Restaurace s hezkou varnou v m\u011bdi, pivovar a pension m\u011bly b\u00fdt pro ve\u0159ejnost otev\u0159eny koncem dubna 2004. Majitel, \u010desk\u00fd rod\u00e1k z Hamburku podle sv\u00fdch slov cel\u00e1 l\u00e9ta va\u0159il pivo pro krajany v pr\u00e1deln\u00edm hrnci. Nemohlo to dopadnou jinak, \u017ee si nakonec otev\u0159el sv\u016fj pivovar. Pl\u00e1noval va\u0159it klasick\u00e1 spodn\u011b kva\u0161en\u00e1 piva RICHTER. Po\u010d\u00edtal pr\u00fd i v restauraci s hudebn\u00edmi produkcemi, p\u0159edev\u0161\u00edm jazz.<br \/>\nNa za\u010d\u00e1tku \u010dervna 2004 v\u0161ak je\u0161t\u011b restaurace nebyla v provozu.<br \/>\nV \u010dervenci 2004 ji\u017e byl pivov\u00e1rek otev\u0159en. Interi\u00e9r hospody je oblo\u017een d\u0159evem a n\u00e1v\u0161t\u011bvn\u00edka jist\u011b zaujaly nabl\u00fdskan\u00e9 m\u011bd\u011bn\u00e9 k\u00e1d\u011b varny. Atmosf\u00e9ru doplnila polohlasn\u00e1 reprodukovan\u00e1 bluesov\u00e1 hudba. V \u010dervenci 2004 produkoval pivovar jen jeden druh piva &#8211; sv\u011btl\u00fd le\u017e\u00e1k Pub Premium za 26 K\u010d. Pivo bylo \u010depov\u00e1no do sklenic bez loga, sn\u011bhov\u00e9 b\u00edl\u00e9 t\u00e1cky, je\u017e slou\u017eily i k zaznamen\u00e1v\u00e1n\u00ed vypit\u00fdch piv, byly opat\u0159eny raz\u00edtkem.<br \/>\nMinipivovar krom\u011b klasick\u00e9ho sv\u011btl\u00e9ho le\u017e\u00e1ku Pub Premium nab\u00edzel v prosinci 2004 i sv\u011btl\u00e9 pivo typu K\u00f6lsch. Pivo bylo svrchn\u011b kva\u0161en\u00e9 a obsahovalo 20 % p\u0161eni\u010dn\u00e9ho sladu.<br \/>\nMinipivovar pokra\u010doval i v roce 2005 v p\u0159\u00edprav\u011b pivn\u00edch specialit. Majitel vlastnil a hodlal vyzkou\u0161et 120 pivn\u00edch receptur. V \u00fanoru 2005 krom\u011b tradi\u010dn\u00ed sv\u011btl\u00e9 dvan\u00e1ctky Pub Premium (0,5 l za 26 K\u010d) jste zde mohli ochutnat polotmavou p\u0161eni\u010dnou kvasnicovou t\u0159in\u00e1ctku (0,5 l za 27 K\u010d) a tmavou \u010dtrn\u00e1ctku bavorsk\u00e9ho typu (0,5 l za 28 K\u010d). Aspo\u0148 to tvrdil dvaa\u010dty\u0159icetilet\u00fd Franti\u0161ek Richter, kter\u00fd m\u011bl v Libni ji\u017e dva roky otev\u0159en\u00fd minipivovar. P\u0159\u00edpravy na jeho otev\u0159en\u00ed trvaly sedm let, ale sv\u00e9ho snu se nevzdal. \u201eDvacet let jsem \u017eil v zahrani\u010d\u00ed a cht\u011bl jsem v Praze po n\u00e1vratu va\u0159it, co jsem poznal a co mi chutn\u00e1,\u201c \u0159ekl v b\u0159eznu 2006 mu\u017e, kter\u00fd podobn\u00fd pivovar provozoval i v N\u011bmecku. Tvrdil, \u017ee nen\u00ed nad dom\u00e1c\u00ed v\u00fdrobu. \u201eDr\u017e\u00edm se \u010distotn\u00edho z\u00e1kona o va\u0159en\u00ed piva z roku 1516 a pivo d\u011bl\u00e1m jen ze \u010dty\u0159 slo\u017eek &#8211; vody, sladu, chmele a kvasnic,\u201c jmenoval Richter, kter\u00fd lp\u011bl na p\u016fvodnosti. Proto doma vyr\u00e1b\u011bl i vlastn\u00ed s\u00fdry, klob\u00e1sy nebo ho\u0159\u010dici. \u201ePro\u010d \u0159\u00edk\u00e1m, \u017ee va\u0159\u00edm ze sobectv\u00ed? D\u011bl\u00e1m nefiltrovan\u00e9, nepasterizovan\u00e9 pivo, kter\u00e9 m\u00e1m r\u00e1d, a pak mi b\u00fdv\u00e1 smutno, kdy\u017e dojde,\u201c vysv\u011btlil. Na tabuli bylo naps\u00e1no, \u017ee dnes se to\u010d\u00ed Le\u017e\u00e1k 12,3%, Weissbier 13% a Alt 13,6%, v\u0161echny do t\u0159iceti korun za p\u016fllitr. \u201eN\u011bkdy m\u011b lidi oso\u010duj\u00ed, \u017ee va\u0159\u00edm n\u011bmeck\u00e1 piva. Ale p\u0159ed plze\u0148sk\u00fdm pivem, p\u0159ed velk\u00fdm t\u0159eskem, jak \u0159\u00edk\u00e1m, byla piva sp\u00ed\u0161e tmav\u00e1. A t\u0159eba tenhle Alt je jejich potomek. Pro m\u011b to je staro\u010desk\u00e9 pivo,\u201c \u0159ekl Richter nad jedn\u00edm z p\u016fllitr\u016f, kter\u00e9 dov\u00e1\u017eel z Istanbulu. Sed\u011bl v m\u00edstnosti v tmav\u00e9m d\u0159evu, kter\u00e9 dominovaly zlat\u00e9 varny. \u201eTo je prototyp, kter\u00fd jsem si nechal vyrobit. M\u00e1 kr\u00e9mov\u00fd z\u00e1klad a stejn\u011b ho\u0159kou p\u0159\u00edchu\u0165, jako kdy\u017e se napijete piva,&#8220; p\u0159ibl\u00ed\u017eil v \u010dervenci 2007 sl\u00e1dek Franti\u0161ek Richter. Pivn\u00ed poh\u00e1r &#8211; tedy t\u0159i kope\u010dky se \u0161leha\u010dkou \u2013 vy\u0161el na 65 korun. D\u011bti v\u0161ak do hospody sl\u00e1dek nel\u00e1kal. Zmrzlina se doporu\u010duje pouze dosp\u011bl\u00fdm. &#8222;Je alkoholick\u00e1, nem\u011bli by si ji d\u00e1vat ani \u0159idi\u010di,&#8220; upozornil Richter.<br \/>\nV roce 2007 zde bylo va\u0159eno pivo Jihom\u011b\u0161\u0165an 11.<br \/>\nVe vysmolen\u00fdch dubov\u00fdch sudech, kter\u00e9 jsou siln\u011bj\u0161\u00ed ne\u017e ty vinn\u00e9, m\u011bly vyzr\u00e1t speci\u00e1ly konce roku 2007. V polovin\u011b prosince 2007 tu rozto\u010dili hned n\u011bkolik p\u0159\u00edchut\u00ed. \u201eDok\u00e1\u017eeme z piva vyt\u00e1hnout r\u016fzn\u00e9 p\u0159\u00edchut\u011b &#8211; po jalovci, ban\u00e1nu, meru\u0148ce. P\u0159itom nep\u0159id\u00e1v\u00e1me \u017e\u00e1dn\u00e9 aroma ani p\u0159\u00edchut\u011b, jsou pouze z chmele,\u201c objas\u0148oval majitel pivovaru Franti\u0161ek Richter. Krom\u011b toho u\u017e n\u00e1m n\u011bkolik m\u011bs\u00edc\u016f zraje siln\u00e1 m\u00e1jov\u00e1 18 %, kterou za\u010dneme to\u010dit na za\u010d\u00e1tku kv\u011btna.
