Jedn\u00e1 se o pivo, kter\u00e9 \u0161est m\u011bs\u00edc\u016f zr\u00e1lo v dubov\u00fdch sudech po noblesn\u00edm lik\u00e9rov\u00e9m v\u00edn\u011b Lokus \u010cerven\u00fd, kter\u00e9 Saisonu dod\u00e1v\u00e1 na originalit\u011b, ovocnosti a ko\u0159enitosti. Pivo n\u00e1sledn\u011b z\u00edsk\u00e1v\u00e1 \u0159\u00edz p\u0159\u00edmo v lahv\u00edch, stejn\u011b tak jako tomu je u prav\u00e9ho Champagne.<\/li>\n<li>Od 5.6.2018 letn\u00ed novinka &#8211; <strong>Wet Hop Pale Ale 11 %<\/strong>. Pivo s tzv. mokr\u00fdm chmelem. Jedn\u00e1 se o sv\u011btl\u00e9 lehk\u00e9 pivo s velmi jemnou ho\u0159kost\u00ed. Do studen\u00e9ho chmelen\u00ed pou\u017eili chmel Cascade p\u011bstovan\u00fd v N\u011bmecku, kter\u00fd byl sklizen jako \u010derstv\u00fd s ve\u0161ker\u00fdm obsahem vody, ihned zavakuov\u00e1n a skladov\u00e1n v chladu. Jeden\u00e1ctka, 30 IBU, alk.: 4,7 %.<\/li>\n<li>Od 8.5.2018 vypustili do sv\u011bta speci\u00e1l <strong>Barrel \u2013 Aged Barley Wine 28\u00b0<\/strong> (13,5 % alk. obj.). Pivn\u00ed styl barley wine se \u0159ad\u00ed mezi v\u016fbec ty nejsiln\u011bj\u0161\u00ed. Ve zdej\u0161\u00edm pod\u00e1n\u00ed se jednalo o celosladov\u00e9 osmadvacetistup\u0148ov\u00e9 pivo. Broumsk\u00fd barley wine dozr\u00e1val v\u00edce ne\u017e \u0161est m\u011bs\u00edc\u016f v d\u0159ev\u011bn\u00fdch sudech po whiskey a bourbonu, kter\u00e9 pivu dodaly je\u0161t\u011b intenzivn\u011bj\u0161\u00ed v\u016fni a chu\u0165. Pro \u010d\u00e1st dubov\u00fdch sud\u016f se vydali p\u0159\u00edmo do destil\u00e9rie v N\u011bmecku, ta druh\u00e1 p\u0159icestovala rovnou z USA. Pivo zr\u00e1lo nejen v tanc\u00edch a sudech, ale i v lahv\u00edch, tzv. bottle conditioning. Jednalo se o tu nej\u010dist\u0161\u00ed verzi, ale z\u00e1rove\u0148 velmi komplikovanou cestu. Do lahv\u00ed p\u0159ed\u00e1vali mlad\u00e9 kvas\u00edc\u00ed pivo, kter\u00e9 v lahv\u00edch vykvasilo, a t\u00edm p\u00e1dem dotlakovalo. Pivo tak z\u00edskalo na \u0159\u00edzu a je\u0161t\u011b v\u00edce se zakulatilo velmi pln\u00e9 t\u011blo. S pivem si tedy hr\u00e1li skoro cel\u00fd rok.<\/li>\n<li>Pivovar m\u011bl v b\u0159eznu 2018 v prodeji speci\u00e1l Double IPA 18\u00b0. Od roku 2009 v prostor\u00e1ch sedmi st\u0159edov\u011bk\u00fdch budov a kl\u00e1\u0161tera s\u00eddlil luxusn\u00ed hotel The Augustine. Ten m\u011bl snahu vr\u00e1tit origin\u00e1ln\u00ed pivo do sv\u00e9ho pivn\u00edho klubu. Povedlo se pr\u00e1v\u011b d\u00edky spolupr\u00e1ci s pivovarem Matu\u0161ka. Svat\u00fd Tom\u00e1\u0161 bylo \u010dtrn\u00e1ctistup\u0148ov\u00e9 \u010dern\u00e9 pivo s 5,5 % alkoholu. Mal\u00fd pivovar, kter\u00fd vybudovali, z\u00edskal rychle renom\u00e9, obdr\u017eel \u0159adu presti\u017en\u00edch ocen\u011bn\u00ed a dod\u00e1val v roce 2013 pivo nap\u0159\u00edklad ministerstvu zahrani\u010d\u00ed, britsk\u00e9mu velvyslanectv\u00ed \u010di michelinsk\u00e9 restauraci La Degustation Boh\u00eame Bourgeoise.<br \/>\nZakladatelem pivovaru byl otec rodiny Martin Matu\u0161ka, jen\u017e se v pivovarnictv\u00ed pohyboval p\u0159es t\u0159icet let. Renom\u00e9 si z\u00edskal coby sl\u00e1dek Kl\u00e1\u0161tern\u00edho pivovaru Strahov \u2013 z\u00edskal tam ocen\u011bn\u00ed \u201esl\u00e1dek roku\u201c a jeho piva obdr\u017eela \u0159adu presti\u017en\u00edch cen. \u201eJezdil jsem u\u010dit pivovarskou technologii do zahrani\u010d\u00ed \u2013 do Japonska, Ji\u017en\u00ed Koreje \u010di Tuniska. Dlouhodob\u011b jsem si ale cht\u011bl uskute\u010dnit sen, a sice postavit si vlastn\u00ed minipivovar. Dlouho jsem o tom ale hlavn\u011b mluvil,\u201c vypr\u00e1v\u011bl agiln\u00ed pades\u00e1tn\u00edk Martin Matu\u0161ka. K tomu, \u017ee se do projektu pustil, mu pomohlo v\u011bdom\u00ed, \u017ee mlad\u0161\u00ed syn Adam chce v pivovarnick\u00e9m \u0159emesle pokra\u010dovat, a v neposledn\u00ed \u0159ad\u011b mor\u00e1ln\u00ed a finan\u010dn\u00ed podpora \u0161irok\u00e9 rodiny.<br \/>\nNa Velikono\u010dn\u00ed pond\u011bl\u00ed roku 2009 byla uva\u0159ena prvn\u00ed v\u00e1rka speci\u00e1ln\u00edho tmav\u00e9ho piva pro hotel Augustine na Mal\u00e9 Stran\u011b. \u201eKdy\u017e je\u0161t\u011b pivovar v\u016fbec nest\u00e1l, u\u017e jsme m\u011bli smlouvu a tmav\u00e1 \u010dtrn\u00e1ctka musela b\u00fdt v kv\u011btnu k dispozici v hotelov\u00e9 restauraci. To byl hnac\u00ed moment,\u201c vypr\u00e1v\u011bl o prvn\u00edm odb\u011brateli Martin Matu\u0161ka. D\u00edky jeho renom\u00e9 m\u011bl pivovar prvn\u00edch osm odb\u011bratel\u016f jist\u00fdch d\u0159\u00edve, ne\u017e n\u011bjak\u00e9 pivo v\u016fbec uva\u0159il.<br \/>\nPivovar Matu\u0161ka je na prvn\u00ed pohled jen nen\u00e1padn\u00fdm domkem v zapadl\u00e9 vsi. \u201eP\u016fvodn\u011b to byla na\u0161e rekrea\u010dn\u00ed chalupa, kterou bylo t\u0159eba p\u0159etvo\u0159it na pivovar,\u201c \u0159ekl Martin Matu\u0161ka. Uvnit\u0159 domu se skr\u00fdv\u00e1 modern\u00ed pivovarsk\u00fd provoz, kde v\u0161echny v\u00fdrobky vznikaj\u00ed na plo\u0161e p\u00e1r des\u00edtek metr\u016f \u010dtvere\u010dn\u00edch. Varna, spilka i le\u017e\u00e1ck\u00e9 tanky zab\u00edraj\u00ed jen dv\u011b nevelk\u00e9 m\u00edstnosti. \u201ePosledn\u00ed dobou n\u00e1m pivo neust\u00e1le chyb\u00ed \u2013 je o n\u011bj z\u00e1jem v Japonsku, Anglii \u010di It\u00e1lii. M\u00e1me pl\u00e1ny p\u0159istav\u011bt dal\u0161\u00ed k\u0159\u00eddlo a zv\u011bt\u0161it se,\u201c dodal otec pivovaru.<br \/>\nV dob\u011b, kdy Matu\u0161ka startoval, vznikala \u0159ada mal\u00fdch pivovar\u016f, va\u0159\u00edc\u00edch dobr\u00e9 a r\u016fznorod\u00e9 pivo, kter\u00fdm se p\u0159esto tolik prosadit nepoda\u0159ilo. \u201eV\u00edm, \u017ee existuje \u0159ada pivovar\u016f, kter\u00e9 jednou uva\u0159\u00ed skv\u011bl\u00e9 pivo, jen\u017ee podruh\u00e9 je \u00fapln\u011b \u0161patn\u00e9. Tudy asi cesta nevede. Je t\u0159eba kvalitu udr\u017eet permanentn\u011b,\u201c m\u00ednil Martin Matu\u0161ka.<br \/>\nA mo\u017en\u00e1 je\u0161t\u011b jeden faktor: \u201eByli jsme ale tak\u00e9 jedni z prvn\u00edch, kte\u0159\u00ed va\u0159ili pivo, a p\u0159itom nem\u011bli vlastn\u00ed restauraci. Kolegov\u00e9 mi \u0159\u00edkali, \u017ee bez hospody je to bl\u00e1znovstv\u00ed a \u017ee to nebude fungovat. My nyn\u00ed opravdu vyd\u011bl\u00e1v\u00e1me jen na v\u00fdrob\u011b piva, p\u0159esto se n\u00e1m da\u0159\u00ed a jsme spokojen\u00ed.\u201c Restaurace by znamenala dal\u0161\u00ed starosti, nap\u0159\u00edklad s person\u00e1lem, Matu\u0161kovi tento n\u00e1pad p\u0159esto nezavrhuj\u00ed. \u201eBylo by skv\u011bl\u00e9 m\u00edt vlastn\u00ed pivovarskou hospodu, kde bychom nab\u00edzeli v\u0161echny druhy na\u0161eho piva v top kvalit\u011b, v p\u0159\u00edslu\u0161n\u00fdch sklenic\u00edch a podobn\u011b. Te\u010f ale rozhodn\u011b ne, nem\u00e1me na to odpov\u00eddaj\u00edc\u00ed prostory,\u201c vysv\u011btlil Adam Matu\u0161ka. P\u0159itom v nejmen\u0161\u00edm nepochyboval o klientele. \u201eV\u011b\u0159\u00edm, \u017ee by se sem lid\u00e9 sj\u00ed\u017ed\u011bli. Oni se toti\u017e sj\u00ed\u017ed\u011bj\u00ed u\u017e te\u010f. Kdy\u017e je v l\u00e9t\u011b otev\u0159en\u00e1 hosp\u016fdka na m\u00edstn\u00edm h\u0159i\u0161ti, je jedn\u00edm z na\u0161ich nejv\u011bt\u0161\u00edch odb\u011bratel\u016f a denn\u011b vyto\u010d\u00ed v\u00edce ne\u017e n\u00e1\u0161 nejv\u011bt\u0161\u00ed st\u00e1l\u00fd odb\u011bratel v Praze. Lid\u00e9 sem jezd\u00ed na kolech, jsme tak\u00e9 bl\u00edzko hradu K\u0159ivokl\u00e1t a ani z Prahy to zas tak daleko nen\u00ed,\u201c \u0159ekl mlad\u00fd sl\u00e1dek.<br \/>\nAdam Matu\u0161ka vystudoval st\u0159edo\u0161kolsk\u00fd obor technologie piva a absolvoval n\u011bkolik prax\u00ed v \u010cech\u00e1ch i v zahrani\u010d\u00ed. Sl\u00e1dkem v rodinn\u00e9m pivovaru se stal ihned po maturit\u011b v roce 2009. Dnes pivovar fakticky vede. \u201eKdy\u017e vid\u00edm, \u017ee to Adamovi jde, tak se do toho sna\u017e\u00edm zasahovat co nejm\u00e9n\u011b,\u201c \u0159ekl Matu\u0161ka senior. \u201ePosledn\u00ed dobou to sp\u00ed\u0161e vypad\u00e1 tak, \u017ee p\u0159ijdu do pr\u00e1ce a pt\u00e1m se, co je pot\u0159eba ud\u011blat \u2013 j\u00e1 jeho! Jsem za to r\u00e1d, mn\u011b se uleh\u010d\u00ed. Sp\u00ed\u0161 bych tedy \u0159ekl, \u017ee to tady vede Adam.\u201c Ten ov\u0161em promptn\u011b dod\u00e1v\u00e1, \u017ee jde p\u0159eci jen o spole\u010dnou pr\u00e1ci. \u201eHodn\u011b inovujeme a nov\u00e9 receptury vytv\u00e1\u0159\u00edme spole\u010dn\u011b, ale z\u00e1kladn\u00ed receptury jsou od t\u00e1ty,\u201c dodal jeho syn.<br \/>\nPivovar pomalu rostl. V\u00fdstav v roce 2012 dos\u00e1hl 1300 hektolitr\u016f a po\u010det odb\u011bratel\u016f narostl z p\u016fvodn\u00edch osmi na pades\u00e1tku. \u201eNa nikoho nec\u00edl\u00edme, z\u00e1kazn\u00edci si n\u00e1s sp\u00ed\u0161e sami vyhled\u00e1vaj\u00ed. V\u011bt\u0161inou je to tak, \u017ee na\u0161e pivo n\u011bkdo ochutn\u00e1, zv\u011bst o n\u011bm \u0161\u00ed\u0159\u00ed d\u00e1l, a t\u00edm stoup\u00e1 jeho obliba. M\u00e1me sv\u00e9 c\u00edle, sv\u00e9 horizonty a chceme j\u00edt d\u00e1l. \u010c\u00edm d\u00e1l v\u00edce si cen\u00edm lid\u00ed, kte\u0159\u00ed si n\u011bco vezmou, dok\u00e1\u017eou z toho n\u011bco vytvo\u0159it, dok\u00e1\u017eou to prodat a u\u017eivit se. Nakonec z takov\u00fdchto mal\u00fdch pivovar\u016f na Z\u00e1pad\u011b vznikly i velk\u00e9 pivovary, jen je v\u017edy t\u0159eba dr\u017eet kvalitu,\u201c \u0159ekl Martin Matu\u0161ka.<br \/>\nPivovar je zn\u00e1m\u00fd i pro \u0161irokou \u0161k\u00e1lu pivn\u00edch odr\u016fd, kter\u00e9 produkuje: p\u0161eni\u010dn\u00e9, american pale ale, india pale ale, weizenbock \u010di biere de gard. \u201eVa\u0159\u00edme n\u011bkter\u00e9 klasick\u00e9 \u010desk\u00e9 druhy, n\u011bkdy se inspirujeme v zahrani\u010d\u00ed, ale hlavn\u011b hodn\u011b inovujeme a kombinujeme. Vznikaj\u00ed tak \u00fapln\u011b nov\u00e9 druhy piva,\u201d popsal Martin Matu\u0161ka.<br \/>\n\u0158ada jeho p\u0159\u00e1tel v\u0161ak byla velmi skeptick\u00e1 a tvrdila, \u017ee \u010ce\u0161i jsou konzervativn\u00ed a r\u016fzn\u00e9 pivn\u00ed speci\u00e1ly p\u00edt nebudou. \u201eNa\u0161e nejprod\u00e1van\u011bj\u0161\u00ed pivo je IPA Raptor, va\u0159\u00edme ho t\u00e9m\u011b\u0159 ka\u017ed\u00fd t\u00fdden, a i tak n\u00e1m po\u0159\u00e1d chyb\u00ed. V l\u00e9t\u011b se zase prod\u00e1v\u00e1 \u00fapln\u011b fantasticky p\u0161eni\u010dn\u00e9 pivo,\u201d \u0159ekl Adam Matu\u0161ka. Matu\u0161kovic piva nekoup\u00edte p\u016fllitr za \u201edv\u011b p\u011btky\u201d. T\u0159etinka p\u0159ijde klidn\u011b na pades\u00e1t korun. Pro z\u00e1kazn\u00edky to ale pot\u00ed\u017e nebyla. \u201eNaopak jsme pivo museli n\u011bkolikr\u00e1t zdra\u017eit. Poskytujeme \u00fapln\u011b jin\u00fd produkt, pivo vyr\u00e1b\u00edme \u0159emeslnou cestou v mal\u00e9m mno\u017estv\u00ed. Na\u0161e pivo Hellcat je sice jedno z nejdra\u017e\u0161\u00edch, ale m\u00e1 velkou alkoholovou s\u00edlu, chu\u0165ovou pestrost, p\u0159i jeho v\u00fdrob\u011b pou\u017e\u00edv\u00e1me anglick\u00e9 a americk\u00e9 chmely. To pivo m\u00e1 zkr\u00e1tka v\u011bt\u0161\u00ed u\u017eitnou hodnotu,\u201d vysv\u011btlil Martin Matu\u0161ka a dodal: \u201eKdy\u017e se n\u011bkdo chce fakt jen op\u00edt, tak mu t\u0159i Hellcaty klidn\u011b nahrad\u00ed deset dvan\u00e1ctek a je\u0161t\u011b u\u0161et\u0159\u00ed.\u201d<br \/>\nPo ne\u010dekan\u00e9m \u00fasp\u011bchu Karla Schwarzenberga v prvn\u00edm kole prezidentsk\u00e9 volby se ve volebn\u00edm \u0161t\u00e1bu v pra\u017esk\u00e9m divadle Archa to\u010dilo pr\u00e1v\u011b pivo Matu\u0161ka. K ministru zahrani\u010d\u00ed se p\u0159itom pivo z Broum dostalo zcela n\u00e1hodou. \u201eDavid \u010cern\u00fd jednou na kole zabloudil do baru Ch\u00fd\u0161e v \u010cimic\u00edch, kde ochutnal na\u0161e p\u0161eni\u010dn\u00e9. Hned pak volal t\u00e1tovi, \u017ee ho mus\u00ed prod\u00e1vat v MeetFactory, co\u017e je dnes n\u00e1\u0161 pravideln\u00fd odb\u011bratel. P\u0159es MeetFactory se pak na\u0161e pivo dostalo ke Karlu Schwarzenbergovi. Ne v\u0161ichni se ale vydali touhle cestou. \u201eJ\u00e1 jsem u\u017e na za\u010d\u00e1tku \u0159\u00edkal, \u017ee restauraci nechci. Restaurace je je\u0161t\u011b slo\u017eit\u011bj\u0161\u00ed organismus ne\u017e pivovar,\u201c vypr\u00e1v\u011bl v srpnu 2013 za pochodu b\u011bhem odpoledn\u00ed sm\u011bny dvaapades\u00e1tilet\u00fd Martin Matu\u0161ka, majitel pivovaru v Broumech. U vchodu vis\u00ed tabule se seznamem m\u00edst, kam svoje pivo dod\u00e1v\u00e1. Jsou mezi nimi luxusn\u00ed restaurace v Praze, ale i ministerstvo zahrani\u010d\u00ed nebo britsk\u00e9 velvyslanectv\u00ed. \u201eDod\u00e1v\u00e1me asi na pades\u00e1t m\u00edst, ale z\u00e1jem je p\u011btin\u00e1sobn\u00fd. Loni jsme vyrobili 1300 hl, te\u010f jedn\u00e1me s bankami o p\u0159esunu do jin\u00e9 budovy, kde bychom m\u011bli pivovar s perspektivou r\u016fstu na \u010dty\u0159i tis\u00edce hektolitr\u016f,\u201c \u0159ekl majitel. Pivovar pat\u0159\u00ed mezi ty, kter\u00e9 vznikly vylo\u017een\u011b doma, v tomto p\u0159\u00edpad\u011b dokonce na rekrea\u010dn\u00ed chalup\u011b. \u017d\u00e1dnou ceduli ani sm\u011brovku, \u017ee se v mal\u00e9 obci nach\u00e1z\u00ed pivovar, nenajdete, nicm\u00e9n\u011b typick\u00e1 v\u016fn\u011b linouc\u00ed se obc\u00ed v\u00e1s bezpe\u010dn\u011b dovede na m\u00edsto. \u201eDoj\u00ed\u017ed\u00edm ka\u017ed\u00fd den z Prahy, je to t\u0159icet p\u011bt minut, ale st\u011bhovat bych se necht\u011bl, j\u00e1 m\u00e1m m\u011bsto r\u00e1d,\u201c \u0159ekl Martin Matu\u0161ka. St\u0159\u00edd\u00e1 se s n\u011bkolika dal\u0161\u00edmi zam\u011bstnanci, ale nejv\u011bt\u0161\u00ed oporou je pro n\u011bho t\u0159iadvacetilet\u00fd syn Adam. Stejn\u011b jako jeho otec vystudoval potravin\u00e1\u0159skou technologii a ihned po maturit\u011b nastoupil v rodinn\u00e9m podniku jako sl\u00e1dek. \u201eMus\u00edm \u0159\u00edct, \u017ee bez n\u011bj by to ne\u0161lo. D\u00edky n\u011bmu m\u00e1 taky firma pokra\u010dovatele,\u201c \u0159ekl Martin Matu\u0161ka, kter\u00fd je mezi majiteli minipivovar\u016f skute\u010dn\u00fdm odborn\u00edkem. Pracoval v pivovaru U Flek\u016f a v Kl\u00e1\u0161tern\u00edm pivovaru na Strahov\u011b, mezit\u00edm rozj\u00ed\u017ed\u011bl pivovary nap\u0159\u00edklad v Tunisku nebo Japonsku. O vlastn\u00edm minipivovaru pr\u00fd snil u\u017e v \u0161estn\u00e1cti nebo sedmn\u00e1cti, ale \u010das dozr\u00e1l teprve p\u0159ed n\u011bkolika lety. \u201eBl\u00ed\u017eila se pades\u00e1tka, doma \u0159\u00edkali, \u017ee o tom po\u0159\u00e1d jenom mluv\u00edm a nic, tak jsem se do toho pustil.\u201c Od za\u010d\u00e1tku po\u010d\u00edtal, \u017ee se t\u00edm bude \u017eivit, ne k tomu je\u0161t\u011b d\u011blat n\u011bco bokem. \u201ePivem se u\u017eivit d\u00e1,\u201c m\u00ednil. \u201eMus\u00edte d\u011blat kvalitn\u00ed, dobr\u00e9, speci\u00e1ln\u00ed pivo a prod\u00e1vat ho za odpov\u00eddaj\u00edc\u00ed cenu, aby to p\u0159ineslo zisk, zaplatilo spl\u00e1tky \u00fav\u011br\u016f a u\u017eivilo rodinu.\u201c Proto\u017ee m\u011bl spoustu zn\u00e1most\u00ed z p\u0159edchoz\u00edch zam\u011bstn\u00e1n\u00ed, z\u00e1jemci o pivo se za\u010dali oz\u00fdvat sami, nikam se nemusel vnucovat ani investovat do reklamy. Dnes jde opravdu o rodinn\u00fd podnik, proto\u017ee krom\u011b syna zam\u011bstn\u00e1v\u00e1 i man\u017eelku, kter\u00e1 zanechala p\u016fvodn\u00ed profese porodn\u00ed asistentky, aby v rostouc\u00ed firm\u011b pomohla s administrativou. Star\u0161\u00ed syn Jakub zase jako grafik navrhl logo a etikety. Celkem minipivovar u\u017eiv\u00ed p\u011bt lid\u00ed a dva brig\u00e1dn\u00edky.
