Kop\u0159ivov\u00fd n\u00e1dech dodal pivu v\u00fdta\u017eek z kop\u0159iv.<\/li>\n<li>V prosinci 2025 na \u010depu <strong>Adventn\u00ed vanilkov\u00fd le\u017e\u00e1k 11<\/strong>. Pivo dozr\u00e1valo na dubov\u00fdch hoblin\u00e1ch a vanilkov\u00fdch lusc\u00edch.<\/li>\n<li>V listopadu 2025 v nab\u00eddce <strong>Svatomartinsk\u00fd speci\u00e1l<\/strong>. Jednalo se o polotmav\u00fd le\u017e\u00e1k, k jeho\u017e sladov\u00e9mu syp\u00e1n\u00ed p\u0159idali 20 % \u017eitn\u00e9ho sladu a nachmelili jej kombinac\u00ed \u010desk\u00fdch chmel\u016f \u017dateck\u00fd poloran\u00fd \u010derve\u0148\u00e1k a Sl\u00e1dek. \u017ditn\u00fd slad dod\u00e1v\u00e1 pivu t\u00f3ny zemitosti, ko\u0159enitosti a vytv\u00e1\u0159\u00ed hust\u0161\u00ed, t\u011b\u017e\u0161\u00ed t\u011blo, na jazyku p\u0159\u00edjemn\u011b kr\u00e9movit\u011bj\u0161\u00ed. Chmelov\u00e1 ho\u0159kost byla ni\u017e\u0161\u00ed, av\u0161ak st\u00e1le znateln\u00e1.<\/li>\n<li>V b\u0159eznu 2025 dv\u011b novinky &#8211; <strong>New Zealand IPA 14<\/strong>. V\u00fdrazn\u011bj\u0161\u00ed a drsn\u011bj\u0161\u00ed ho\u0159kost d\u00edky vy\u0161\u0161\u00edmu prokva\u0161en\u00ed s typick\u00fdm citrusovo-prysky\u0159icov\u00fdm aroma po novoz\u00e9landsk\u00fdch chmelech Nectaron a Superdelic. <strong>Brut IPA 12<\/strong>. Pivo va\u0159en\u00e9 s tak\u0159ka nulov\u00fdm zbytkov\u00fdm cukrem, proto je extr\u00e9mn\u011b such\u00e9 se slabou\u010dk\u00fdm t\u011blem. D\u00edky tomu m\u00e1 vy\u0161\u0161\u00ed perlivost a chmelov\u00e9 t\u00f3ny, co dod\u00e1vaj\u00ed pivu v\u016fni b\u00edl\u00fdch hrozn\u016f, v\u00ednu, ovoci a citrus\u016f.<\/li>\n<li>V \u0159\u00edjnu 2024 v nab\u00eddce <strong>Svatomartinsk\u00e1 \u017eitn\u00e1 13<\/strong>. Jednalo se o polotmav\u00fd le\u017e\u00e1k k jeho\u017e sladov\u00e9mu syp\u00e1n\u00ed p\u0159idali 20 % \u017eitn\u00e9ho sladu. D\u00edky tomu m\u011blo pivo jedine\u010dn\u00fd chu\u0165ov\u00fd charakter, kter\u00fd zvolili k tomu, aby se pivo vhodn\u011b sp\u00e1rovalo se svatomartinskou husou. \u017ditn\u00fd slad dod\u00e1v\u00e1 pivu t\u00f3ny zemitosti, ko\u0159enitosti a vytv\u00e1\u0159\u00ed hust\u0161\u00ed, t\u011b\u017e\u0161\u00ed t\u011blo. To tak\u00e9 vytv\u00e1\u0159\u00ed kr\u00e9movit\u011bj\u0161\u00ed a\u017e hutn\u011bj\u0161\u00ed pocit na jazyku. Kombinace p\u011bti druh\u016f slad\u016f vytv\u00e1\u0159\u00ed jak polotmavou barvu, tak p\u0159\u00edjemn\u00fd sladov\u00fd charakter. Chmelov\u00e1 ho\u0159kost je trochu ni\u017e\u0161\u00ed, av\u0161ak st\u00e1le zaznamenateln\u00e1. Ke chmelen\u00ed zvolili kombinaci \u017dateck\u00e9ho poloran\u00e9ho \u010derve\u0148\u00e1ku a Sl\u00e1dka.<\/li>\n<li>Na po\u010d\u00e1tku \u00fanora 2024 dva speci\u00e1ly &#8211; \u0158ezn\u00edkova 14\u00b0. Jednalo se o pivo uva\u0159en\u00e9 k masopustn\u00ed zabija\u010dce. Toto sv\u011btl\u00e9 pivo, spodn\u011b kva\u0161en\u00e9 vyniklo jak svoj\u00ed s\u00edlou 5,8% alkoholu, tak i chut\u00ed, kterou zde vytv\u00e1\u0159ely chmely Agnus a Blues. 14\u00b0 White IPA. Ji\u017e zn\u00e1m\u00fd speci\u00e1l, kter\u00fd byl vyroben pomoc\u00ed p\u0161eni\u010dn\u00e9ho sladu a byl uva\u0159en pomoc\u00ed svrchn\u00edho kva\u0161en\u00ed. Vyniklo svoj\u00ed pomeran\u010dovou chut\u00ed, kter\u00e1 byla z\u00edsk\u00e1na p\u0159id\u00e1n\u00edm pomeran\u010dov\u00e9 k\u016fry.<\/li>\n<li>V listopadu 2023 dv\u011b novinky: 17\u00b0 Abbey (svrchn\u011b kva\u0161en\u00e9, polotmav\u00e9 a zanech\u00e1v\u00e1 v chuti h\u0159ejiv\u00fd vjem alkoholu. Ve v\u016fni jsou c\u00edtit ovocn\u00e9 a sladov\u00e9 t\u00f3ny. Alk.: 7,5 % IBU 26 EBC 49) a 12\u00b0 Vanilkov\u00fd le\u017e\u00e1k (polotmav\u00fd le\u017e\u00e1k, v n\u011bm\u017e dominuj\u00ed karamelov\u00e9 t\u00f3ny. Toto pivo zraje spolu s vanilkov\u00fdmi lusky. Alk.: 4,8 % IBU 30 EBC 40).<\/li>\n<li>V \u0159\u00edjnu 2023 na \u010depu 14\u00b0 West Coast IPA. Jednalo se o velmi ho\u0159k\u00e9 pivo, kter\u00e9 se chmel\u00ed hlavn\u011b na varn\u011b, ale i d\u00edky studen\u00e9mu chmelen\u00ed, d\u00edky kter\u00e9mu \u0161lo c\u00edtit velk\u00e9 chmelov\u00e9 aroma. Dal\u0161\u00ed charakteristikou tohoto piva bylo vy\u0161\u0161\u00ed prokva\u0161en\u00ed, kter\u00e9 vytvo\u0159ilo tzv. such\u00e9 pivo a zintenzivn\u00ed ho\u0159kost. Pou\u017eit\u00e9 chmely: Chinook, Amarillo, Centennial a Simcoe. EPM 14,3% ALC 6,0% IBU 60 EBC 15.<\/li>\n<li>O Velikonoc\u00edch 2023 v nab\u00eddce <strong>12\u00b0 Kop\u0159ivov\u00fd Benedict<\/strong>. Jednalo se o sv\u011btl\u00fd le\u017e\u00e1k ve kter\u00e9m byly vymacerov\u00e1ny kop\u0159ivy a ty dodaly pivu \u0161tiplavost a v\u011bt\u0161\u00ed charakter ho\u0159kosti. Toto pivo vyrobili z p\u0161eni\u010dn\u00e9ho sladu s p\u0159idanou pomeran\u010dovou k\u016frou. Vzniklo tak pivo s v\u00fdrazn\u00fdm pomeran\u010dov\u00fdm aroma, t\u00f3ny borovice a citrus\u016f s vy\u0161\u0161\u00ed ho\u0159kost\u00ed a plnost\u00ed (EPM 14,8 %; alk.: 6,0 %; ho\u0159kost IBU 55; barva EBC 18,5).<\/li>\n<li>V b\u0159eznu 2021 v prodeji Velikono\u010dn\u00ed kop\u0159ivov\u00e9 pivo 12. V\u00e1clava v roce 2020 nava\u0159ili pivo z \u010derstv\u00e9ho, zelen\u00e9ho chmele. Tento chmel letos nasb\u00edrali s pomoc\u00ed mnich\u016f na jejich chmelnici v Libo\u010danech na \u017datecku a na v\u00e1rku pou\u017eili 15 kg hl\u00e1vek \u010derve\u0148\u00e1ku. Rozhodli se, \u017ee toto speci\u00e1ln\u00ed pivo premi\u00e9rov\u011b v historii pivovaru sto\u010d\u00ed do plechovek.<\/li>\n<li>Od 8.4.2019 v prodeji Velikono\u010dn\u00ed speci\u00e1l, co\u017e jest polotmav\u00fd Weizenbock 16 %. P\u0159\u00edjemn\u00e9 ovocn\u00e9 a h\u0159eb\u00ed\u010dkov\u00e9 aroma dopln\u011bn\u00e9 o karamelov\u00e9 sladov\u00e9 t\u00f3ny.<\/li>\n<li>Od 4.3.2019 na \u010depu Nakou\u0159en\u00fd Benedict. Jednalo se o polotmavou 13%, spodn\u011b kva\u0161enou. S kamar\u00e1dem v roce 1997 v centru Prahy vybudovali Pivovarsk\u00fd d\u016fm. \u201eA jako takovou poh\u00e1dku na konec kari\u00e9ry jsme si vysnili pivovar na B\u0159evnov\u011b. U\u017e na konci 10. stolet\u00ed tam toti\u017e byl prvn\u00ed historicky dolo\u017een\u00fd pivovar v \u010cech\u00e1ch,&#8220; vypr\u00e1v\u011bl Petr Jan\u00edk.<br \/>\nS\u00e1m pr\u00fd v\u0161ak nev\u011b\u0159il, \u017ee se mu to jednou poda\u0159\u00ed. \u201eZase a\u017e tak moc jsme odhodlan\u00ed nebyli. Ale pak jsme se p\u0159es jednoho spolu\u017e\u00e1ka dostali k p\u0159evoru b\u0159evnovsk\u00e9ho kl\u00e1\u0161tera, kter\u00fd \u0159\u00edkal, \u017ee galeri\u00ed a n\u00e1v\u0161t\u011bvnick\u00fdch m\u00edstnost\u00ed u\u017e m\u00e1 dost a pivovar by se mu l\u00edbil, proto\u017ee tady historicky byl. M\u011bli jsme z toho trochu strach. Ale kdy\u017e jsme vid\u011bli tyto prostory, hned n\u00e1m do\u0161lo, \u017ee je to \u0161ance, jak\u00e1 u\u017e se v \u017eivot\u011b nenaskytne,&#8220; popisoval.<br \/>\nV roce 2011 tak zprovoznil a od n\u00e1sleduj\u00edc\u00edho roku va\u0159\u00ed pivo v B\u0159evnovsk\u00e9m kl\u00e1\u0161te\u0159e. Nav\u00e1zal tu na skute\u010dn\u011b po\u017eehnanou historii. Kl\u00e1\u0161ter byl toti\u017e zalo\u017een druh\u00fdm pra\u017esk\u00fdm biskupem sv. Vojt\u011bchem a kn\u00ed\u017eetem Boleslavem II. u\u017e v roce 993 a n\u011bkdy tehdy tady za\u010dal fungovat i pivovar. Pr\u00e1v\u011b odsud poch\u00e1z\u00ed v\u016fbec prvn\u00ed p\u00edsemn\u00e1 zm\u00ednka o va\u0159en\u00ed piva na \u00fazem\u00ed dne\u0161n\u00ed \u010cesk\u00e9 republiky.<br \/>\nPivovar se od t\u00e9 doby notn\u011b prom\u011bnil. Za husitsk\u00fdch v\u00e1lek byl cel\u00fd kl\u00e1\u0161ter t\u00e9m\u011b\u0159 zni\u010den a v\u011bt\u0161ina \u0159eholn\u00edk\u016f se spolu s opatem uch\u00fdlila do kl\u00e1\u0161tera v Broumov\u011b. K obnov\u011b do\u0161lo a\u017e na sklonku 17. stolet\u00ed. Na starosti ji m\u011bli nejvyhl\u00e1\u0161en\u011bj\u0161\u00ed barokn\u00ed architekti: Kry\u0161tof a Kili\u00e1n Ign\u00e1c Dientzenhoferov\u00e9. Kl\u00e1\u0161tern\u00ed pivovar podle kroniky postavili v roce 1720. Za v\u00e1lek o rakousk\u00e9 d\u011bdictv\u00ed byl pivovar roku 1742 siln\u011b po\u0161kozen. Opravu pak provedl op\u011bt Kili\u00e1n Ign\u00e1c Dientzenhofer. Od t\u00e9 doby byl pivovar n\u011bkolikr\u00e1t opravov\u00e1n. K pl\u00e1novan\u00e9 dostavb\u011b sklepa s lednic\u00ed v\u0161ak u\u017e nedo\u0161lo. Nedostate\u010dn\u00e1 kapacita sklepa, nezbytn\u00e1 pro del\u0161\u00ed zr\u00e1n\u00ed st\u00e1le obl\u00edben\u011bj\u0161\u00edch le\u017e\u00e1k\u016f, byla jedn\u00edm z d\u016fvod\u016f uzav\u0159en\u00ed pivovaru, v roce 1889 ho zru\u0161ili. \u201eNejen to. P\u016fvodn\u00ed pivovar od Dientzenhofera bohu\u017eel i zbo\u0159ili. Musel ustoupit p\u0159i roz\u0161i\u0159ov\u00e1n\u00ed v\u00fdpadov\u00e9 silnice na Karlovy Vary, dne\u0161n\u00ed Pato\u010dkovy ulice,&#8220; \u0159ekl Jan\u00edk.<br \/>\nAni to ho neodradilo. V prostoru b\u00fdval\u00fdch st\u00e1j\u00ed z\u0159\u00eddil v u\u017e zm\u00edn\u011bn\u00e9m roce 2011 pivovar, kter\u00fd na ten p\u016fvodn\u00ed navazuje. Zvl\u00e1dnou tu vyrobit a\u017e 3000 hl piva ro\u010dn\u011b. \u201eLoni jsme uva\u0159ili 2000 hektolitr\u016f a letos se, mysl\u00edm, p\u0159ibl\u00ed\u017e\u00edme k na\u0161\u00ed kapacit\u011b. Je to v\u00edc, ne\u017e jsme pl\u00e1novali. O pivo je dobr\u00fd z\u00e1jem,&#8220; t\u011b\u0161ilo ho.<br \/>\nRestaurac\u00edm sice nem\u016f\u017ee nab\u00eddnout takov\u00fd servis jako velk\u00e9 pivovary, na druhou stranu ale, d\u00edky men\u0161\u00ed produkci mohou vyrobit v\u00edce speci\u00e1l\u016f, p\u0161eni\u010dn\u00e1 \u010di sez\u00f3nn\u00ed piva, nap\u0159\u00edklad na V\u00e1noce. \u201eStabiln\u011b vyr\u00e1b\u00edme p\u011bt druh\u016f, vedle klasik sv\u011btl\u00fd a tmav\u00fd le\u017e\u00e1k je to dnes popul\u00e1rn\u00ed patn\u00e1ctka IPA nebo dvac\u00edtka Imperial Lager. M\u00e1 skoro dev\u011bt procent alkoholu a je docela nebezpe\u010dn\u011b, proto\u017ee se dob\u0159e pije, tak\u017ee kdy\u017e lidi neodhadnou jeho s\u00edlu a vypij\u00ed t\u0159eba t\u0159i p\u016fllitry na posezen\u00ed, docela j\u00ed chytnou,&#8220; usm\u00edval se.<br \/>\nS jejich pivem se lze setkat asi ve dvac\u00edtce restaurac\u00ed, p\u0159ev\u00e1\u017en\u011b v Praze. \u201eD\u011bl\u00e1me tady i exkurze, ale je nutno se objednat, proto\u017ee st\u00e1l\u00e9ho zam\u011bstnance na to nem\u00e1me,&#8220; popisoval a odhaloval tak z\u00e1rove\u0148 velk\u00fd rozd\u00edl, mezi tradi\u010dn\u00edmi velk\u00fdmi a minipivovary. Prvn\u00edm z nich byl Russian Imperial Stout dozr\u00e1van\u00fd v dubov\u00e9m sudu od whiskey. Ten p\u0159idal pivu naku\u0159ovan\u00e9 a\u017e ra\u0161elinov\u00e9 t\u00f3ny. Druh\u00fdm speci\u00e1lem k zakoupen\u00ed bylo P\u0161eni\u010dn\u00e9 pivo bavorsk\u00e9ho typu, vyzna\u010duj\u00edc\u00ed se siln\u00fdm \u0159\u00edzem a typickou slab\u011b ban\u00e1novou a\u017e h\u0159eb\u00ed\u010dkovou v\u016fni.<br \/>\nP\u0159i p\u0159\u00edle\u017eitosti Dne \u010desk\u00e9ho piva 27. 9. a k oslav\u011b sv\u00e1tku sv. V\u00e1clava uva\u0159ili speci\u00e1ln\u00ed v\u00e1rku sv\u011btl\u00e9 dvan\u00e1ctky. Pro jej\u00ed v\u00fdrobu pou\u017eili klasickou technologii rmutov\u00e1n\u00ed na 3 rmuty a chmelen\u00ed hl\u00e1vkov\u00fdm chmelem. Specialitou tohoto piva bylo v\u0161ak pou\u017eit\u00fd slad. Ten byl vyroben z odr\u016fdy jarn\u00edho je\u010dmene Proskowetz Han\u00e1ck\u00fd Pedigree. Tato slavn\u00e1 odr\u016fda vy\u0161lecht\u011bn\u00e1 koncem 19. stolet\u00ed Emanuelem Proskowetzem mlad\u0161\u00edm, se stala z\u00e1kladem \u0159ady nov\u00fdch odr\u016fd sladovnick\u00e9ho u n\u00e1s, ale i v Evrop\u011b, Americe a Asii. Han\u00e1ck\u00fd Pedigree se sice dnes ji\u017e b\u011b\u017en\u011b nep\u011bstuje, ale d\u00edky p\u0159\u00e1telsk\u00fdm vztah\u016fm s p\u011bstiteli a slada\u0159i se poda\u0159ilo ho na jednu v\u00e1rku zajistit. Pivo bude sto\u010deno pouze do sud\u016f a dod\u00e1no v pr\u016fb\u011bhu posledn\u00edho z\u00e1\u0159ijov\u00e9ho t\u00fddne do n\u011bkolika restaurac\u00ed, kde bylo dne 27.9. nara\u017eeno.<br \/>\nSpecialitou, kterou m\u011bli na \u010depu b\u011bhem posv\u00edcen\u00ed, byl Whisky Stout. (21 %, pivo dozr\u00e1valo v dubov\u00e9m sudu pou\u017e\u00edvan\u00e9m pro v\u00fdrobu skotsk\u00e9 whisky, t\u00edm p\u0159ibyly kou\u0159ov\u00e9 a ra\u0161elinov\u00e9 t\u00f3ny).<br \/>\nV listopadu 2014 uvedli do prodeje dv\u011b novinky: \u010derstv\u011b sto\u010den\u00fd lahvov\u00fd Porter Barrel Aged (EPM 18,5 %, alk.: 7,5 %, pivo 4 m\u011bs\u00edce dozr\u00e1valo v dubov\u00e9m sudu p\u016fvodn\u011b pou\u017e\u00edvan\u00e9m pro v\u00fdrobu skotsk\u00e9 whisky) a tak\u00e9 speci\u00e1l na chladn\u00e9 a tmav\u00e9 zimn\u00ed ve\u010dery &#8211; B\u0159evnovsk\u00e9 Aabbey (EPM 17,5 %, alk. 7,1 %, polotmav\u00e9 trapistick\u00e9 svrchn\u011b kva\u0161en\u00e9, pivo). To bylo k dost\u00e1n\u00ed tak\u00e9 v sudech.<br \/>\nV pivovaru byl dne 2.3. 2015 byl zah\u00e1jen prodej Porteru.
