V b\u00fdval\u00e9 j\u00eddeln\u011b tak vybudovali za\u0159\u00edzen\u00ed na va\u0159en\u00ed p\u011bniv\u00e9ho moku a v sou\u010dasn\u00e9 dob\u011b Maxmilian, jak se jejich produkt jmenuje, nab\u00edz\u00ed sv\u011btlou jeden\u00e1ctku a polotmavou dvan\u00e1ctku. Krom\u011b\u0159\u00ed\u017esk\u00fd pivovar zab\u00edr\u00e1 relativn\u011b malou plochu, jeho m\u00edstnostmi provedli redaktorku Den\u00edku majitel\u00e9 Petr Krohe a Martina Janou\u0161kov\u00e1. Na\u0161e prvn\u00ed kroky vedly do m\u00edstnosti, kde jsou ulo\u017eeny suroviny. \u201eSlad je vlastn\u011b je\u010dmen, kter\u00fd bereme ze Z\u00e1hlinic. Tamn\u00ed sladovna ho d\u011bl\u00e1 tradi\u010dn\u00edm zp\u016fsobem, takzvan\u00fdm humnov\u00fdm. Chmel pou\u017e\u00edv\u00e1me \u017eateck\u00fd poloran\u00fd \u010derve\u0148\u00e1k. Toho se d\u00e1v\u00e1 velmi m\u00e1lo, proto\u017ee je velmi ho\u0159k\u00fd.Vych\u00e1z\u00ed to asi gram chmele na pivo,&#8220; vysv\u011btloval v \u0159\u00edjnu 2012 sl\u00e1dek Krohe. Pivo podle sv\u00fdch slov za\u010dali va\u0159it od pr\u00e1zdnin 2012. \u201eJsme klasick\u00fd minipivovar, kter\u00fd va\u0159\u00ed ze z\u00e1kladn\u00edch surovin po tradi\u010dn\u00edm zp\u016fsobu. Za\u010dali jsme s t\u00edm, proto\u017ee si mysl\u00edme, \u017ee v regionu n\u011bco podobn\u00e9ho chyb\u011blo. Nejd\u0159\u00edve jsme to s kamar\u00e1dy zkou\u0161eli v gar\u00e1\u017ei. I to, co jsme tam vytvo\u0159ili, n\u00e1m chutnalo v\u00edc ne\u017e europiva, kter\u00e1 dnes va\u0159\u00ed velk\u00e9 pivovary,&#8220; vzpom\u00ednal Krohe. Podle n\u011bj byl vznik krom\u011b\u0159\u00ed\u017esk\u00e9ho minipivovaru a\u017e ne\u010dekan\u011b rychl\u00fd. \u201eRozhodli jsme se n\u011bkdy po v\u00e1noc\u00edch a do p\u016fl roku jsme u\u017e zlatav\u00fd mok va\u0159ili. Sou\u010dasn\u00e1 piva se skoro ani nedaj\u00ed pivem naz\u00fdvat, proto\u017ee klasick\u00fd n\u00e1poj vznikne ze \u010dty\u0159 z\u00e1kladn\u00edch surovin: slad, chmel, voda a kvasnice. Z toho va\u0159\u00ed piva u\u017e jen mal\u00e9 pivovary. Ty velk\u00e9 tam p\u0159id\u00e1vaj\u00ed r\u016fzn\u00e9 jin\u00e9 p\u0159\u00edsady, t\u0159eba p\u011bnidla,&#8220; tvrdil Krohe. Exkurze mezit\u00edm pokra\u010dovala do varny se dv\u011bma velk\u00fdmi n\u00e1dobami, v nich\u017e v\u0161echno za\u010d\u00edn\u00e1. \u201ePro vznik piva pot\u0159ebujete p\u00e1r v\u011bc\u00ed, dv\u011b n\u00e1doby a plotnu. Kdy\u017e se zrno umele, vzniknou vlo\u010dky, kter\u00e9 se p\u0159evezou do varny a tam vznikaj\u00ed procesy, kter\u00e9 slo\u017eit\u00e9 cukry m\u011bn\u00ed na ty jednoduch\u00e9, tak, aby je kvasinky mohly pohltit. Potom se to va\u0159\u00ed, \u010d\u00e1st toho p\u0159evedete do scezova\u010dky nech\u00e1te odpo\u010dinout, potom se to cel\u00e9 prom\u00edch\u00e1 a zase znova. Je to zaj\u00edmav\u00fd proces. Cel\u00e9 se to sced\u00ed p\u0159es s\u00edta a mladina, jak se tomu \u0159\u00edk\u00e1, jde zase do varny,&#8220; zjednodu\u0161il p\u0159eci jen pom\u011brn\u011b slo\u017eit\u00fd proces Krohe. Martina Janou\u0161kov\u00e1 hned upozornila, \u017ee krom\u011b\u0159\u00ed\u017esk\u00fd minipivovar chce hlavn\u011b d\u011blat poctiv\u00e9 pivo. \u201eProto rmutov\u00e1n\u00ed, co\u017e je proces, p\u0159i kter\u00e9m je \u0161krob ze sladu pomoc\u00ed sladov\u00fdch enzym\u016f p\u0159em\u011bn\u011bn na sacharidy, prov\u00e1d\u00edme dvakr\u00e1t. Va\u0159en\u00ed jedn\u00e9 d\u00e1vky trv\u00e1 deset a\u017e dvan\u00e1ct hodin,&#8220; l\u00ed\u010dila Janou\u0161kov\u00e1. Uva\u0159en\u00e9 pivo se pak sto\u010d\u00ed do velk\u00fdch tank\u016f, kter\u00fdm se \u0159\u00edk\u00e1 spilky, a p\u0159i desetistup\u0148ov\u00e9 teplot\u011b prob\u00edhaj\u00ed dal\u0161\u00ed procesy. \u201eP\u0159idaj\u00ed se kvasnice a deset dn\u00ed se to nech\u00e1 le\u017eet. Tady vznik\u00e1 ten \u0159\u00edz, perlivost, chu\u0165 a dal\u0161\u00ed charakteristick\u00e9 v\u011bci. Potom mus\u00edme vy\u010dkat na tu spr\u00e1vnou chv\u00edli a pivo sto\u010dit. Je d\u016fle\u017eit\u00e9 poznat ten vhodn\u00fd okam\u017eik, kdy kles\u00e1 sladkost a zved\u00e1 se alkohol,&#8220; podotkl sl\u00e1dek. Prohl\u00eddka kon\u010d\u00ed u le\u017e\u00e1ck\u00fdch tank\u016f, kde pivo zraje. \u201ePodle s\u00edly minim\u00e1ln\u011b m\u011bs\u00edc, ale m\u016f\u017ee i d\u00e9le. Pot\u00e9 ho expedujeme do m\u00edstn\u00edch hosp\u016fdek, voz\u00edme ho ale tak\u00e9 t\u0159eba a\u017e do Bratislavy,&#8220; chlubil se Krohe mezin\u00e1rodn\u00edm prodejem. Janou\u0161kov\u00e1 pak dodala, \u017ee v nejbli\u017e\u0161\u00ed dob\u011b maj\u00ed v Krom\u011b\u0159\u00ed\u017ei v pl\u00e1nu va\u0159it i takzvan\u00e9 speci\u00e1ly. \u201eNap\u0159\u00edklad medov\u00e9 pivo na v\u00e1noce, nebo \u010dern\u00e9 na du\u0161i\u010dky. Je to n\u011bco nov\u00e9ho, co dnes lid\u00e9 hodn\u011b vyhled\u00e1vaj\u00ed. V sou\u010dasn\u00e9 dob\u011b se ale sna\u017e\u00edme stabilizovat jeden\u00e1ctku, kter\u00e1 bude na\u0161\u00edm etalonem, tedy standardem. Dal\u0161\u00ed druhy piva budou vesm\u011bs kr\u00e1tkodobou z\u00e1le\u017eitost\u00ed,&#8220; uzav\u0159ela Janou\u0161kov\u00e1.
