u00ed adventn\u00ed ned\u011ble roku 2006 byl ve vybran\u00fdch provozovn\u00e1ch \u010depuj\u00edc\u00edch pivo Bon nab\u00edzen premi\u00e9rov\u011b gran\u00e1tov\u00fd kvasni\u010d\u00e1k &#8211; \u0161lo o v\u00fd\u010depn\u00ed le\u017e\u00e1k s 11% extraktu a s alkoholem minim\u00e1ln\u011b 4,7%. Speci\u00e1ln\u00ed pivo jste dostali v Ro\u017enov\u011b v restauraci Na P\u00edse\u010dn\u00e9, ve Fren\u0161t\u00e1t\u011b U Kump\u00e1na, v Jarcov\u00e9 U Zetk\u016f, v Olomouci v Hosp\u016fdce pivovaru Bon. Pivo bylo syt\u011b m\u011bd\u011bn\u011b zbarven\u00e9 s lehk\u00fdmi rud\u00fdmi opalizuj\u00edc\u00edmi odlesky, v chuti se m\u00edsila sladov\u00e1 s m\u00edrn\u011b karamelovou, v dozn\u011bn\u00ed p\u0159ech\u00e1zela do v\u00fdrazn\u00e9 ho\u0159kosti, to v\u0161e bylo jemn\u011b prov\u00e1zeno kvasni\u010dnou chlebnatost\u00ed.<br \/>\nNa obdob\u00ed velikono\u010dn\u00edch sv\u00e1tk\u016f roku 2007 p\u0159ipravil pivovar Jantarov\u00fd le\u017e\u00e1k. \u0160lo o sv\u011btlej\u0161\u00ed polotmavou 11 s d\u016frazem na syt\u011b zlatohn\u011bd\u00e9 t\u00f3ny. V jej\u00ed v\u00fdrazn\u011b ho\u0159k\u00e9 chuti jen lehce probleskoval karamelovo-pra\u017een\u00fd n\u00e1dech po u\u017eit\u00fdch sladech. Oproti v\u00e1no\u010dn\u00ed gran\u00e1tov\u00e9 11 byla tato filtrov\u00e1na. K dost\u00e1n\u00ed byla jen v n\u011bkter\u00fdch vybran\u00fdch restaurac\u00edch \u010depuj\u00edc\u00edch pivo Bon.<br \/>\nHistoricky prvn\u00edho ro\u010dn\u00edku Jarn\u00ed ceny \u010desk\u00fdch sl\u00e1dk\u016f 2007 se z\u00fa\u010dastnilo 20 minipivovar\u016f z \u010cR. V nejv\u00edce obsazen\u00e9 kategorii sv\u011btl\u00fdch le\u017e\u00e1k\u016f 12% skon\u010dil BON sv\u011btl\u00fd le\u017e\u00e1k 12 na druh\u00e9m m\u00edst\u011b. Pozoruhodn\u00e9 bylo i t\u0159et\u00ed m\u00edsto pro BON sv\u011btl\u00e9 pivo 10, jeliko\u017e zde byly spojeny des\u00edtky a jeden\u00e1ctky v jednu kategorii. P\u0159ed BON 10 se dostaly pouze dv\u011b jeden\u00e1ctky.<br \/>\nJantarov\u00fd le\u017e\u00e1k Bon se od 1.4.2007 \u010depoval ve vybran\u00fdch restaurac\u00edch. \u0160lo o filtrovanou sv\u011btlej\u0161\u00ed polotmavou 11 s d\u016frazem na syt\u011b zlatohn\u011bd\u00e9 t\u00f3ny. V jej\u00ed v\u00fdrazn\u011b ho\u0159k\u00e9 chuti jen lehce probleskoval karamelovo-pra\u017een\u00fd n\u00e1dech po u\u017eit\u00fdch sladech.<br \/>\nV nejnov\u011bji za\u0159azen\u00e9 kategorii sout\u011b\u017ee Pivo \u010desk\u00e9 republiky 2007 konan\u00e9 v \u010cesk\u00fdch Bud\u011bjovic\u00edch v \u010dervnu 2007 z\u00edskala nefiltrovan\u00e1 sv\u011btl\u00e1 dvan\u00e1ctka BON 1. m\u00edsto, p\u0159ed velmi kvalitn\u00edm Kvasni\u010d\u00e1kem ze Svijan a nem\u00e9n\u011b chutn\u00fdm Skaln\u00edm le\u017e\u00e1kem z Chodov\u00e9 Plan\u00e9.<br \/>\nV \u0159\u00edjnu 2007 p\u0159idal pivovar na trh nefiltrovan\u00e9 sv\u011btl\u00e9 pivo BON Weissbier vyr\u00e1b\u011bn\u00e9 z vody, je\u010dmen\u00e9ho \u010desk\u00e9ho sladu, p\u0161eni\u010dn\u00e9ho sladu, \u017eateck\u00e9ho poloran\u00e9ho \u010derve\u0148\u00e1ku a kvasnic svrchn\u00edho kva\u0161en\u00ed. EPM 13%, alkohol min. 5,2%.<br \/>\nJednou z cest, jak na sebemen\u0161\u00ed pivovary mohou upozornit, je \u00fa\u010dast na r\u016fzn\u00fdch sout\u011b\u017e\u00edch. D\u00edky nim se jim otev\u0159ou dve\u0159e do pivnic v cel\u00e9 zemi. \u201ePom\u00e1h\u00e1 n\u00e1m to. Dod\u00e1v\u00e1me pivo i do Prahy nebo Olomouce,\u201c potvrdil v \u0159\u00edjnu 2009 Bruno Bedn\u00e1\u0159, vedouc\u00ed minipivovaru. \u201eN\u011bkam voz\u00edme pivo pravideln\u011b, jinam t\u0159eba jednou za rok. Ale vypl\u00e1c\u00ed se to.\u201c Bonver va\u0159\u00ed pivo podle t\u0159i sta let star\u00e9ho receptu. \u201eNed\u00e1 se to srovnat s t\u011bmi europivy, kter\u00e1 se neva\u0159\u00ed klasicky a na z\u00e1v\u011br se mus\u00ed do\u0159edit,\u201c poznamenal Bedn\u00e1\u0159. \u201eLid\u00e9 oce\u0148uj\u00ed, \u017ee na\u0161e pivo m\u00e1 specifickou chu\u0165 a v\u016fni. Kdy\u017e si d\u00e1te n\u011bjakou klasickou nadn\u00e1rodn\u00ed zna\u010dku, v\u00fdrazn\u00fd rozd\u00edl nepozn\u00e1te,\u201c vysv\u011btlil Bedn\u00e1\u0159. \u201eNem\u00e1me pen\u00edze na velkou reklamu. Znaj\u00ed n\u00e1s hlavn\u011b \u0161tamgasti a m\u00edstn\u00ed lid\u00e9,\u201c dodal Bedn\u00e1\u0159.<br \/>\nRostouc\u00ed oblibu minipivovar\u016f potvrdil i vedouc\u00ed pivovaru Bonver z Vala\u0161sk\u00e9ho Mezi\u0159\u00ed\u010d\u00ed Bruno Bedn\u00e1\u0159. V\u00fdrobu klasick\u00fdch nepasterizovan\u00fdch piv podnik zah\u00e1jil v roce 2004. &#8222;Ze za\u010d\u00e1tku to byl probl\u00e9m, proto\u017ee ka\u017ed\u00fd v\u011b\u0159il v\u00edce &#8218;zajet\u00e9mu&#8216; velk\u00e9mu pivovaru ne\u017e mal\u00e9mu. Ka\u017ed\u00fd se op\u00edr\u00e1 o tradici. Dnes to ale u\u017e nen\u00ed pravda a ned\u00e1 se o tradici hovo\u0159it, proto\u017ee velk\u00e9 pivovary jsou prodan\u00e9. U\u017e neva\u0159\u00ed sl\u00e1dkov\u00e9 ale ekonomov\u00e9,&#8220; podotkl. &#8222;Majitel mus\u00ed m\u00edt hodn\u011b pevn\u00e9 nervy, aby to s n\u00e1mi ust\u00e1l, a k pivu mus\u00ed m\u00edt vztah, jinak bychom tady u\u017e nebyli,&#8220; dodal Bedn\u00e1\u0159.Pod zna\u010dkou BON si lid\u00e9 mohli v roce 2010 koupit sv\u011btlou des\u00edtku, sv\u011btl\u00fd le\u017e\u00e1k a tmav\u00fd le\u017e\u00e1k speci\u00e1l.<br \/>\n\u201eDes\u00edtku m\u016f\u017eete m\u00edt za dva m\u011bs\u00edce, dvan\u00e1ctku za \u010dty\u0159i.\u201c Sly\u0161et takovou v\u011btu v restauraci, asi by se n\u00e1v\u0161t\u011bvn\u00edci hodn\u011b divili. Pr\u00e1v\u011b tak dlouho ale trvalo uva\u0159it pivo v mal\u00e9m pivovaru na Vala\u0161sku. Tradi\u010dn\u00ed metodou, nepasterovan\u00e9. A podle tamn\u00edho sl\u00e1dka se lid\u00e9 k t\u011bmto piv\u016fm vracej\u00ed st\u00e1le v\u00edce. Do nejvzd\u00e1len\u011bj\u0161\u00ed restaurace od mal\u00e9ho venkovsk\u00e9ho pivovaru zavezla n\u00e1kladn\u00ed auta pivo zhruba za \u0161est hodin. V Za\u0161ov\u00e9 v dubnu 2010 va\u0159ili pivo p\u0159edev\u0161\u00edm pro moravsk\u00e9 restaurace. Ale m\u011bli i jednu pro p\u011bt set lid\u00ed v Praze. \u201ePivo vyr\u00e1b\u00edme jen z \u010desk\u00fdch surovin. Slad p\u0159ivezeme z jedn\u00e9 moravsk\u00e9 sladovny, chmel bereme prav\u00fd \u017eateck\u00fd a vodu m\u00e1me vlastn\u00ed za\u0161ovskou, je i podle rozbor\u016f vynikaj\u00edc\u00ed,\u201c vypo\u010d\u00edt\u00e1val sl\u00e1dek Milan Kur\u00e1\u0148. \u201eSlad mus\u00ed proj\u00edt \u0161rotovac\u00edm za\u0159\u00edzen\u00edm, pak ho rozm\u00edch\u00e1me ve vod\u011b. Pr\u00e1v\u011b mno\u017estv\u00ed sladu, kter\u00fd tam d\u00e1me, rozhoduje o tom, jestli to bude des\u00edtka, nebo dvan\u00e1ctka,\u201c vysv\u011btlil sl\u00e1dek. U\u017e v t\u00e9hle f\u00e1zi by host na pivo \u010dekal n\u011bkolik dn\u016f. A to va\u0159en\u00ed piva vlastn\u011b ani neza\u010dalo. \u201eVoda se sladem se mus\u00ed scedit p\u0159es perforovan\u00e9 dno n\u00e1doby. Je z toho takov\u00e1 sladk\u00e1 hmota. A do n\u00ed se p\u0159id\u00e1v\u00e1 chmel,\u201c popsal dal\u0161\u00ed postup sl\u00e1dek. Teprve potom se p\u0159idaj\u00ed kvasnice. \u201eP\u0159i teplot\u011b p\u011bti stup\u0148\u016f kvasnice klesnou na dno. Pak se v\u0161echno p\u0159e\u010derp\u00e1 do pivn\u00edch tank\u016f, kde pivo dokvas\u00ed,\u201c \u0159ekl Kur\u00e1\u0148. A teprve v tu chv\u00edli to nejdel\u0161\u00ed \u010dek\u00e1n\u00ed za\u010d\u00edn\u00e1. Pivo v n\u00e1dob\u00e1ch toti\u017e je\u0161t\u011b zdaleka nen\u00ed takov\u00e9, jak\u00e9 se to\u010d\u00ed do sklenic. \u201eDes\u00edtka v tanc\u00edch dozr\u00e1v\u00e1 zhruba pades\u00e1t dn\u016f, dvan\u00e1ctka dvakr\u00e1t tak dlouho. Potom se p\u0159efiltruje a m\u016f\u017ee se \u010depovat. Ti, kte\u0159\u00ed cht\u011bj\u00ed kvasnicov\u00e9, si odv\u00e1\u017eej\u00ed nefiltrovan\u00e9,\u201c vysv\u011btlil. V dobr\u00e9m rozmaru \u0159ekl, \u017ee pivo skoro nest\u00edhaj\u00ed va\u0159it. Se \u010dty\u0159mi zam\u011bstnanci toti\u017e maj\u00ed maxim\u00e1ln\u00ed kapacitu 25 tis\u00edc hektolitr\u016f ro\u010dn\u011b.<br \/>\nV za\u0161ovsk\u00e9m Bonu stav\u00ed na prvn\u00ed po\u0159ad\u00ed d\u016fle\u017eitosti kvalitu. Podle tamn\u00edho sl\u00e1dka Milana Kur\u00e1n\u011b se d\u00edky tomu odli\u0161uj\u00ed od velkov\u00fdrobc\u016f piva. \u201eS\u00e1z\u00edme na klasickou v\u00fdrobu. Pou\u017e\u00edv\u00e1me jen vodu a kvalitn\u00ed \u017eateck\u00fd chmel a moravsk\u00fd slad. Je to pro n\u00e1s tro\u0161ku dra\u017e\u0161\u00ed, ale v kone\u010dn\u00e9m v\u00fdsledku se to vyplat\u00ed,\u201c prozradil v kv\u011btnu 2010 Milan Kur\u00e1\u0148. Vala\u0161sk\u00fd pivovar Bon va\u0159il pivo pro moravsk\u00e9, ale i pra\u017esk\u00e9 restaurace. Vlastn\u00ed v\u00fdroba piva trvala v\u00edce ne\u017e t\u0159i m\u011bs\u00edce. \u201eDes\u00edtka v tanc\u00edch dozr\u00e1v\u00e1 pades\u00e1t dn\u016f, dvan\u00e1ctka je\u0161t\u011b mnohem d\u00e9le,\u201c vysv\u011btlil v \u010dervenci 2010 sl\u00e1dek pivovaru Milan Kur\u00e1\u0148.
