Tradice va\u0159en\u00ed piva zde byla dokladov\u00e1na ji\u017e v roce 1784.<br \/>\nVe\u0161ker\u00e9 technologick\u00e9 za\u0159\u00edzen\u00ed je v nerezov\u00e9m proveden\u00ed, varna m\u00e1 objem 5,5 hl, s ro\u010dn\u00edm v\u00fdstavem cca 1 000 hl.<br \/>\nV pl\u00e1nu je vyr\u00e1b\u011bt sv\u011btl\u00fd a tmav\u00fd le\u017e\u00e1k (11 %), ochucen\u00fd sv\u011btl\u00fd a tmav\u00fd le\u017e\u00e1k (11 %). V dob\u011b sv\u00e1tk\u016f a v\u00fdro\u010d\u00ed by m\u011bl b\u00fdt sortiment obohacen tmav\u00fdm a sv\u011btl\u00fdm speci\u00e1lem (14 %).<br \/>\nMinipivovar je dostupn\u00fd tramvaj\u00ed \u010d.2 z hlavn\u00edho n\u00e1dra\u017e\u00ed a tramvaj\u00ed \u010d.7 z n\u00e1dra\u017e\u00ed Ostrava-Svinov (zast\u00e1vka Karpatsk\u00e1).<br \/>\nMinipivovar byl slavnostn\u011b vysv\u011bcen dne 28.z\u00e1\u0159\u00ed 2007 v den Sv. V\u00e1clava.<br \/>\nMinipivovar m\u00e1 v\u00fdstav 700 hl a dodala ho spole\u010dnost PIVO Praha, s.r.o. jako sv\u016fj \u0161est\u00fd v \u010cesk\u00e9 republice. Dvoun\u00e1dobov\u00e1 varna s objemem vyr\u00e1\u017een\u00e9 mladiny 550 l tvo\u0159\u00ed sou\u010d\u00e1sti interi\u00e9ru pivnice a host ji spat\u0159\u00ed hned u vchodu. \u0160rotovna a sklad sladu soused\u00ed s varnou, \u010d\u00edm\u017e je zaji\u0161t\u011bno jak jednoduch\u00e9 z\u00e1sobov\u00e1n\u00ed sladem, tak doprava \u0161rotu do varny. Pro druhou \u010d\u00e1st pivovaru bylo nutno postavit budovu. Do n\u00ed byl um\u00edst\u011bn, deskov\u00fd chladi\u010d, n\u00e1doba na horkou vodu, spilka se t\u0159emi kvasn\u00fdmi k\u00e1d\u011bmi, 5 le\u017e\u00e1ck\u00fdch a dva v\u00fd\u010depn\u00ed tanky.<br \/>\n\u201eZ\u00e1jemci si mohou p\u0159\u00edrodn\u00ed nefiltrovan\u00e9 a nepasterovan\u00e9 z\u00e1meck\u00e9 pivo &#8211; sv\u011btl\u00fd i tmav\u00fd jeden\u00e1ctistup\u0148ov\u00fd le\u017e\u00e1k &#8211; zat\u00edm koupit v sudech. U\u017e brzy, asi po kolaudaci za\u010d\u00e1tkem z\u00e1\u0159\u00ed, by m\u011bla b\u00fdt otev\u0159ena z\u00e1meck\u00e1 pivnice, restaurace, vin\u00e1rna a hotel,\u201c uvedl v srpnu 2007 \u0159editel Z\u00e1mku Z\u00e1b\u0159eh Radovan Koudelka.<br \/>\nSv\u011btlou a tmavou jeden\u00e1ctku s n\u00e1zvem Pikard jste mohli v srpnu 2007 ochutnat na n\u00e1dvo\u0159\u00ed z\u00e1me\u010dku v Ostrav\u011b-Z\u00e1b\u0159ehu za 19 K\u010d. Pivo bylo to\u010deno do ba\u0148at\u00fdch p\u016fllitr\u016f s logem Z\u00e1meck\u00e9ho pivovaru. Do v\u00fd\u010depn\u00edho za\u0159\u00edzen\u00ed u st\u00e1nku byl mok veden p\u0159\u00edmo z tank\u016f.<br \/>\nP\u016fllitr jeden\u00e1ctistup\u0148ov\u00e9ho nefiltrovan\u00e9ho Pikarda (sv\u011btl\u00e9ho i tmav\u00e9ho) jste v z\u00e1\u0159\u00ed 2007 po\u0159\u00eddili v Z\u00e1meck\u00e9 pivnici v Ostrav\u011b-Z\u00e1b\u0159ehu za 24 K\u010d. Krom\u011b ba\u0148at\u00fdch sklenic s tepan\u00fdm logem byly pro sb\u011bratele k dispozici u\u017e i t\u00e1cky. Otev\u0159eno bylo tu denn\u011b od 11 do 23 hodin.<br \/>\nV z\u00e1\u0159\u00ed 2007 jste mohli v Ostrav\u011b-Z\u00e1b\u0159ehu krom\u011b tradi\u010dn\u00edho sv\u011btl\u00e9ho a tmav\u00e9ho Pikarda ochutnat i speci\u00e1ln\u00ed Pu\u0161kvorcov\u00e9 pivo (0,5 l za 30 K\u010d). Jednalo se o ochucenou tmavou jeden\u00e1ctku.<br \/>\nZ\u00e1meck\u00fd pivovar nachystal na Svatov\u00e1clavsk\u00e9 pivn\u00ed slavnosti konan\u00e9 ve dnech 29.a 30.9.2007 v are\u00e1lu z\u00e1mku pivo Svatov\u00e1clavsk\u00fd z\u00e1meck\u00fd speci\u00e1l 14\u00b0.<br \/>\nV Z\u00e1meck\u00e9 pivnici v Ostrav\u011b-Z\u00e1b\u0159ehu jste mohli v prosinci 2007 ochutnat speci\u00e1ln\u00ed v\u00e1no\u010dn\u00ed sv\u011btlou \u010dtrn\u00e1ctku (0,5 l za 30 K\u010d). Standardn\u00ed sv\u011btl\u00fd a tmav\u00fd jeden\u00e1ctistup\u0148ov\u00fd Pikard st\u00e1l 24 K\u010d.<br \/>\n\u201eZprvu jsme na\u0161li nejstar\u0161\u00ed z\u00e1znamy o pivovaru z druh\u00e9 poloviny osmn\u00e1ct\u00e9ho stolet\u00ed, ale p\u0159ed p\u00e1r dny objevil n\u00e1\u0161 historik v archivu olomouck\u00e9ho arcibiskupstv\u00ed listiny, podle nich\u017e u\u017e byl pivovar na z\u00e1mku v roce 1616,\u201c \u0159ekl mana\u017eer a \u201ekastel\u00e1n\u201c z\u00e1mku Radovan Koudelka. Uvedl, \u017ee se majitel\u00e9 z\u00e1mku zam\u011b\u0159ili na hled\u00e1n\u00ed p\u016fvodn\u00ed receptury piva, kter\u00e9 se v z\u00e1mku p\u0159ed stalet\u00edmi va\u0159ilo. \u201eBylo by skv\u011bl\u00e9 uva\u0159it dnes pivo tak, jak ho va\u0159ili tehdy na\u0161i p\u0159edkov\u00e9. Asi by n\u00e1m moc nechutnalo, ale ta my\u0161lenka n\u00e1s st\u00e1le dr\u017e\u00ed,\u201c \u0159ekl. P\u0159esto\u017ee tedy \u010dty\u0159i sta let star\u00e9 pivo n\u00e1v\u0161t\u011bvn\u00edci restaurace nemohli zat\u00edm ochutnat, sna\u017eil se sl\u00e1dek V\u00e1clav Baron va\u0159it pivo, kter\u00e9 m\u00e1 neobvyklou chu\u0165. A tak krom\u011b u\u017e zaveden\u00e9 jeden\u00e1ctky va\u0159il i \u010dern\u00e9 \u010dtrn\u00e1ctistup\u0148ov\u00e9 pu\u0161kvorcov\u00e9 pivo. A na oslavu p\u0159estupn\u00e9ho roku vpustil do \u010derpadel restaurace dal\u0161\u00ed speci\u00e1ln\u00ed pivo. \u201eNazvali jsme ho P\u0159estupn\u00e9 medov\u00e9 pivo,\u201c \u0159ekl sl\u00e1dek a prozradil, \u017ee p\u0159i v\u00fdrob\u011b tohoto piva pou\u017eil p\u011bt lahv\u00ed medu, co\u017e \u010din\u00ed asi pades\u00e1t kilogram\u016f medu z podh\u016f\u0159\u00ed Jesenicka. Sl\u00e1dek V\u00e1clav Baron ostatn\u011b speci\u00e1ln\u00ed piva r\u00e1d va\u0159\u00ed. N\u00e1v\u0161t\u011bvn\u00edci stylov\u011b za\u0159\u00edzen\u00e9 restaurace a hotelu u\u017e mohli ochutnat Svatov\u00e1clavsk\u00fd polotmav\u00fd le\u017e\u00e1k, tmavou Mikul\u00e1\u0161skou \u010dtrn\u00e1ctku \u010di V\u00e1no\u010dn\u00ed polotmav\u00e9 pivo. \u201eDatum 29. \u00fanora 2008 se p\u0159\u00edmo nab\u00edz\u00ed. \u010cty\u0159let\u00e1 perioda nab\u00edj\u00ed produkt ur\u010ditou mystikou a nav\u00edc majitel z\u00e1mku m\u00e1 v ten den sv\u00e9 jeden\u00e1ct\u00e9 narozeniny,\u201c \u0159ekl s \u00fasm\u011bvem mana\u017eer Radovan Koudelka. Sl\u00e1dek V\u00e1clav Baron \u0159ekl, \u017ee medov\u00e9ho piva nava\u0159il osm set pades\u00e1t litr\u016f. \u201eJsme a\u017e trochu p\u0159ekvapeni, jak n\u00e1s jako podnik s vlastn\u00edm pivem lid\u00e9 berou. Mo\u017en\u00e1 je to t\u00edm jarn\u00edm po\u010das\u00edm, ale v lednu lid\u00e9 vypili tolik piva, kolik jsme tipovali v zim\u011b na dva m\u011bs\u00edce,\u201c \u0159ekl bodr\u00fd sl\u00e1dek. P\u0159i posledn\u00edm \u201eob\u0159adn\u00e9m\u201c ochutn\u00e1v\u00e1n\u00ed piva t\u011bsn\u011b p\u0159ed jeho vpu\u0161t\u011bn\u00edm do p\u00edp \u0159ekl, \u017ee kvalitu t\u00e9to speci\u00e1ln\u00ed v\u00e1rky medov\u00e9ho piva zkou\u0161\u00ed u\u017e po sedma\u010dty\u0159ic\u00e1t\u00e9.<br \/>\nMinipivovar \u00fasp\u011b\u0161n\u011b i na ja\u0159e 2008 pokra\u010doval v rod\u00edc\u00ed se tradici va\u0159en\u00ed pivn\u00edch speci\u00e1l\u016f. U n\u00e1s je to premi\u00e9ra, na trhu \u010desk\u00e9 bezlepkov\u00e9 pivo nen\u00ed,&#8220; uvedl v \u010dervnu 2008 sl\u00e1dek. Tradi\u010dn\u00ed surovinu slad v pivu nahradila pohanka, a tak m\u011bl p\u011bniv\u00fd n\u00e1poj v\u00fdrazn\u00e9 zdravotn\u00ed \u00fa\u010dinky. &#8222;K chuti p\u0159ijde v\u0161em, kte\u0159\u00ed bojuj\u00ed s vrozenou alergi\u00ed na lepek,&#8220; ujistil sl\u00e1dek. Podle mana\u017eera z\u00e1b\u0159e\u017esk\u00e9ho z\u00e1mku Radovana Koudelky trp\u00ed takzvanou celiaki\u00ed, tedy vrozenou alergi\u00ed na lepek, sedm a\u017e osm procent populace. &#8222;Standardn\u00ed pivo lepek obsahuje, kde\u017eto pohanka ne. Imunolog n\u00e1m potvrdil, \u017ee pohankov\u00e9 pivo je vhodn\u00e9 pro tento typ alergie,&#8220; uvedl Koudelka. V\u00fdroba pohankov\u00e9ho speci\u00e1lu trvala podle sl\u00e1dka cel\u00fdch 48 hodin, co\u017e je skoro \u010dty\u0159ikr\u00e1t d\u00e9le ne\u017e u norm\u00e1ln\u00edho piva. &#8222;Trp\u011blivost byla zapot\u0159eb\u00ed p\u0159i takzvan\u00e9m scezov\u00e1n\u00ed. Koupil jsem neloupanou pohanku, a velk\u00fd probl\u00e9m byl s t\u00edm, \u017ee se ucpala cel\u00e1 va\u0159ic\u00ed ma\u0161ina,&#8220; vysv\u011btlil Baron, kter\u00fd pohankov\u00e9 pivo krom\u011b alergik\u016fm doporu\u010duje nap\u0159\u00edklad cyklist\u016fm. &#8222;Ale jen v takov\u00e9m mno\u017estv\u00ed, aby byli schopni odjet,&#8220; sm\u00e1l se sl\u00e1dek. Pivo s hustou tmavou p\u011bnou a sv\u011b\u017e\u00ed chut\u00ed, v n\u00ed\u017e \u0161lo uc\u00edtit med, mohli p\u00edt n\u00e1v\u0161t\u011bvn\u00edci Svatov\u00e1clavsk\u00fdch slavnost\u00ed, kter\u00e9 v are\u00e1lu z\u00e1mku p\u0159ipomn\u011bly rok od jeho otev\u0159en\u00ed. Tradi\u010dn\u00ed pivn\u00ed slo\u017eky ve svatov\u00e1clavsk\u00e9m le\u017e\u00e1ku doplnily t\u0159i druhy sladu &#8211; bavorsk\u00fd, karamelov\u00fd a pra\u017een\u00fd. \u201eK tomu pat\u0159\u00ed je\u0161t\u011b speci\u00e1ln\u00ed bylinky a v\u0161e spojuje \u010dty\u0159icet kilo jarn\u00edho medu,\u201c \u0159ekl sl\u00e1dek. Pivo le\u017eelo a zr\u00e1lo 70 dn\u00ed.<br \/>\nSpeci\u00e1ln\u00ed pivo uva\u0159en\u00e9 z bur\u010d\u00e1ku odr\u016fdy Modr\u00fd Portugal nab\u00eddl sv\u00fdm n\u00e1v\u0161t\u011bvn\u00edk\u016fm po\u010d\u00e1tkem listopadu 2008 Z\u00e1meck\u00fd minipivovar. Bur\u010d\u00e1kov\u00e9 pivo bylo osm\u00fdm speci\u00e1lem, kter\u00fd b\u011bhem zhruba ro\u010dn\u00edho p\u016fsoben\u00ed minipivovaru vymyslel m\u00edstn\u00ed sl\u00e1dek. &#8222;Z\u016fstal n\u00e1m vinn\u00fd mo\u0161t a nev\u011bd\u011bli jsme, co s n\u00edm. Pivo bude polotmav\u00fd le\u017e\u00e1k, jeden\u00e1ctka, bude to asi nejdra\u017e\u0161\u00ed pivo, kter\u00e9 jsme dosud uva\u0159ili,&#8220; \u0159ekl novin\u00e1\u0159\u016fm sl\u00e1dek V\u00e1clav Baron. Dev\u011bt set litr\u016f vinn\u00e9ho piva budou moci z\u00e1jemci ochutnat od 9. listopadu. Na jeho v\u00fdrobu padlo 400 litr\u016f \u010derven\u00e9ho bur\u010d\u00e1ku od vina\u0159e Petra Skoupila z Velk\u00fdch B\u00edlovic na B\u0159eclavsku, kter\u00fd vyhr\u00e1l mezin\u00e1rodn\u00ed sout\u011b\u017e Vina\u0159 roku 2008. &#8222;Byla to n\u00e1razov\u00e1, tajn\u00e1 akce, nikomu jsme to ne\u0159ekli, proto\u017ee jsme nev\u011bd\u011bli, zda se to poda\u0159\u00ed,&#8220; prozradil B\u0159etislav Skoczek ze Z\u00e1mku Z\u00e1b\u0159eh. U ovocn\u00e9 \u0161\u0165\u00e1vy je toti\u017e podle sl\u00e1dka probl\u00e9mem vysok\u00fd obsah kyselin, kter\u00e9 by mohly zab\u00edt kvasnice. &#8222;Kvasnice ale p\u0159e\u017eily a norm\u00e1ln\u011b pracuj\u00ed,&#8220; dodal Baron.<br \/>\nUnik\u00e1tn\u00edm pivem z hroznov\u00e9 \u0161\u0165\u00e1vy odr\u016fdy Modr\u00fd Portugal se mohl pochlubit minipivovar v listopadu 2008. Jeho jeden\u00e1ctistup\u0148ov\u00e9 Svatomartinsk\u00e9 pivo mohli milovn\u00edci netradi\u010dn\u00edch piv ochutn\u00e1vat od 5.11.2008. Na \u010depu bylo 750 litr\u016f pivn\u00edho speci\u00e1lu. Pivo z vinn\u00e9ho mo\u0161tu bylo osm\u00fdm speci\u00e1lem, kter\u00e9 minipivovar za svou v\u00edce ne\u017e ro\u010dn\u00ed existenci nava\u0159il. &#8222;B\u011b\u017en\u011b pou\u017e\u00edv\u00e1me jako suroviny med nebo bylinky a zde jsme pou\u017eili 400 litr\u016f vinn\u00e9 \u0161\u0165\u00e1vy, do kter\u00e9 jsme p\u0159idali sv\u011btl\u00e9 pivo. D\u00edky hrozn\u016fm m\u00e1 pivo na\u010dervenalou barvu, je p\u0159\u00edjemn\u011b sv\u011b\u017e\u00ed, kyselkav\u00e9. Kdyby v\u00edno dozr\u00e1valo na ja\u0159e, doporu\u010dil bych ho jako osv\u011b\u017euj\u00edc\u00ed pivo v l\u00e9t\u011b,&#8220; popsal sv\u016fj v\u00fdtvor sl\u00e1dek V\u00e1clav Baron. Nejnov\u011bj\u0161\u00ed speci\u00e1l podle sl\u00e1dka chutnal jako pivo, ale z\u00e1rove\u0148 m\u00e1 i lahodnou chu\u0165 v\u00edna. &#8222;D\u00e1 se p\u0159irovnat k ovocn\u00e9mu pivu, hod\u00ed se k huse a tu\u010dn\u00fdm pokrm\u016fm,&#8220; dodal Baron, kter\u00fd pr\u00fd zat\u00edm nesly\u0161el o tom, \u017ee by n\u011bkdo jin\u00fd uva\u0159il pivo z hroznov\u00e9 \u0161\u0165\u00e1vy. Na v\u00fdrobu asi 700 litr\u016f zelenkav\u00e9ho piva padlo sedm kilogram\u016f su\u0161en\u00fdch kop\u0159iv z beskydsk\u00e9ho \u00fadol\u00ed Borov\u00e1, jedn\u00e9 z nej\u010dist\u0161\u00edch lokalit pod Lysou horou. &#8222;N\u00e1\u0161 sl\u00e1dek spo\u010d\u00edtal, aby k\u016fra m\u011bla nejv\u011bt\u0161\u00ed protich\u0159ipkov\u00fd \u00fa\u010dinek, je t\u0159eba vyp\u00edt t\u0159i a\u017e \u010dty\u0159i piva denn\u011b po dobu, dokud pivo je,&#8220; za\u017eertoval provozn\u00ed mana\u017eer B\u0159etislav Skoczek. Kop\u0159ivov\u00e9 pivo by se v z\u00e1meck\u00e9m komplexu \u010depovalo od 19.2.2009. V roce 2008 pivovar, kter\u00fd byl sou\u010d\u00e1st\u00ed Z\u00e1mku Z\u00e1b\u0159eh v Ostrav\u011b se \u010dty\u0159hv\u011bzdi\u010dkov\u00fdm ubytov\u00e1n\u00edm, uva\u0159il asi 800 hl piva.<\/p>\n<p>Ji\u017e dvan\u00e1ct\u00fd pivn\u00ed speci\u00e1l m\u011bl dne 30.4.2009 svou premi\u00e9ru na z\u00e1mku v Ostrav\u011b-Z\u00e1b\u0159ehu. Byl j\u00edm p\u0161eni\u010dn\u00fd speci\u00e1l \u017densk\u00e9 pivo Pikard, kter\u00fd byl ur\u010den p\u0159edev\u0161\u00edm pro jemn\u011bj\u0161\u00ed d\u00e1msk\u00e9 chu\u0165ov\u00e9 bu\u0148ky. Zaj\u00edmavost\u00ed bylo, \u017ee nov\u00e9 pivo uva\u0159il nov\u00fd vrchn\u00ed sl\u00e1dek, \u0161estat\u0159icetilet\u00fd Tom\u00e1\u0161 Hub, kter\u00fd a\u017e doposud n\u011bkolik let va\u0159il pivo p\u0159edev\u0161\u00edm ve sv\u011bt\u011b, mimo jin\u00e9 i v Asii a Austr\u00e1lii. Svrchn\u011b kva\u0161en\u00fd speci\u00e1l byl mezi pivy skute\u010dn\u00fdm unik\u00e1tem. \u201eVych\u00e1zeli jsme z poznatku, \u017ee \u017eeny, d\u00e1my i d\u00edvky u n\u00e1s st\u00e1le v\u00edce vyhled\u00e1vaj\u00ed pivn\u00ed speci\u00e1ly, jejich\u017e ho\u0159k\u00e1 chu\u0165 jim v\u016fbec nen\u00ed ciz\u00ed. Tak, jako jsme na\u0161i pu\u0161kvorcovou jeden\u00e1ctku p\u0159ipravili hlavn\u011b pro mu\u017ee, \u017densk\u00e9 pivo Pikard, jak u\u017e n\u00e1zev napov\u00edd\u00e1, je ur\u010deno hlavn\u011b \u017een\u00e1m,\u201c \u0159ekl mana\u017eer minipivovaru Radovan Koudelka. \u201eP\u0161eni\u010dn\u00e9 pivo s origin\u00e1ln\u00ed recepturou v novodob\u00fdch d\u011bjin\u00e1ch Ostravy je\u0161t\u011b nikdo neuva\u0159il, a s p\u0159\u00edvlastkem \u00b4\u017densk\u00e9\u00b4 \u00fato\u010d\u00edme dokonce na evropsk\u00fd prim\u00e1t,\u201c sm\u00e1l se Koudelka. Pivo m\u011blo jedine\u010dnou ko\u0159en\u011bnou chu\u0165 s jemn\u00fdmi odst\u00edny sko\u0159ice a h\u0159eb\u00ed\u010dku. \u201eD\u016fle\u017eitou \u010d\u00e1st\u00ed je i ingredience na b\u00e1zi ovocn\u00e9 slo\u017eky, kter\u00e1 ale z\u016fst\u00e1v\u00e1 na\u0161\u00edm v\u00fdrobn\u00edm tajemstv\u00edm,\u201c dodal Koudelka. \u201eO pivn\u00ed speci\u00e1ly je u n\u00e1s obrovsk\u00fd z\u00e1jem. Ka\u017ed\u00fd, kter\u00fd jsme zat\u00edm uva\u0159ili, se vypil b\u011bhem dvou \u010di t\u0159\u00ed dn\u016f. \u017densk\u00e9 pivo Pikard 11 chceme pod\u00e1vat po cel\u00e9 l\u00e9to,\u201c sliboval Koudelka. \u201eTen, kdo pivo pije, v\u011b\u010dn\u011b ml\u00e1d je,\u201c prozradil sv\u00e9 kr\u00e9do vrchn\u00ed sl\u00e1dek Tom\u00e1\u0161 Hub.<br \/>\nV srpnu 2009 byla jednotn\u00e1 cena za v\u0161echny t\u0159i piva &#8211; 32 K\u010d za 0,4 l.<br \/>\nVe dnech 27. a 28. z\u00e1\u0159\u00ed 2009 se po\u0159\u00e1daly na Z\u00e1mku v Ostrav\u011b &#8211; Z\u00e1b\u0159ehu Svatov\u00e1clavsk\u00e9 pivn\u00ed slavnosti. Minipivovar u p\u0159\u00edle\u017eitosti sv\u00e1tku svat\u00e9ho V\u00e1clava p\u0159edstavil zbrusu nov\u00e9 pivo \u2013 13\u00b0 Svatov\u00e1clavsk\u00fd speci\u00e1l \u2013 medovo-\u0161\u00edpkov\u00fd polotmav\u00fd le\u017e\u00e1k. \u201eC\u00edlem bylo znovu uva\u0159it v\u00fdjime\u010dn\u00e9 pivo, kter\u00e9 tady je\u0161t\u011b nebylo\u201c \u0159ekl vrchn\u00ed sl\u00e1dek Tom\u00e1\u0161 Hub. V\u00e1rka 1 000 litr\u016f moku pro\u0161la na spilce spodn\u00edm kva\u0161en\u00edm za pou\u017eit\u00ed speci\u00e1ln\u00edho druhu kvasnic s dobou zr\u00e1n\u00ed 40 dn\u016f. Mohu potvrdit, \u017ee pivo je ve skv\u011bl\u00e9 kondici. Ur\u010dit\u011b zaujme svoj\u00ed t\u00e9m\u011b\u0159 rub\u00ednovou barvou, bohatou p\u011bnivost\u00ed, plnou chut\u00ed na pat\u0159e s dlouh\u00fdm, p\u0159\u00edjemn\u00fdm dozn\u00edv\u00e1n\u00edm. Za dva roky p\u016fsoben\u00ed Z\u00e1meck\u00e9ho minipivovaru je to n\u00e1\u0161 v po\u0159ad\u00ed 13. speci\u00e1l,\u201c doplnil vrchn\u00ed sl\u00e1dek Tom\u00e1\u0161 Hub.<br \/>\nDosud to m\u011bli lid\u00e9 s bezlepkovou dietou, takzvan\u00ed celiaci, t\u011b\u017ek\u00e9. Kdy\u017e dostali chu\u0165 na pivo, museli si ji nechat zaj\u00edt, nebo si nechat poslat speci\u00e1ln\u00ed pivo z Anglie \u010di N\u011bmecka. To u\u017e ale neplatilo. Vrchn\u00ed sl\u00e1dek minipivovaru Tom\u00e1\u0161 Hub toti\u017e uva\u0159il v listopadu 2009 speci\u00e1ln\u00ed bezlepkov\u00e9 pivo. V z\u00e1meck\u00e9m pivovaru mohli celiaci ochutnat bezlepkov\u00e9 pivo u\u017e v roce 2008, tehdy je sl\u00e1dek uva\u0159il z pohanky, kter\u00e1 ale &#8222;zabetonovala&#8220; v\u00fdrobn\u00ed za\u0159\u00edzen\u00ed, proto byla v roce 2009 hlavn\u00ed surovinou kuku\u0159ice a tak\u00e9 kuku\u0159i\u010dn\u00fd sirup. Dal\u0161\u00edmi surovinami pro neobvykl\u00e9 pivo byl nap\u0159\u00edklad karamel, belgick\u00e9 pivn\u00ed kvasnice a chmel s p\u0159\u00edsadou bylinek, nap\u0159\u00edklad ibi\u0161ku. &#8222;Ten podpo\u0159il tmavou barvu piva a tak\u00e9 za\u017e\u00edv\u00e1n\u00ed,&#8220; \u0159ekl sl\u00e1dek. Minipivovar uva\u0159il osm set litr\u016f bezlepkov\u00e9ho piva s n\u00e1zvem Pikard, o dal\u0161\u00ed v\u00fdrob\u011b rozhodnou \u0161tamgasti. Pokud by o pivo byl z\u00e1jem, pivovar jej bude d\u00e1le vyr\u00e1b\u011bt. &#8222;K v\u00fdrob\u011b bezlepkov\u00e9ho piva n\u00e1s po \u00fasp\u011bchu prvn\u00edho pokusu s pohankou p\u0159ivedla intervence \u010cesk\u00e9ho svazu celiak\u016f,&#8220; dodal Tom\u00e1\u0161 Hub. Lid\u00e9 s bezlepkovou dietou maj\u00ed vrozenou alergii na obilnou b\u00edlkovinu, tedy lepek. Nemohou tedy nap\u0159\u00edklad po\u017e\u00edvat potraviny z mouky ani extrakty s obilovin. &#8222;Kdy\u017e si d\u00e1m norm\u00e1ln\u00ed pivo, tak ut\u00edk\u00e1m na z\u00e1chod,&#8220; popsal \u00fa\u010dinky p\u0159i poru\u0161en\u00ed bezlepkov\u00e9 diety celiak, kter\u00fd pracoval shodou okolnost\u00ed jako \u010d\u00ed\u0161n\u00edk v minipivovaru.<br \/>\nPrvn\u00edm v\u00e1no\u010dn\u00edm pivem pivovaru byl Mikul\u00e1\u0161sk\u00fd \u010dokol\u00e1dov\u00fd speci\u00e1l. Jako 15. v\u00fdro\u010dn\u00ed speci\u00e1l \u2013 15 % svrchn\u011b kva\u0161en\u00fd polotmav\u00fd byl na z\u00e1mku vystaven od 5.prosince 2009. K v\u00fdrob\u011b Mikul\u00e1\u0161sk\u00e9ho piva bylo pou\u017eito p\u011bt speci\u00e1ln\u011b upraven\u00fdch je\u010dmenn\u00fdch slad\u016f. &#8222;P\u0159i dozr\u00e1v\u00e1n\u00ed jsem p\u0159idal \u010dokol\u00e1dov\u00fd extrakt,&#8220; popsal vznik netradi\u010dn\u00edho piva sl\u00e1dek Tom\u00e1\u0161 Hub. Klasickou \u010dokol\u00e1du do piva p\u0159idat nemohl. &#8222;\u010cokol\u00e1da p\u0159ece obsahuje tuk, tak\u017ee by host\u00e9 m\u011bli na hladin\u011b piva mastn\u00e9 fleky,&#8220; sm\u00e1l se sl\u00e1dek.<br \/>\nV\u00fdrobou tradi\u010dn\u00edho jeden\u00e1ctistup\u0148ov\u00e9ho p\u0161eni\u010dn\u00e9ho B\u00edl\u00e9ho piva s efektn\u00edm zabarven\u00edm zah\u00e1jili v minipivovaru novou pivovarnickou sezonu v lednu 2010. Z\u00e1stupci pivovaru p\u0159edstavili \u010dist\u011b p\u0161eni\u010dnou jeden\u00e1ctku vyrobenou speci\u00e1ln\u00edm postupem, kter\u00fd sv\u00fdm n\u00e1zvem vhodn\u011b zapadala k zasn\u011b\u017een\u00fdm dn\u016fm ledna 2010. &#8222;D\u00edku procesu svrchn\u00edho kva\u0161en\u00ed z\u00edsk\u00e1v\u00e1 B\u00edl\u00e9 pivo jedine\u010dn\u00e9 vlastnosti,&#8220; uvedl mana\u017eer Radovan Koudelka. &#8222;Mok z\u00e1sluhou p\u0161eni\u010dn\u00fdch b\u00edlkovin nab\u00edz\u00ed p\u0159irozen\u00fd z\u00e1kal s efektn\u00edm b\u00edl\u00fdm n\u00e1dechem. Chu\u0165ov\u011b v sob\u011b vyv\u00e1\u017een\u011b m\u00eds\u00ed jemn\u011b obilnou chu\u0165 s odst\u00edny ho\u0159k\u00e9 chmeloviny. Kvasnice p\u0159isp\u011bly k zaj\u00edmav\u00e9mu ovocn\u00e9mu aroma, celkov\u011b pak pivo p\u016fsob\u00ed leh\u010deji.&#8220; Koudelka ale p\u0159ipomn\u011bl, \u017ee p\u0161enice byla kl\u00ed\u010dovou surovinou pou\u017e\u00edvanou \u010desk\u00fdmi sl\u00e1dky p\u0159i va\u0159en\u00ed piva hlavn\u011b v 18. a 19. stolet\u00ed. &#8222;Dodnes se pro kone\u010dn\u00fd produkt svrchn\u011b kva\u0161en\u00e9ho piva t\u00e9 doby v \u010cech\u00e1ch pou\u017e\u00edv\u00e1 v\u017eit\u00fd n\u00e1zev Staro\u010desk\u00e9 pivo. Evropskou tradici t\u00e9to receptury, zn\u00e1m\u00e9 jako \u201cweissbier\u201c, st\u00e1le nejv\u00edce vyzn\u00e1vaj\u00ed v okol\u00ed n\u011bmeck\u00e9ho Norimberku,&#8220; dodal Koudelka, kter\u00fd p\u0159i\u0161el na postup p\u0159\u00edpravy jimi vyroben\u00e9ho speci\u00e1ln\u00edho piva. V\u00e1rka p\u0161eni\u010dn\u00e9ho sladu a \u010desk\u00e9ho chmele pro\u0161la dv\u011bma rmuty, n\u00e1sledn\u011b t\u00fddenn\u00edm kva\u0161en\u00edm za pomoc\u00ed speci\u00e1ln\u00edch belgick\u00fdch kvasnic a nakonec \u010dtrn\u00e1ctidenn\u00edm zr\u00e1n\u00edm v pivn\u00edm tanku.<br \/>\nOd 9. \u00danora 2010 mohli n\u00e1v\u0161t\u011bvn\u00edci Z\u00e1me\u010dku ochutnat Valent\u00fdnsk\u00fd \u010dokol\u00e1dov\u00fd speci\u00e1l. \u0160lo o polotmav\u00fd 13\u00b0gran\u00e1t.<br \/>\nNa velikonoce 2010 minipivovar nava\u0159il krom\u011b standardn\u00edho sv\u011btl\u00e9ho a tmav\u00e9ho Pikarda tak\u00e9 svrchn\u011b kva\u0161en\u00fd B\u00edl\u00fd p\u0161eni\u010dn\u00fd speci\u00e1l 11\u00b0(0,5 l za 32 K\u010d) a Kop\u0159ivov\u00e9 pivo 11\u00b0(0,5 l za 45 K\u010d).<br \/>\nDne 30.4.2010 v r\u00e1mci svatojakubsk\u00e9 noci minipivovar nab\u00edzel \u010carod\u011bjnick\u00e9 pivo &#8211; Pikard speci\u00e1l \u201eALE\u201c s babsk\u00fdm uchem.<br \/>\nU\u017e dvac\u00e1t\u00e9 speci\u00e1ln\u00ed pivo pok\u0159tili dne 1.7.2010 zam\u011bstnanci minipivovaru. \u0160lo o svrchn\u011b kva\u0161en\u00e9 pivo belgick\u00e9ho typu, kter\u00e9mu se \u0159\u00edk\u00e1 Ale. V Z\u00e1b\u0159ehu ho p\u0159ipravili ochucen\u00e9 Chilli.<br \/>\nP\u0159ed st\u0159\u00edbrn\u00fdmi v\u00e1lci kle\u010del v zelen\u00fdch mont\u00e9rk\u00e1ch sl\u00e1dek Rostislav \u0158ehulka a \u010depoval novinku tohoto l\u00e9ta. T\u0159in\u00e1ctku Pikard jantarov\u00fd. Tak se p\u0159esn\u011b pivo jmenovalo. \u201ePokud v\u00edm, tak na Morav\u011b takov\u00e9 pivo neva\u0159\u00ed nikdo,\u201c \u0159ekl \u0158ehulka. Vymysleli ho na britsk\u00fdch ostrovech, ale na Z\u00e1mku va\u0159ili toto pivo v\u00edce po americku. \u201eZnamen\u00e1 to, \u017ee je v\u00edce chmelen\u00e9. A je to pivo, kter\u00e9 nen\u00ed pro ka\u017ed\u00e9ho. M\u00e1 v\u00fdraznou chu\u0165 po chmelu a tak\u00e9 po ovoci. N\u011bkomu chutn\u00e1 hodn\u011b a n\u011bkomu zase v\u016fbec,\u201c vysv\u011btlil sl\u00e1dek. Va\u0159it takov\u00e9 pivo se nau\u010dil a\u017e v Austr\u00e1lii, kde pracoval p\u0159edt\u00edm, ne\u017e p\u0159i\u0161el do Z\u00e1b\u0159ehu. \u201eJe vyzkou\u0161en\u00e9 na australsk\u00fdch pij\u00e1c\u00edch,\u201c sm\u00e1l se \u0158ehulka. Krom\u011b jantarov\u00e9ho nab\u00edzel pivovar v \u010dervenci 2010 dal\u0161\u00ed t\u0159i druhy sv\u00fdch piv. Klasick\u00e1 je sv\u011btl\u00e1 jeden\u00e1ctka Pikard, kuriozitou je p\u0161eni\u010dn\u00e1 jeden\u00e1ctka zvan\u00e1 \u017eensk\u00e1, proto\u017ee v\u00fdrazn\u011b chutn\u00e1 \u017een\u00e1m. A je\u0161t\u011b v\u011bt\u0161\u00ed kuriozitou je pak tmav\u00e1 pu\u0161kvorcov\u00e1 \u010dtrn\u00e1ctka. Jak napov\u00edd\u00e1 n\u00e1zev, sl\u00e1dek \u0158ehulka p\u0159id\u00e1val p\u0159i va\u0159en\u00ed do moku ko\u0159eny pu\u0161kvorce. \u201eNechod\u00ed k n\u00e1m klasi\u010dt\u00ed piva\u0159i, kte\u0159\u00ed denn\u011b vypij\u00ed sv\u00fdch deset dvan\u00e1ct piv,\u201c \u0159ekl mana\u017eer Z\u00e1mku Radovan Koudelka. Do Z\u00e1mku chod\u00ed jednotliv\u00e1 piva lid\u00e9 sp\u00ed\u0161e ochutn\u00e1vat.<br \/>\nNa po\u010d\u00e1tku listopadu 2010 minipivovar nab\u00edzel i P\u0161eni\u010dno-Malinov\u00e9 pivo Pikard 11 (0,4 l za 32 K\u010d).<br \/>\nNa konec roku 2010 minipivovar p\u0159ipravil \u010cokol\u00e1dov\u00e9 pivo PIKARD 13% (0,4 l za 32,-K\u010d).<br \/>\nV dubnu 2011 minipivovar nab\u00edzel mj. speci\u00e1l Belgick\u00fd jarn\u00ed Ale ( polotmav\u00e1 13%).<br \/>\nMinipivovar na l\u00e9to 2011 p\u0159ipravil \u010dty\u0159i druhy piv (sv\u011btl\u00e9, tmav\u00e9, p\u0161eni\u010dn\u011b a ale). Hlavn\u00ed letn\u00ed novinkou bylo t\u0159in\u00e1ctistup\u0148ov\u00e9 polotmav\u00e9 pivo belgick\u00e9ho typu &#8222;ale&#8220;. Na z\u00e1mku vy\u0161elp\u016fllitr speci\u00e1lu na 35 korun, t\u0159etinka na 25 korun.<br \/>\nNa svatov\u00e1clavsk\u00e9 pivn\u00ed slavnosti 27.-28.2011 pivovar uva\u0159il t\u0159in\u00e1ctistup\u0148ov\u00fd tmav\u00fd irsk\u00fd typ piva Creamy Stout. Pivo bylo unik\u00e1tn\u00ed sv\u00fdm obsahem, va\u0159ilo se ze \u010dty\u0159 druh\u016f je\u010dmenn\u00e9ho sladu. Sycen\u00ed dus\u00edkem na \u010depu mu pak ve sklenici dalo zcela v\u00fdjime\u010dnou podobu.<br \/>\nV listopadu 2011 minipivovar nava\u0159il polotmav\u00fd Svatomartinsk\u00fd pivn\u00ed speci\u00e1l 13% (0,4 l za 35 K\u010d).<br \/>\nDne 15.12. 2011 prob\u011bhl v prostor\u00e1ch minipivovaru k\u0159est a ochutn\u00e1vka unik\u00e1tn\u00edch v\u00e1no\u010dn\u00edch speci\u00e1l\u016f: 13\u00b0 American Pale Ale i 13\u00b0 Ka\u0161tanov\u00e9 pivo. 13\u00b0 American Pale Ale byl svrchn\u011b kva\u0161en\u00fd polotmav\u00fd speci\u00e1l va\u0159en\u00fd z \u010dist\u011b je\u010dmenn\u00fdch slad\u016f. Unik\u00e1tn\u00ed bylo svoj\u00ed d\u00e1vkou speci\u00e1ln\u00edho americk\u00e9ho chmele, kter\u00fd se v netradi\u010dn\u00edm procesu macerace za studena p\u0159idal do zrac\u00edho pivn\u00edho tanku. 13\u00b0 Ka\u0161tanov\u00e9 pivo bylo spodn\u011b kva\u0161en\u00fd speci\u00e1l uva\u0159en\u00fd podle speci\u00e1ln\u00ed receptury ze t\u0159\u00ed druh\u016f slad\u016f a s macerovan\u00fdm p\u0159\u00eddavkem 25 kg jedl\u00fdch ka\u0161tan\u016f na v\u00e1rku 1 000 litr\u016f moku.<br \/>\nMinipivovar v polovin\u011b \u00fanora 2012 nab\u00edzel krom\u011b st\u00e1l\u00e9ho sortimentu i American Pale Ale (t\u0159in\u00e1ctistup\u0148ov\u00e9, svrchn\u011b kva\u0161en\u00e9, pou\u017eit americk\u00fd chmel; 0,4 l za 35 K\u010d).<br \/>\nNa konci \u00fanora 2012 minipivovar nab\u00edzel 13\u00b0 sv\u011btl\u00fd spodn\u011b kva\u0161en\u00fd V\u00edde\u0148sk\u00fd le\u017e\u00e1k.<br \/>\nNa Velk\u00fd p\u00e1tek roku 2012 (6.4.) byla v restauraci nab\u00edzena rovn\u011b\u017e V\u00edde\u0148sk\u00e1 13\u00b0.<br \/>\nV polovin\u011b dubna 2012 byl st\u00e1le v restauraci na \u010depu V\u00edde\u0148sk\u00fd 13\u00b0 jantarov\u00fd le\u017e\u00e1k Pikard (0,4 l za 35 K\u010d).<br \/>\nDne 30.4. 2012 prob\u011bhl v are\u00e1lu z\u00e1mku slet \u010darod\u011bjnic. Pro \u017e\u00edzniv\u00e9 krky byl na \u010depu p\u0159ipraven \u010carod\u011bjnick\u00fd speci\u00e1l &#8211; 13\u00b0 polotmav\u00fd le\u017e\u00e1k z babsk\u00e9ho ucha a medu.<br \/>\nNa konci kv\u011btna 2012 byla na \u010depu op\u011bt letn\u00ed Pikard p\u0161eni\u010dn\u00e1 11\u00b0 (0,4 l za 35 K\u010d).<br \/>\nV \u010dervnu 2012 se v restauraci to\u010dil tak\u00e9 pivn\u00ed speci\u00e1l Red Ale Pikard 13\u00b0 (0,4 l za 35 K\u010d).<br \/>\nDne 17.7.2012 byla na \u010depu P\u0161eni\u010dn\u00e1 11\u00b0 Pikard (0,4 l za 35 K\u010d).<br \/>\nDne 8.8.2012 na \u010depu V\u00edde\u0148sk\u00fd le\u017e\u00e1k Pikard 13\u00b0 (0,4 l za 35 K\u010d).<br \/>\nMinipivovar p\u0159ipravil na Svatov\u00e1clavsk\u00e9 slavnosti roku 2012 t\u0159in\u00e1ctistup\u0148ov\u00fd Svatov\u00e1clavsk\u00fd speci\u00e1l, co\u017e bylo pivo druhu Vienna Lager.<br \/>\nDne 20.11.2012 na \u010depu Pikard Medov\u00fd speci\u00e1l 12\u00b0 (0,5 l za 35 K\u010d).<br \/>\nNa po\u010d\u00e1tku prosince 2012 si mohli n\u00e1v\u0161t\u011bvn\u00edci dop\u0159\u00e1t Mikul\u00e1\u0161sk\u00e9 pivo s medem a \u010dokol\u00e1dou. Tato polotmav\u00e1 dvan\u00e1ctka byla na n\u00e1pojov\u00e9m l\u00edstku \u010dtrn\u00e1ct dn\u00ed, pak ji vyst\u0159\u00eddal v\u00e1no\u010dn\u00ed speci\u00e1l. \u201eT\u00fdden p\u0159ed V\u00e1nocemi za\u010dneme \u010depovat polotmavou t\u0159in\u00e1ctku s ka\u0161tanovou p\u0159\u00edchut\u00ed. Poprv\u00e9 jsme ji za\u010dali va\u0159it vloni a m\u011bla velk\u00fd \u00fasp\u011bch, tak z toho chceme ud\u011blat takovou sv\u00e1te\u010dn\u00ed tradici,&#8220; popsal Radovan Koudelka, mana\u017eer Z\u00e1mku Z\u00e1b\u0159eh Ostrava. \u201eNava\u0159ili jsme zhruba tis\u00edc litr\u016f a douf\u00e1me, \u017ee n\u00e1m v\u00e1rka vydr\u017e\u00ed a\u017e do Silvestra. Na svat\u00e9ho Martina bude medo\u0161\u00edpkov\u00e1 polotmav\u00e1 t\u0159in\u00e1ctka a o V\u00e1noc\u00edch ka\u0161tanov\u00e9 pivo. V nab\u00eddce budeme m\u00edt tak\u00e9 v\u00edde\u0148sk\u00fd le\u017e\u00e1k,&#8220; vyjmenoval v \u0159\u00edjnu 2013 Radovan Koudelka, mana\u017eer Z\u00e1mku Z\u00e1b\u0159eh. \u201eDa\u0159\u00ed se n\u00e1m pokr\u00fdt popt\u00e1vku a vloni jsme roz\u0161\u00ed\u0159ili kapacitu pivovaru na deset le\u017eat\u00fdch tank\u016f, tak\u017ee jsme na maximu.
