Provozovala jej spole\u010dnost s n\u00e1zvem Jihlavsk\u00fd radni\u010dn\u00ed pr\u00e1vov\u00e1re\u010dn\u00fd pivovar,a.s.. &#8222;N\u011bkolikr\u00e1t jsme museli zastavit a p\u0159ekontrolovat dod\u00e1vku, vezli jsme dost drah\u00e9 za\u0159\u00edzen\u00ed, kter\u00e9 vyjde \u0159\u00e1dov\u011b na miliony korun, proto jsme necht\u011bli nic podcenit,&#8220; \u0159ekl Josef Kr\u00fdsl, projektant a stavitel pivovar\u016f. Radni\u010dn\u00ed pivovar vznikl na m\u00edst\u011b, kde \u0161estn\u00e1ct let fungoval klub Netop\u00fdr. Po dluhu na n\u00e1jemn\u00e9m ov\u0161em jihlav\u0161t\u00ed radn\u00ed vypov\u011bd\u011bli minul\u00e9mu n\u00e1jemci v kv\u011btnu 2010 smlouvu. Od t\u00e9 doby byla diskot\u00e9ka i Radni\u010dn\u00ed restaurace s kav\u00e1rnou v p\u0159\u00edzem\u00ed objektu opu\u0161t\u011bn\u00e1. &#8222;Prvn\u00ed druh piva se bude jmenovat Ign\u00e1c (podle patrona nedalek\u00e9ho kostela),&#8220; \u0159ekl v \u00fanoru 2011 Miroslav Tomanec. O n\u00e1zvech dal\u0161\u00edch piv je\u0161t\u011b nebylo rozhodnuto. Piva by m\u011bl nov\u00fd pivovar ro\u010dn\u011b vyrobit zhruba tis\u00edc hektolitr\u016f. &#8222;Host\u00e9 uvid\u00ed jednotliv\u00e9 z\u00e1kladn\u00ed procesy, tedy va\u0159en\u00ed, kva\u0161en\u00ed i zr\u00e1n\u00ed,&#8220; napl\u00e1noval Tomanec. Technologie se oproti p\u016fvodn\u00edmu projektu do\u010dkala \u00faprav. P\u016fvodn\u00ed varna m\u011bla m\u00edt objem tis\u00edc litr\u016f. Nakonec ale byla vyrobena n\u00e1doba s polovi\u010dn\u00ed kapacitou (500 litr\u016f). \u201eJde o historick\u00fd objekt, do kter\u00e9ho bychom m\u011bli probl\u00e9m varnu v\u011bt\u0161\u00ed velikosti p\u0159es historick\u00e9 vchody dostat,\u201c vysv\u011btlil Tomanec. I s polovi\u010dn\u00edmi n\u00e1dobami se parta \u0159emesln\u00edk\u016f nad\u0159ela a jen s obt\u00ed\u017eemi ji dostala dovnit\u0159. Produkci piva ale men\u0161\u00ed varny nesn\u00ed\u017e\u00ed. Naopak v pivov\u00e1rku budou um\u00edst\u011bny v\u011bt\u0161\u00ed z\u00e1sobn\u00edky na zlatav\u00fd mok, takzvan\u00e9 tanky.<br \/>\nRadni\u010dn\u00ed restaurace v centru m\u011bsta po roce a dev\u00edti dnech od uzav\u0159en\u00ed op\u011bt otev\u0159ela. Ve 14:00 dne 10.5.2011 p\u0159iv\u00edtala prvn\u00ed hosty. \u0160\u00e9fkucha\u0159 Libor Homolka si novou kuchyni v Radni\u010dn\u00ed restauraci pochvaloval. &#8222;Ve\u0161ker\u00e9 vybaven\u00ed jsem si vyb\u00edral s\u00e1m, tak\u017ee s kuchyn\u00ed mus\u00edm b\u00fdt spokojen,&#8220; \u0159ekl mu\u017e, kter\u00fd osm let d\u011blal \u0161\u00e9fkucha\u0159e v hotelu Gustav Mahler. A zat\u00edmco kucha\u0159i se na nov\u00e9m pracovi\u0161ti c\u00edtili jako ryba ve vod\u011b, v restauraci se od ned\u011ble &#8222;rozkouk\u00e1valy&#8220; akvarijn\u00ed rybky v nov\u00e9m akv\u00e1riu. Radni\u010dn\u00ed restaurace v p\u0159\u00edzem\u00ed doznala znateln\u00fdch \u00faprav. Zmizela d\u0159ev\u011bn\u00e1 nadstavba nad barem a cel\u00e1 restaurace je lad\u011bn\u00e1 v nov\u00e9m interi\u00e9ru se st\u00e1le stejn\u00fdm v\u00fdhledem na Masarykovo n\u00e1m\u011bst\u00ed. Prav\u00e9 l\u00e1kadlo a srdce nov\u00e9ho podniku se ukr\u00fdv\u00e1 v podzem\u00ed, kde d\u0159\u00edve b\u00fdvala diskot\u00e9ka Netop\u00fdr. Nyn\u00ed tam s\u00eddlil nov\u00fd pivov\u00e1rek s pades\u00e1tkou m\u00edst. V klenb\u00e1ch historick\u00e9ho sklepen\u00ed \u010dekal hosty vkusn\u011b a stylov\u011b za\u0159\u00edzen\u00fd interi\u00e9r. Podzem\u00ed zaplnilo i deset tis\u00edc litr\u016f chmelov\u00e9ho moku. Varny Radni\u010dn\u00edho pivovaru dokonce vysv\u011btil far\u00e1\u0159 Karel Kobl\u00ed\u017eek. Pivov\u00e1rek va\u0159il t\u0159i druhy piva s n\u00e1zvy Ign\u00e1c, Zikmund a Zuzana. Podle provozovatele Radni\u010dn\u00edho pivovaru Miroslava Tomance \u010dinila investice do vybaven\u00ed asi 10 milion\u016f korun. Z toho asi polovina pen\u011bz padla pr\u00e1v\u011b na technologii pivovaru.<br \/>\n\u201eP\u0159i otev\u0159en\u00ed pivovaru jsme pod\u00e1vali vi\u0161\u0148ovou Zuzanu, kter\u00e1 v\u0161em moc chutnala. Na nadch\u00e1zej\u00edc\u00ed letn\u00ed parn\u00e9 dny chyst\u00e1me je\u0161t\u011b bor\u016fvkovou Zuzanu,\u201c nast\u00ednila v \u010dervnu 2011 nejbli\u017e\u0161\u00ed pl\u00e1ny Kamila Gebrtov\u00e1 z obchodn\u00edho a marketingov\u00e9ho odd\u011blen\u00ed pivovaru. Ta dodala, \u017ee lik\u00e9rov\u00e1 piva maj\u00ed v oblib\u011b pr\u00e1v\u011b ti, kte\u0159\u00ed neholduj\u00ed klasick\u00e9mu pivu. \u201eZ\u00e1jem lid\u00ed je velik\u00e1nsk\u00fd, jak v pivnici, tak v na\u0161\u00ed kav\u00e1rn\u011b. Dokonce k n\u00e1m p\u0159ij\u00ed\u017ed\u00ed degust\u00e1to\u0159i z cel\u00e9 Vyso\u010diny,\u201c pochlubila se Gebrtov\u00e1. Pivovar pr\u00e1v\u011b rozj\u00ed\u017ed\u011bl dod\u00e1vku piv do sp\u0159\u00e1telen\u00fdch pivnic na Vyso\u010din\u011b.<br \/>\nRadni\u010dn\u00ed pivovar m\u011bl za sebou prvn\u00ed dva t\u00fddny fungov\u00e1n\u00ed. Veden\u00ed pivovaru se v\u0161ak zab\u00fdvalo probl\u00e9mem, kter\u00fd si vy\u017e\u00e1dal investici 1,7 milionu korun. Byla nutn\u00e1 oprava vzduchotechniky. Ta sou\u010dasn\u00e1, z po\u010d\u00e1tku devades\u00e1t\u00fdch let, byla ji\u017e nevyhovuj\u00edc\u00ed. Vyvstala ot\u00e1zka, kdo by dal\u0161\u00ed milionovou investici do vy\u017eit\u00e9ho prostoru b\u00fdval\u00e9 diskot\u00e9ky a restaurace m\u011bl zaplatit. Majitel nemovitosti, tedy radnice z m\u011bstsk\u00e9ho rozpo\u010dtu? Nebo pronaj\u00edmatel, kter\u00fdm byla spole\u010dnost Fabes, ji\u017e zastupoval Miroslav Tomanec? V tom u\u017e se n\u00e1zory r\u016fznily.<br \/>\nNejmlad\u0161\u00ed pivovar na Vyso\u010din\u011b, jihlavsk\u00fd Radni\u010dn\u00ed pivovar, m\u011bl kapacitu tis\u00edc hektolitr\u016f piva ro\u010dn\u011b. Zat\u00edm va\u0159il ve velk\u00e9m. Ji\u017e m\u011bs\u00edc provozu pivovaru uk\u00e1zal, \u017ee o mal\u00e9 pivovary byl mezi lidmi velk\u00fd z\u00e1jem. Jaroslav Dor\u00e1\u017eka, jeden ze sl\u00e1dk\u016f, musel kv\u016fli kontrole nad va\u0159en\u00edm piva v pivovaru dv\u011b noci p\u0159espat. \u201eVa\u0159\u00edme, jak je pot\u0159eba, jsme limitovan\u00ed kapacitou spilek a\u2002le\u017e\u00e1ck\u00fdch sklep\u016f. Ze za\u010d\u00e1tku n\u00e1s z\u00e1jem zasko\u010dil. Ne\u010dekali jsme, \u017ee z\u00e1soby se budou tak rychle zten\u010dovat. M\u011bli jsme prodlevu a museli jsme rychle va\u0159it. No a tak jsem va\u0159il i v noci,\u201c \u0159ekl o za\u010d\u00e1tc\u00edch Dor\u00e1\u017eka. Dal\u0161\u00edm p\u0159ekvapen\u00edm byl pro provozovatele pivovaru tak\u00e9 z\u00e1jem o nefiltrovan\u00fd, nepasterizovan\u00fd, spodn\u011b kva\u0161en\u00fd le\u017e\u00e1k \u010desk\u00e9ho typu, tedy polotmavou t\u0159in\u00e1ctku, kter\u00e1 nese n\u00e1zev Zikmund. \u201eZ\u00e1jem byl opravdu velk\u00fd. To, \u017ee favoritem bude sv\u011btl\u00e1 dvan\u00e1ctka, jsme \u010dekali, ale polotmav\u00e9 tak\u00e9 velmi boduje. S\u2002t\u00edm jsme nepo\u010d\u00edtali,\u201c \u0159ekl sl\u00e1dek. Nejobl\u00edben\u011bj\u0161\u00edm zlatav\u00fdm mokem pivovaru byla tedy dvan\u00e1ctka, sv\u011btl\u00fd le\u017e\u00e1k, kter\u00fd nesl n\u00e1zev Ign\u00e1c. To byl le\u017e\u00e1k spodn\u011b kva\u0161en\u00fd, kter\u00fd byl uva\u0159en ze dvou druh\u016f chmele, \u017eateck\u00e9ho poloran\u00e9ho \u010derve\u0148\u00e1ku a novoz\u00e9lansk\u00e9ho chmele. Zejm\u00e9na \u017eeny p\u0159i\u0161ly na chu\u0165 Zuzan\u011b, dvan\u00e1ctistup\u0148ov\u00e9mu vi\u0161\u0148ov\u00e9mu speci\u00e1lu. Jednalo se o pivo s obsahem p\u0159\u00edrodn\u00edch lik\u00e9rov\u00fdch v\u00fdta\u017ek\u016f. Uva\u0159it jednu v\u00e1rku trvalo asi jeden\u00e1ct hodin. \u201eD\u00edky tomu, \u017ee m\u00e1me varnu \u0159\u00edzenou elektronicky, tak u va\u0159en\u00ed nemus\u00edm b\u00fdt po\u0159\u00e1d a mezit\u00edm se m\u016f\u017eu v\u011bnovat i dal\u0161\u00edm v\u011bcem,\u201c uzav\u0159el Jaroslav Dor\u00e1\u017eka. Proto se od 26. z\u00e1\u0159\u00ed do 9. \u0158\u00edjna 2011 v pivovaru objevila na \u010depu novinka &#8211; d\u00fd\u0148ov\u00fd speci\u00e1l Pumpkin Ale 12\u00b0. Jednalo se o svrchn\u011b kva\u0161en\u00e9, nefiltrovan\u00e9 a nepasterizovan\u00e9 pivo americk\u00e9ho p\u016fvodu. U n\u00e1s bylo d\u00fd\u0148ov\u00e9 pivo sp\u00ed\u0161e raritou a ani v mal\u00fdch pivovarech nenajdeme mnoho z\u00e1stupc\u016f, kte\u0159\u00ed tento speci\u00e1l zkou\u0161eli nava\u0159it. &#8222;Dalo by se \u0159\u00edci, \u017ee je to takov\u00e1 pivn\u00ed obdoba americk\u00e9ho d\u00fd\u0148ov\u00e9ho kol\u00e1\u010de, kter\u00fd v Americe pe\u010dou p\u0159i p\u0159\u00edle\u017eitosti oslav sv\u00e1tku Halloween&#8220;, zm\u00ednil sl\u00e1dek pivovaru Jaroslav Dor\u00e1\u017eka. P\u0159i va\u0159en\u00ed d\u00fd\u0148ov\u00e9ho piva se krom\u011b spousty \u010derstv\u00fdch d\u00fdn\u00ed pou\u017eila stejn\u00e1 sm\u011bs ko\u0159en\u00ed jako pr\u00e1v\u011b na tento d\u00fd\u0148ov\u00fd kol\u00e1\u010d, tj. sko\u0159ice, mu\u0161k\u00e1tov\u00fd o\u0159ech a koriandr. Pivo si zachovalo jemnou ho\u0159kost, m\u011blo jantarovou barvu a p\u0159\u00edjemn\u00e9 sko\u0159icov\u00e9 aroma. A \u017ee byl o pivo velk\u00fd z\u00e1jem dokazovali sami n\u00e1v\u0161t\u011bvn\u00edci pivovaru. Za prvn\u00ed dny u\u017e v\u00fdto\u010d pivn\u00edho speci\u00e1lu konkurovala st\u00e1l\u00e9 nab\u00eddce, kter\u00e1 byla v Radni\u010dn\u00edm pivovaru na \u010depu. Hlavn\u00ed sl\u00e1dek Jaroslav Dor\u00e1\u017eka se tentokr\u00e1t rozhodl zkombinovat dv\u011b tradi\u010dn\u00ed suroviny, kter\u00e9 se na v\u00fdrobu v\u00e1no\u010dn\u00edch pivn\u00edch speci\u00e1l\u016f pou\u017e\u00edvaj\u00ed. Zat\u00edmco \u010derstv\u00fd nastrouhan\u00fd z\u00e1zvor se p\u0159id\u00e1val v kone\u010dn\u00e9 f\u00e1zi chmelen\u00ed, med se dod\u00e1val a\u017e do samotn\u00e9 spilky p\u0159i kva\u0161en\u00ed. A proto\u017ee si pe\u010dliv\u011b vyb\u00edr\u00e1me ve\u0161ker\u00e9 ingredience, kter\u00e9 do piva p\u0159ijdou, pou\u017eili jsme med od mal\u00e9ho v\u010dela\u0159e pana Pittauera z Vyso\u010diny.
