Zat\u00edm nejsiln\u011bj\u0161\u00ed zdej\u0161\u00ed IPA. Pou\u017eit\u00e9 druhy chmel\u016f: Columbus, Admiral, Azacca, Studen\u00e9 chmelen\u00ed \u2013 Columbus.<\/li>\n<li>V lednu 2019 naplnil do 0,33 l plechovek ovocn\u00e9, kysel\u00e9 pivo &#8211; Red Fruit BW 12\u00b0 pln\u00fd vi\u0161n\u00ed, malin, jahod a \u010dern\u00e9ho ryb\u00edzu.<\/li>\n<li>Speci\u00e1ln\u00ed halloweensk\u00e9 pivo roku 2018 <strong>Spicy Pumpkin Sour Ale 12\u00b0<\/strong> (alk.. 5,5%). Jednalo se o pivo, na kter\u00e9 bylo pou\u017eito t\u00e9m\u011b\u0159 80 kg d\u00fdn\u00ed Hokaido ze statku U Pipk\u016f (D\u00fd\u0148ov\u00fd sv\u011bt). D\u00fdn\u011b se \u201evypeckovaly\u201c a upekly. Pot\u00e9 se rozmixovaly na ka\u0161i a daly se spole\u010dn\u011b se sladem do v\u00e1rky. Na z\u00e1v\u011br p\u0159i\u0161el chmelovar, do kter\u00e9ho se hodila sm\u011bs ko\u0159en\u00ed \u2013 koriandr, sko\u0159ice, z\u00e1zvor. Pivo je lehce chmeleno za studena.<\/li>\n<li>V polovin\u011b \u0159\u00edjna 2018 \u0161el do prodeje prvn\u00ed halloweensk\u00fd speci\u00e1l, kysel\u00fd, n\u00e1dhern\u011b ko\u0159en\u011bn\u00fd a pln\u00fd \u010derstv\u00fdch d\u00fdn\u00ed (180 kg) &#8211; Spicy Pumpkin Sour Ale 12\u00b0. Bude k dost\u00e1n\u00ed pouze ve vybran\u00fdch hospod\u00e1ch.<\/li>\n<li>V srpnu 2018 v prodeji Easy Hopper 11\u00b0 &#8211; sv\u011btl\u00e9, svrchn\u011b kva\u0161en\u00e9 pivo uva\u0159en\u00e9 za pou\u017eit\u00ed pouze jedin\u00e9ho druhu chmele, v tomto p\u0159\u00edpad\u011b Sorachi Ace (4,7 % alk., IBU 40).<\/li>\n<li>V \u010dervenci 2018 v prodeji Permon Sunny Day Session Ale 11 ( chmel: Lemondrop, Mosaic, Citra a Cascade; 4,7 % alk. ). K je\u010dn\u00e9mu sladu byl p\u0159id\u00e1n i p\u0161eni\u010dn\u00fd.<\/li>\n<li>Od 25.6.2018 v prodeji novinka &#8211; WaterMelon Summer Ale s \u010derstv\u00fdmi melouny (APA 10 %, alk.: 4,1 %).<\/li>\n<li>V dubnu 2018 v prodeji Zythos New England IPA 15 % (alk.: 6,4 %; 60 EBU; 15 EBC).<\/li>\n<li>V \u00fanoru 2018 v prodeji Belgian Pale Ale 11\u00b0- slab\u0161\u00ed speci\u00e1l typu ale kva\u0161en\u00fd p\u0159\u00edmo na belgick\u00fdch kvasnic\u00edch. Va\u0159en\u00e9 p\u0159ev\u00e1\u017en\u011b z belgick\u00e9ho sladu.<\/li>\n<li>V \u010dervnu 2017 na \u010depu Permon Pineapple Ale 12\u00b0, ve v\u00e1rce bylo pou\u017eito 150 l za studena lisovan\u00e9 \u0161\u0165\u00e1vy z ananas\u016f, chmely Mosaic a Melone.<\/li>\n<li>Dne 1.8.2016 dal\u0161\u00ed ze s\u00e9rie single hop\u016f. Tentokr\u00e1t se jednalo o velmi obl\u00edben\u00fd americk\u00fd chmel &#8211; Hopper Apollo. Pou\u017eili tentokr\u00e1t chmel Centenial a slad PALE ALE. Lahvov\u00e9 pivo v prodeji od 20.6.2016.<\/li>\n<li>Dal\u0161\u00ed projekt, kter\u00fd sokolovsk\u00fd minipivovar ji\u017e v kv\u011btnu 2016 dostal spole\u010dn\u00fdmi silami do konce, byl mezin\u00e1rodn\u00ed &#8222;Koopera\u010dn\u00ed&#8220; pivo <strong>RedMon 15\u00b0<\/strong> s polsk\u00fdm pivovarem Reden. Stejnou recepturu piv va\u0159ili v\u017edy spole\u010dn\u011b jak v Polsku, tak v \u010cR. Spole\u010dn\u00e1 my\u0161lenka se nesla v duchu: Stejn\u00fd recept, rozd\u00edln\u00e9 suroviny, rozd\u00edln\u00e1 technologie, spole\u010dn\u00e1 l\u00e1ska k pivu. Jednalo se op\u011bt o svrchn\u011b kva\u0161en\u00fd speci\u00e1l typu India Pale Ale.<\/li>\n<li>Dal\u0161\u00ed opravdu &#8222;ostrej&#8220; speci\u00e1l vznikl na technologii minipivovaru &#8211; jednalo se o dal\u0161\u00ed Chilli IPA. Tentokr\u00e1t pou\u017eili chilli papri\u010dky odr\u016fdy Rawit. P\u00e1livost\u00ed se v jednotk\u00e1ch SHU p\u0159ibli\u017en\u011b vyrovnaly papri\u010dk\u00e1m Habanero, ale tentokr\u00e1t, dali v\u011bt\u0161\u00ed gram\u00e1\u017e do v\u00e1rky. Novinka v prodeji od 3.5.2016.<\/li>\n<li>K 10.v\u00fdro\u010d\u00ed zalo\u017een\u00ed pivovaru se sl\u00e1dek rozhodl a vymyslel opravdov\u00fd speci\u00e1l. Do receptu zakomponoval 19 odr\u016fd zn\u00e1m\u00fdch zahrani\u010dn\u00edch chmel\u016f. Tento speci\u00e1l nazvali IN HOP WE TRUST I.P.A. a va\u0159it ho za\u010dali v polovin\u011b kv\u011btna 2016.<\/li>\n<li>Novinka v dubnu 2016 &#8211; Smoked Zone IPA 15\u00b0 6,1 alc. 60 IBU, s pou\u017e\u00edm naku\u0159ovan\u00e9ho skotsk\u00e9ho sladu naku\u0159ovan\u00e9m ra\u0161elinou \u2013 nen\u00ed tedy tak aromatick\u00fd, pivo bylo lehce chmelen\u00e9 za studena<\/li>\n<li>Od 8.3. 2016 minipivovar pustil do prodeje Velikono\u010dn\u00ed speci\u00e1l 13\u00b0. Pivo zr\u00e1lo p\u0159es 2 m\u011bs\u00edce v le\u017e\u00e1ck\u00e9m tanku. Nemohlo samoz\u0159ejm\u011b tradi\u010dn\u011b chyb\u011bt 6 velikono\u010dn\u00edch tradi\u010dn\u00edch motiv\u016f na etiket\u00e1ch.<\/li>\n<li>Pro velk\u00fd \u00fasp\u011bch v \u00fanoru 2016 opakovali &#8222;\u017ehav\u00fd&#8220; speci\u00e1l DON HABANERO CHILLI IPA 16\u00b0. Pou\u017eit\u00e9 Chilli papri\u010dky HABANERO (cca. 440 000 SHU). P\u0159\u00edjemn\u00e1 p\u00e1livost byla slad\u011bn\u00e1 se v\u0161emi pou\u017eit\u00fdmi chmely.<\/li>\n<li>Dne 24.11.2015 pustili do prodeje svrchn\u011b kva\u0161en\u00e9 V\u00e1no\u010dn\u00ed pivo XMas Ale. Pivo se vyzna\u010dovalo sv\u011btlou, a\u017e jemn\u011b karamelovou barvou P\u0159i v\u00e1rce tohoto speci\u00e1lu pou\u017eili lusky vanilky dovezen\u00e9 a\u017e z ostrova Mauricius. Chu\u0165 vanilky byla v pivu velmi jemn\u00e1.<\/li>\n<li>Dne 24.6.2015 v prodeji dal\u0161\u00ed speci\u00e1ln\u00ed v\u00e1rka s n\u00e1zvem Hopper 2\/7 a p\u0159\u00edjmen\u00edm Cascade. Jednalo se o tzv &#8222;Single Hop Ale&#8220;, p\u0159i jeho\u017e v\u00e1rce byl pou\u017eit pouze zn\u00e1m\u00fd americk\u00fd chmel Cascade.<\/li>\n<li>Dne 4.6.2015: Chmelov\u00e9 orgie p\u0159ipravil pivovar ve spolupr\u00e1ci s l\u00e9taj\u00edc\u00edm pivovarem Nom\u00e1d. Pivo jm\u00e9nem Za\u0159\u00edk\u00e1va\u010d chmele &#8211; Double IPA, stup\u0148ovitost\u00ed 17,5\u00b0, obsah alkoholu je 7,5 %, 110 IBU.<\/li>\n<li>Dne 23.5.2015 novinka &#8211; speci\u00e1ln\u00ed v\u00e1rka s n\u00e1zvem Hopper a p\u0159\u00edjmen\u00edm Citra. Jednalo se o tzv &#8222;Single Hop Ale&#8220;, p\u0159i jeho\u017e v\u00e1rce byl pou\u017eit pouze americk\u00fd chmel Citra. Ten byl i odborn\u00fdm garantem minipivovaru. T\u00fddn\u011b tu mohlo vzniknout a\u017e \u010dty\u0159i sta litr\u016f nefiltrovan\u00e9ho a nepasterovan\u00e9ho piva. Prvn\u00ed lid\u00e9 u\u017e ho ochutnali v lomnick\u00e9 hospod\u011b u Franty, kterou si firma Ladislava S\u00e1se pronajala. \u201ePermona pro n\u00e1s na z\u00e1klad\u011b na\u0161ich receptur a s pou\u017eit\u00edm tradi\u010dn\u00edch surovin &#8211; sladu, chmele, vody a \u010derstv\u00fdch kvasinek &#8211; uva\u0159ili ve sp\u0159\u00e1telen\u00fdch pivovarech v Plzni, Dob\u0159anech a v Pivovarsk\u00e9m dom\u011b v Praze. Tyto zku\u0161ebn\u00ed v\u00e1rky u\u017e prod\u00e1v\u00e1me. V Lomnici jsme ud\u011blali zat\u00edm jen kontroln\u00ed var, tento t\u00fdden n\u00e1s \u010dek\u00e1 kolaudace a zku\u0161ebn\u00ed v\u00e1rka,\u201c uvedl v prosinci 2006 Ladislav S\u00e1s. Pivo se prezentovalo jako sokolovsk\u00e9 proto, proto\u017ee minipivovar byl vlastn\u011b jen jak\u00e1si laborato\u0159 pro v\u011bt\u0161\u00ed pivovar, kter\u00fd i s restaurac\u00ed stav\u011blo sousedn\u00ed m\u011bsto Sokolov v are\u00e1lu tamn\u00edho kapuc\u00ednsk\u00e9ho kl\u00e1\u0161tera. \u201eM\u00e1me s m\u011bstem Sokolov smlouvu o smlouv\u011b budouc\u00ed, \u017ee ten pivovar budeme provozovat. Zav\u00e1zali jsme se, \u017ee my p\u0159iprav\u00edme technologii. Ta bude st\u00e1t kolem osmi milion\u016f korun,\u201c poznamenal S\u00e1s. Lomnick\u00e1 maxim\u00e1ln\u00ed produkce \u010dty\u0159 set litr\u016f t\u00fddn\u011b nesta\u010dila sta\u010dit ani pro tamn\u00ed hospodu. Host\u00e9 vypili daleko v\u00edce. \u201eNest\u00edh\u00e1me vyr\u00e1b\u011bt. Je to sp\u00ed\u0161e takov\u00e1 prezentace, ne\u017e za\u010dneme va\u0159it pivo ve velk\u00e9 varn\u011b v Sokolov\u011b,\u201c podotkl S\u00e1s. T\u0159in\u00e1ctku a jeden\u00e1ctku minipivovar va\u0159il proto, aby se odli\u0161oval od drtiv\u00e9 v\u011bt\u0161iny ostatn\u00edch, kter\u00e9 nab\u00edzely hlavn\u011b dvan\u00e1cti a desetistup\u0148ov\u00fd mok. \u201e\u010casem po\u010d\u00edt\u00e1me s t\u00edm, \u017ee bychom pivo st\u00e1\u010deli i do lahv\u00ed a d\u011blali r\u016fzn\u00e1 speci\u00e1ln\u00ed ochucen\u00e1 piva.\u201c Minipivovar tak\u00e9 sliboval, \u017ee uva\u0159\u00ed speci\u00e1ln\u00ed jednor\u00e1zov\u00e9 v\u00e1rky piva na zak\u00e1zku podle objedn\u00e1vky a chuti z\u00e1kazn\u00edka. L\u00e1kal tak\u00e9 na r\u016fzn\u00e9 propaga\u010dn\u00ed p\u0159edm\u011bty. Na jednom z nich se o Permonu nap\u016fl r\u00fdmovan\u011b p\u00ed\u0161e: Pivo Permon dr\u017e\u00ed p\u011bnu, jako by byla p\u0159ikovan\u00e1, barva je kr\u00e1sn\u00e1, zrzav\u00e1, p\u0159\u00edjemn\u011b zakalen\u00e1, chu\u0165 skv\u011bl\u00e1. V kr\u00e1lovsk\u00e9 kategorii sv\u011btl\u00e9 le\u017e\u00e1ky vybojoval vav\u0159\u00edny Pivovar Lomnice u Sokolova s pivem Permon.<br \/>\nLomnick\u00fd dom\u00e1c\u00ed pivovar navr\u017een\u00fd propag\u00e1torem minipivovar\u016f, plze\u0148sk\u00fdm sl\u00e1dkem Josefem Kr\u00fdslem, najednou vyprodukoval sto litr\u016f n\u00e1poje. Produkce kon\u010dila v m\u00edstn\u00ed restauraci U Franty, kde u\u017e mu d\u00e1vala p\u0159ed zn\u00e1m\u00fdmi zna\u010dkami p\u0159ednost asi polovina host\u016f. \u201eZa\u0159\u00edzen\u00ed je \u0159\u00edzen\u00e9 po\u010d\u00edta\u010dem, kter\u00fd hl\u00edd\u00e1 teploty i \u010dasy,\u201c vysv\u011btlil Ladislav S\u00e1s. V mal\u00fdch v\u00e1rk\u00e1ch vyr\u00e1b\u011bn\u00e9 pivo podle n\u011bj nen\u00ed nic pro pivn\u00ed skauty, kte\u0159\u00ed za den zkonzumuj\u00ed deset \u010di v\u00edce piv, ale sp\u00ed\u0161 pro labu\u017en\u00edky, kte\u0159\u00ed dok\u00e1\u017e\u00ed ocenit origin\u00e1ln\u00ed chu\u0165. \u201ePiva z dom\u00e1c\u00edch pivovar\u016f neobsahuj\u00ed \u017e\u00e1dn\u00e9 chemick\u00e9 p\u0159\u00edsady, nejsou poznamen\u00e1na pr\u016fmyslovou v\u00fdrobou,\u201c vysv\u011btlil sl\u00e1dek Josef Kr\u00fdsl. \u201eNav\u00edc ka\u017ed\u00e9 chutn\u00e1 jinak, zat\u00edmco pr\u016fmyslov\u011b vyr\u00e1b\u011bn\u00e1 piva maj\u00ed v\u011bt\u0161inou velmi podobnou chu\u0165,\u201c poznamenal Kr\u00fdsl.<br \/>\nMinipivovar v Lomnici u Sokolova nyn\u00ed nab\u00edzel v srpnu 2007 sv\u011btlou a polotmavou dvan\u00e1ctku a sv\u011btlou a tmavou t\u0159in\u00e1ctku Permon, v\u0161e za 22 K\u010d. D\u00e1le \u0161lo koupit 12\u00b0 sv\u011btl\u00e9 v litrov\u00e9 PET lahvi za 45 K\u010d. Prod\u00e1vali i 2litrov\u00e9 lahve s patentn\u00edm uz\u00e1v\u011brem a tam nato\u010dili cokoli z nab\u00eddky a 5litrov\u00e9 soudky. Spolumajitel firmy Ladislav S\u00e1s toti\u017e v sousedn\u00ed Lomnici va\u0159il pivo Permon. A kdy\u017e p\u0159ed p\u00e1r t\u00fddny za\u010dal zlat\u00fd mok st\u00e1\u010det i do lahv\u00ed, napadlo ho nab\u00edzet Permona v sokolovsk\u00e9 prodejn\u011b s po\u010d\u00edta\u010di. \u201eVenku na chodn\u00edku m\u00e1me postaven\u00e9 reklamn\u00ed \u00e1\u010dko a lid\u00e9 se sem u\u017e nau\u010dili chodit,\u201c \u0159ekla v listopadu 2007 Lucie Radov\u00e1 ze Syst\u00e9m Net Line. Ale kapacita minipivovaru je omezen\u00e1 na 400 litr\u016f t\u00fddn\u011b. Prod\u00e1me v\u0161echno, co vyrob\u00edme,\u201c vysv\u011btlil Jan Rada. Z\u00e1kazn\u00edk\u016f opravdu p\u0159ib\u00fdv\u00e1 a je jich st\u00e1le v\u00edc a v\u00edc,\u201c prohl\u00e1sil v dubnu 2008 sl\u00e1dek pivovaru Permon Jan Rada. Permon m\u011bl sv\u00e9 fanou\u0161ky. \u201eJe to dobr\u00e9 pit\u00ed, to mohou potvrdit,\u201c prohl\u00e1sil jeden z osloven\u00fdch piva\u0159\u016f. \u201eS reakcemi lid\u00ed, kte\u0159\u00ed si Permona pochvaluj\u00ed jsme spokojeni, samoz\u0159ejm\u011b i tady plat\u00ed, ka\u017ed\u00fd \u010dlov\u011bk jin\u00e1 chu\u0165,\u201c uvedl Rada. \u201eNa\u0161e pivo je hutn\u00e9, chutn\u00e9 a kvalitn\u00ed. Proto n\u011bkomu p\u0159ipad\u00e1 ve srovn\u00e1n\u00ed s jin\u00fdmi b\u011b\u017en\u00fdmi pivy, kter\u00e9 jsou filtrovan\u00e9, velmi siln\u00e9, jak \u0159\u00edkaj\u00ed \u2013 deset jich jen tak ned\u00e1m,\u201c doplnil. Permon se mohl pochlubit sv\u011btl\u00fdmi, polotmav\u00fdmi a tmav\u00fdmi pivy v rozmez\u00ed od 10 do 13 stup\u0148\u016f. \u201eO sv\u00e1tc\u00edch jsme prod\u00e1vali V\u00e1no\u010dn\u00ed speci\u00e1l 14 a nyn\u00ed Velikono\u010dn\u00ed speci\u00e1l 12. Pivo jsme ale va\u0159ili tak\u00e9 u p\u0159\u00edle\u017eitosti oce\u0148ov\u00e1n\u00ed osobnosti m\u011bsta Sokolova,\u201c p\u0159ipomenul sl\u00e1dek.<br \/>\nSokolov cht\u011bl do V\u00e1noc 2009 otev\u0159\u00edt pivovar v are\u00e1lu kl\u00e1\u0161tera svat\u00e9ho Anton\u00edna Padu\u00e1nsk\u00e9ho na Star\u00e9m n\u00e1m\u011bst\u00ed. \u201eM\u011bsto si u\u017e vybralo stavebn\u00ed firmu, kter\u00e1 M\u011b\u0161\u0165ansk\u00fd pivovar vybuduje. V tendru zv\u00edt\u011bzila s nab\u00eddkou zhruba 12,7 milionu korun,\u201c \u0159ekl starosta Karel Jakobec. Proto\u017ee \u0161lo o historick\u00e9 objekty, nikdo si netroufal odhadnout, jak\u00e9 m\u016f\u017ee na \u0159emesln\u00edky \u010dekat p\u0159ekvapen\u00ed. \u201eNa akci m\u00e1me p\u0159isl\u00edbenou st\u00e1tn\u00ed dotaci, kter\u00e1 pokryje kolem 40 procent n\u00e1klad\u016f,\u201c doplnil starosta. Technologii M\u011b\u0161\u0165ansk\u00e9ho pivovaru a za\u0159\u00edzen\u00ed restaurace by m\u011bl dodat v\u00edt\u011bz v\u00fdb\u011brov\u00e9ho \u0159\u00edzen\u00ed, kter\u00e9 u\u017e m\u011bsto realizovalo. Permon se sice prezentuje jako sokolovsk\u00e9 pivo, ale vyr\u00e1b\u011blo se zat\u00edm v nedalek\u00e9 Lomnici. \u201eTam z\u016fstane zak\u00e1zkov\u00e1 v\u00fdroba speci\u00e1l\u016f, kter\u00e9 si u n\u00e1s objedn\u00e1vaj\u00ed lid\u00e9 nap\u0159\u00edklad na svatby nebo jin\u00e9 akce. V Sokolov\u011b chceme vyr\u00e1b\u011bt na\u0161e hlavn\u00ed piva Permon. Popt\u00e1vku u\u017e toti\u017e nesta\u010d\u00edme z Lomnice uspokojovat,\u201c \u0159ekl S\u00e1s. V Sokolov\u011b by m\u011bl b\u00fdt pivovar s denn\u00edm v\u00fdstavem 650 litr\u016f. Podle S\u00e1se jeho rozjezd z\u00e1le\u017eel u\u017e jen na \u00fa\u0159edn\u00edch povolen\u00edch. \u201eOdhaduji, \u017ee bychom mohli v\u00fdrobu zah\u00e1jit na konci srpna nebo v z\u00e1\u0159\u00ed,\u201c \u0159ekl.<br \/>\nV Sokolov\u011b se bude brzy op\u011bt va\u0159it pivo. Mal\u00fd soukrom\u00fd pivovar Permon, kter\u00fd mok stejnojmenn\u00e9ho n\u00e1zvu vyr\u00e1b\u00ed v nedalek\u00e9 Lomnici, tam hodlal roz\u0161\u00ed\u0159it v\u00fdrobu. P\u016fvodn\u011b m\u011bl st\u00e1t pivovar a dobov\u00e1 restaurace ve sklep\u011b kapuc\u00ednsk\u00e9ho kl\u00e1\u0161tera, ale z pl\u00e1n\u016f kv\u016fli pen\u011bz\u016fm prozat\u00edm se\u0161lo. P\u0159esto\u017ee pivo Permon \u0161lo na odbyt, firma vym\u00fd\u0161lela nov\u00e9 druhy. \u201eNa l\u00e9to zkou\u0161\u00edme va\u0159it pivo s p\u0159\u00edchut\u00ed vi\u0161n\u011b, maliny a mandle,\u201c popsal nov\u00e9 chut\u011b S\u00e1s. Sokolovskou zna\u010dku Permon u\u017e tu sice mnoz\u00ed \u017e\u00edzniv\u00ed n\u011bjak\u00fd \u010das znaj\u00ed, p\u011bniv\u00fd mok se ale dosud vyr\u00e1b\u011bl v minipivovaru v sousedn\u00ed Lomnici. Z\u00e1jem piva\u0159\u016f o nepasterovan\u00e9ho a nefiltrovan\u00e9ho Permona v posledn\u00ed dob\u011b vzrostl. Firm\u011b Syst\u00e9m Net Line, kter\u00e1 varnu provozuje, nezbylo nic jin\u00e9ho, ne\u017e produkci roz\u0161\u00ed\u0159it. Dne 29.9.2009 slavnostn\u011b otev\u0159ela nov\u00fd minipivovar za 4,5 milionu korun v budov\u011b restaurace U kl\u00e1\u0161tera v Sokolov\u011b. Lid\u00e9 mohou p\u0159ij\u00edt na exkurzi nebo skrz nov\u00e9 okno z ulice pozorovat, jak se uvnit\u0159 obl\u00edben\u00e9 pivo va\u0159\u00ed. Uvid\u00ed ob\u0159\u00ed k\u00e1\u010f a varnu, v n\u00ed\u017e sl\u00e1dek vyrob\u00ed 650 litr\u016f b\u011bhem jedn\u00e9 v\u00e1rky. \u201eVa\u0159it se m\u016f\u017ee sedmkr\u00e1t t\u00fddn\u011b, my pl\u00e1nujeme \u010dty\u0159ikr\u00e1t t\u00fddn\u011b. Na\u0161e kapacita se zv\u00fd\u0161\u00ed dvaap\u016flkr\u00e1t. Jsme te\u010f p\u0159ipraveni nav\u00e1zat smluvn\u00ed vztah s restauracemi a prod\u00e1vat ve v\u011bt\u0161\u00edm m\u011b\u0159\u00edtku,\u201c \u0159ekl podnikatel Ladislav S\u00e1s. Otev\u0159en\u00ed nov\u00e9 sokolovsk\u00e9 varny je vlastn\u011b z nouze ctnost. S\u00e1s u\u017e n\u011bkolik let pl\u00e1nuje, \u017ee spolu s m\u011bstem z\u0159\u00edd\u00ed m\u011b\u0161\u0165ansk\u00fd minipivovar se stylovou restaurac\u00ed p\u0159\u00edmo v historick\u00fdch sklep\u00edch kl\u00e1\u0161tera. Jen\u017ee m\u011bstu se zat\u00edm nepoda\u0159ilo z\u00edskat na \u00fapravu prostor dotaci. M\u00edstostarosta Jarom\u00edr Dvo\u0159\u00e1k odhadoval, \u017ee do dvou, t\u0159\u00ed let se to povede. Mezit\u00edm lomnick\u00fd minipivovar, kter\u00fd m\u011bl b\u00fdt pouze jakousi pokusnou laborato\u0159\u00ed, p\u0159estal kapacitn\u011b sta\u010dit z\u00e1jmu pij\u00e1k\u016f. A nic na tom nezm\u011bnilo ani to, \u017ee S\u00e1s za\u010dal va\u0159it Permona i ve sp\u0159\u00e1telen\u00e9m pivovaru ve Zv\u00edkov\u011b. \u201ePou\u017e\u00edv\u00e1me \u017eateck\u00fd chmel, kter\u00fd je dvakr\u00e1t dra\u017e\u0161\u00ed ne\u017e jin\u00fd. Han\u00e1ck\u00fd slad, kter\u00fd je o t\u0159etinu dra\u017e\u0161\u00ed. \u017d\u00e1dn\u00e9 chmelov\u00e9 extrakty ani chemie. D\u016fle\u017eit\u00e9 je otev\u0159en\u00e9 kva\u0161en\u00ed,\u201c vyjmenoval S\u00e1s. Zlatou pe\u010de\u0165 jsme z\u00edskali pivem Permon 13 speci\u00e1l. St\u0159\u00edbrnou pe\u010de\u0165 Permonem 16 speci\u00e1l,\u201c \u0159ekl majitel pivovaru Ladislav S\u00e1s.<br \/>\nNa ja\u0159e 2010 minipivovar nab\u00edzel tak\u00e9 pivo bor\u016fvkov\u00e9.<br \/>\nDne 30.4.2010 uspo\u0159\u00e1dal minipivovar slavnost \u010carod\u011bjnice. Bylo mo\u017en\u00e9 ochutnat deset druh\u016f m\u00edstn\u00edho piva. \u010cepovalo se: sv\u011btl\u00e1 10\u00b0, 12\u00b0, 13\u00b0, 14\u00b0, tmav\u00e1 14\u00b0, 18\u00b0, polotmav\u00e1 12\u00b0, pivo vi\u0161\u0148ov\u00e9, boruvkov\u00e9 a canabis 12\u00b0.<br \/>\nV z\u00e1\u0159\u00ed 2010 minipivovar uva\u0159il mj.i ochucen\u00fd speci\u00e1l Permon Ho\u0159k\u00fd Pomeran\u010d 17 %.<br \/>\nNa konec roku 2010 pivovar uva\u0159il Tmav\u00fd speci\u00e1l 17%.<br \/>\nDne 19.3.2011 se uskute\u010dnilo ve Zv\u00edkovsk\u00e9m Podhrad\u00ed ji\u017e 5. setk\u00e1n\u00ed sl\u00e1dk\u016f mal\u00fdch pivovar\u016f za \u00fa\u010dasti 39 pivovar\u016f. V sout\u011b\u017ei Jarn\u00ed cena sl\u00e1dk\u016f bylo p\u0159ihl\u00e1\u0161eno 157 vzork\u016f. V kategorii \u201especi\u00e1ln\u00ed piva siln\u00e1 (16% +)\u201c obsadilo prvn\u00ed m\u00edsto pivo Permon 17 tm.. V kategorii \u201esv\u011btl\u00fd speci\u00e1l\u201c obsadilo druh\u00e9 m\u00edsto pivo Permon 13.<br \/>\nPrvn\u00ed pivov\u00e1rek o obsahu jen 100 litr\u016f va\u0159il u majitele p.S\u00e1se v p\u0159estav\u011bn\u00e9 gar\u00e1\u017ei. Jak s\u00e1m pravil sl\u00e1dek, to byla jen takov\u00e1 rozjezdovka, aby si v\u0161e vyzkou\u0161eli. Pivo se v Sokolov\u011b chytlo a tak bylo nutno zv\u011bt\u0161it kapacity. Zv\u011bt\u0161en\u00e1 kapacita ji\u017e je v pivovaru na tzv. \u201eStar\u00e9m n\u00e1m\u011bst\u00ed v Sokolov\u011b\u201c a dvoun\u00e1dobov\u00e1 varna m\u00e1 ji\u017e objem cel\u00fdch 650 litr\u016f. Proto\u017ee zv\u011bt\u0161en\u00fd objem p\u0159inesl i v\u011bt\u0161\u00ed mo\u017enosti nab\u00eddky piva do okol\u00ed, tak p\u0159\u00edmo v Sokolov\u011b je jedna hospoda pojmenovan\u00e1 ji\u017e, jako Permon. Pivo se d\u00e1le zav\u00e1\u017e\u00ed do dal\u0161\u00edch restaurac\u00ed a hospod a mimo jin\u00e9 je rovn\u011b\u017e v nab\u00eddce m\u00edstn\u00edho \u0159et\u011bzce \u201eTesco\u201c, kde je vitr\u00edna s pivem v PET lahv\u00edch. Ve\u0161ker\u00fd sortiment je samoz\u0159ejm\u011b sudov\u00fd, PET, mal\u00e9 soudky a posledn\u00ed novinkou jsou potom ji\u017e tak\u00e9 piva 0,33 litru. tato jsou mimo jin\u00e9 dod\u00e1v\u00e1na tak\u00e9 v d\u00e1rkov\u00e9m balen\u00ed. Posledn\u00edm \u010dinem u Permon\u016f, v roce 2011 bylo budov\u00e1n\u00ed ji\u017e t\u0159et\u00edho pivovaru, kter\u00fd le\u017eel od st\u00e1vaj\u00edc\u00edho jen cca 50 m vzdu\u0161nou \u010darou a to v tzv. \u201eKl\u00e1\u0161te\u0159e\u201c a op\u011bt na Star\u00e9m n\u00e1m\u011bst\u00ed. Pivovar ji\u017e opravdu byl velmi \u00factyhodn\u00fdch rozm\u011br\u016f. V b\u0159eznu 2011 byla p\u0159ivezena \u00fapln\u011b nov\u00e1 dvoun\u00e1dobov\u00e1 varna s objemem varny 1500 litr\u016f. S t\u00edm se samoz\u0159ejm\u011b budovalo cel\u00e9 z\u00e1zem\u00ed, jako spilky, n\u00e1dr\u017ee, p\u0159etla\u010dn\u00e9 tanky atd. a v neposledn\u00ed \u0159ad\u011b i lahvovac\u00ed linka na 1500 lahv\u00ed.<br \/>\nSokolovsk\u00fd Permon, kter\u00fd za\u010d\u00ednal jako minipivovar, se chystal u\u017e v l\u00e9t\u011b 2011 v nov\u00fdch prostorech v are\u00e1lu kl\u00e1\u0161tera podstatn\u011b zv\u00fd\u0161it v\u00fdrobu a postavit se ob\u0159\u00edm koncern\u016fm. Firma Syst\u00e9m Net Line, kter\u00e1 pivo Permon va\u0159ila, dokon\u010dovala nov\u00e9 v\u00fdrobn\u00ed prostory v are\u00e1lu sokolovsk\u00e9ho kl\u00e1\u0161tera. \u201eV jedn\u00e9 v\u00e1rce vyrob\u00edme 1500 litr\u016f, k dozr\u00e1v\u00e1n\u00ed budeme m\u00edt 17 tank\u016f. Vyr\u00e1b\u011bt budeme speci\u00e1ln\u00ed piva, s nimi\u017e slav\u00edme v posledn\u00edch letech velk\u00e9 \u00fasp\u011bchy,\u201c uvedl \u0159editel Ladislav S\u00e1s. \u201eM\u00e1me i novou plnic\u00ed linku na t\u0159etinkov\u00e9 lahve, v nich\u017e budeme na\u0161e speci\u00e1ly distribuovat v nefiltrovan\u00e9 i filtrovan\u00e9 podob\u011b,\u201c podotkl Ladislav S\u00e1s, kter\u00fd se netajil t\u00edm, \u017ee by se s lahvov\u00fdmi speci\u00e1ly cht\u011bl prosadit v hotel\u00edch. Slavnostn\u00ed otev\u0159en\u00ed sokolovsk\u00e9ho pivovaru bylo napl\u00e1nov\u00e1no na 18. \u010dervna 2011, kdy se uskute\u010dnily Sokolovsk\u00e9 pivn\u00ed slavnosti.<br \/>\nMinipivovar v b\u0159eznu 2011 nab\u00edzel piva Permon 11\u00b0 sv\u011btl\u00e9, 12\u00b0 polotmav\u00e9, 13\u00b0 sv\u011btl\u00e9, 17\u00b0.<br \/>\nSen mnoha Sokolov\u00e1k\u016f, \u017ee se bude v historick\u00fdch prostor\u00e1ch kapuc\u00ednsk\u00e9ho kl\u00e1\u0161tera va\u0159it a p\u00edt pivo, se splnil nap\u016fl. Dne 17.6.2011 zde byl ofici\u00e1ln\u011b otev\u0159en minipivovar Permon, kter\u00e9mu starosta m\u011bsta ud\u011blil pr\u00e1vo v\u00e1re\u010dn\u00e9. Va\u0159it se m\u011blo v prostor\u00e1ch nad sklepem. Pl\u00e1n vybudovat zde z\u00e1rove\u0148 restauraci se prozat\u00edm odkl\u00e1dal. \u201eKone\u010dn\u011b budeme m\u00edt dost piva,\u201c \u0159ekl majitel pivovaru Ladislav S\u00e1s. Jak up\u0159esnil, m\u011bli v\u017edy piva m\u00e1lo a v\u00fdroba byla omezen\u00e1. Projekt, kter\u00fd se dokon\u010dil, trval pr\u00fd zhruba p\u011bt let. D\u0159\u00edve d\u011blal pivovar jen nefiltrovan\u00e9 pivo klasick\u00e9. Te\u010f m\u011bl modern\u00ed technologii, filtraci, pivo nepasterizovalo. \u201eTak\u017ee bychom do restaurac\u00ed dod\u00e1vali piva filtrovan\u00e1. D\u00e1le m\u00e1me linku na t\u0159etinky, m\u00e1me po\u017eadavky na export i po na\u0161\u00ed republice,\u201c konstatoval S\u00e1s. Permon d\u011blal speci\u00e1ln\u00ed piva t\u011b\u017ek\u00e1 a prod\u00e1vala je v men\u0161\u00edch lahv\u00edch. Na p\u016fllitr by to bylo pr\u00fd hodn\u011b. Obl\u00edben\u00e1 byla tak\u00e9 ochucen\u00e1 piva. \u201eOvocn\u00e1 piva jsou takov\u00e1 zvl\u00e1\u0161tn\u00ed. Uchytila se, proto\u017ee je pij\u00ed man\u017eelky p\u00e1n\u016f, co chod\u00ed na norm\u00e1ln\u00ed piva. Je to sp\u00ed\u0161 d\u00e1msk\u00e9 pivo, ale kdy\u017e si vezmu prodej, tak proti norm\u00e1ln\u00edm piv\u016fm t\u0159etina je ovocn\u00fdch,\u201c dodal S\u00e1s. Pod pivovarem byla klenba dlouh\u00e1 32 metr\u016f a osm metr\u016f \u0161irok\u00e1. Pivo za\u010dal Permon va\u0159it nejd\u0159\u00edve v Lomnici u Sokolova. Odtud se p\u0159est\u011bhoval do v\u011bt\u0161\u00edho provozu v Sokolov\u011b. Dal\u0161\u00ed st\u011bhov\u00e1n\u00ed n\u00e1sledovalo do rekonstruovan\u00fdch prostor kapuc\u00ednsk\u00e9ho kl\u00e1\u0161tera, kde u\u017e hodlal Permon z\u016fstat. Sv\u00fdm voj\u00e1k\u016fm a \u00fa\u0159edn\u00edk\u016fm sem tehdy musela pivo dov\u00e1\u017eet,&#8220; vysv\u011btlil jednatel Permonu Ladislav S\u00e1s. \u201eNap\u0159\u00edklad plavba do Indie v\u0161ak mohla trvat i p\u016fl roku, a v tomto p\u0159\u00edpad\u011b by se klasick\u00e9 pivo zkazilo. Uva\u0159ili proto n\u00e1poj mnohem siln\u011bj\u0161\u00ed a s v\u011bt\u0161\u00ed d\u00e1vkou chmele. Pivo muselo b\u00fdt nav\u00edc dodate\u010dn\u011b zchmeleno i p\u0159ed cestou. Chmel toti\u017e p\u016fsob\u00ed jako kondenza\u010dn\u00ed l\u00e1tka. Tento mok byl tak siln\u00fd, \u017ee jej voj\u00e1ci na druh\u00e9 stran\u011b sv\u011bta m\u011bli p\u0159ed po\u017eit\u00edm z\u0159edit vodou. T\u011bm ale bylo l\u00edto pivo \u0159edit, a tak jim postupem \u010dasu zachutnalo a nau\u010dili se jej p\u00edt takto,&#8220; vypr\u00e1v\u011bl S\u00e1s. \u201eMysl\u00edm si, \u017ee jsme doc\u00edlili chuti, kterou m\u011blo tehdej\u0161\u00ed pivo p\u0159ed dv\u011b st\u011b lety. M\u00e1 v\u00fdraznou chu\u0165 po kvasnic\u00edch a silnou chmelovou v\u016fni, tak to m\u00e1 b\u00fdt. J\u00e1 si ho rozhodn\u011b ne\u0159ed\u00edm,&#8220; sm\u00e1l se S\u00e1s. Tento zlat\u00fd mok v\u0161ak nebyl ur\u010den pro klasick\u00fd \u010desk\u00fd zp\u016fsob konzumace. \u201eNesm\u00edte jich vyp\u00edt deset na posezen\u00ed. Oba nov\u00e9 pivovary se budovaly z d\u016fvodu pot\u0159eby zvy\u0161ov\u00e1n\u00ed kapacity v\u00fdroby. Technologie se nest\u011bhovala, proto\u017ee po dobu stavby nov\u00e9ho pivovaru se v p\u016fvodn\u00edm muselo va\u0159it. K paraleln\u00ed v\u00fdrob\u011b doch\u00e1zelo po dobu n\u00e1b\u011bhu nov\u00e9ho pivovaru, proto\u017ee v\u00fdroba piva je dlouhodob\u011bj\u0161\u00ed proces v \u0159\u00e1du n\u011bkolika m\u011bs\u00edc\u016f. Aby bylo pivo neust\u00e1le k dispozici tak doch\u00e1zelo k \u010dasov\u00e9mu p\u0159ekryt\u00ed dvou v\u00fdrob. V sou\u010dasn\u00e9 dob\u011b je funk\u010dn\u00ed pouze nejnov\u011bj\u0161\u00ed pivovar Permon III. Technologie p\u0159edchoz\u00edch pivovar\u016f je prod\u00e1na a provozovny jsou uzav\u0159eny. Provozn\u00ed historie: Permon I 2006-2009 Lomnice, Permon II 2009-2011 Sokolov, Permon III od r.2011 Sokolov.<br \/>\nNa podzim roku 2012 pivovar nab\u00edzel tak\u00e9 speci\u00e1l P.A.P.A. &#8211; svrchn\u011b kva\u0161en\u00e9 pivo.<br \/>\nNa konec roku 2012 pivovar p\u0159ipravil pivo Permon V\u00e1no\u010dn\u00ed Speci\u00e1l Ale Pale (svrchn\u011b kva\u0161en\u00e9 pivo inspirov\u00e1no americk\u00fdmi pivovary. P\u0159i v\u00fdrob\u011b pou\u017eili americk\u00e9 chmely a slad p\u0159\u00edmo ur\u010den\u00fd k v\u00fdrob\u011b piv typu pale ale.
