Vlastn\u00ed pivo by m\u011blo b\u00fdt k m\u00e1n\u00ed za\u010d\u00e1tkem \u00fanora 2010. O rozjezd pivov\u00e1rku i zau\u010den\u00ed provozovatele Lubo\u0161e N\u011bmce k sl\u00e1dkov\u00e1n\u00ed, se staral Josef Kr\u00fdsl. Varna z nerezu a le\u0161t\u011bn\u00e9 mosazi s objemem v\u00e1rky odhadem cca 5 -7 hl. je situovan\u00e1 za prosklenou st\u011bnou nov\u00e9 men\u0161\u00ed restaurace &#8211; pivn\u00edho baru a je d\u00edlem m\u00edstn\u00ed stroj\u00edrny Hradeck\u00fd.<br \/>\nNejhez\u010d\u00ed pivn\u00ed t\u00e1cek roku 2009 s heslem \u201eDobr\u00e9 pivo nenahrad\u00ed\u0161\u201c pat\u0159ila Rodinn\u00e9mu minipivovaru Pacov. Rozhodli o tom sb\u011bratel\u00e9 pivn\u00edch etiket a pivovarsk\u00fdch suven\u00fdr\u016f. Na 36. setk\u00e1n\u00ed sb\u011bratel\u016f v T\u00e1bo\u0159e \u0159ekl tajemn\u00edk sdru\u017een\u00ed klub\u016f sb\u011bratel\u016f pivovarsk\u00fdch suven\u00fdr\u016f Franti\u0161ek Pinkava. Sb\u011bratel\u00e9 vyb\u00edrali z t\u00e9m\u011b\u0159 600 pivn\u00edch etiket, 66 t\u00e1ck\u016f a 84 pivn\u00edch korunek, kter\u00e9 se objevily v roce 2009.<br \/>\nPacov\u0161t\u00ed milovn\u00edci zlatav\u00e9ho moku u\u017e nebyli na ja\u0159e 2010 odk\u00e1zan\u00ed v\u00fdhradn\u011b na jeho dovoz. Tamn\u00ed far\u00e1\u0159 Tom\u00e1\u0161 Hajda slavnostn\u011b vysv\u011btil nale\u0161t\u011bn\u00e9 tanky minipivovaru. Za jeho zrodem st\u00e1l pocit znechucen\u00ed a na\u0161tv\u00e1n\u00ed. \u201eU\u017e se mi necht\u011blo p\u00edt ve\u0161ker\u00e1 ta europiva i jim podobn\u00e9 patoky. Tak jsem si zkusil n\u011bco m\u00e1lo uva\u0159it doma. Kamar\u00e1d\u016fm to zachutnalo, a j\u00e1 jsem si \u0159ekl, pro\u010d to nezkusit s minipivovarem,\u201c vysv\u011btlil v b\u0159eznu 2010 Lubo\u0161 N\u011bmec, sl\u00e1dek a majitel minipivovaru v jedn\u00e9 osob\u011b. S \u201evychyt\u00e1v\u00e1n\u00edm\u201c receptury mu nepom\u00e1hal nikdo men\u0161\u00ed ne\u017e Josef Kr\u00fdsl, na slovo vzat\u00fd odborn\u00edk, jeho\u017e jm\u00e9no bylo dlouh\u00e9 roky synonymem pro plze\u0148sk\u00fd Prazdroj. Byl to on, kdo ochutnal pacovskou prvn\u00ed v\u00e1rku, z\u00e1rove\u0148 dr\u017eel dozor nad kvalitou. \u201eHlavn\u00ed z\u00e1sluhu m\u00e1 ale n\u011bkdo jin\u00fd,\u201c pravil skromn\u011b Kr\u00fdsl. Host\u00e9 slavnostn\u00edho okam\u017eiku si ka\u017edop\u00e1dn\u011b nov\u00e1 pacovsk\u00e1 piva pochvalovali. \u201e\u017d\u00e1dn\u00fd velk\u00fd piva\u0159 rozhodn\u011b nejsem, to od Lubo\u0161e N\u011bmce mi ale opravdu chutn\u00e1,\u201c vysekl sl\u00e1dkovi poklonu pacovsk\u00fd starosta Luk\u00e1\u0161 Vl\u010dek. \u201eOsobn\u011b si d\u00e1m pivko hlavn\u011b na vytr\u00e1ven\u00ed po ob\u011bd\u011b. Skv\u011bl\u00e9 je ale u\u017e jenom to, \u017ee tady po tolika letech znovu m\u00e1me vlastn\u00ed pivovar,\u201c p\u0159idal patriotsk\u00fd pohled na v\u011bc pacovsk\u00fd mal\u00ed\u0159 Ji\u0159\u00ed Duffek. V b\u00fdval\u00e9 bal\u00edrn\u011b o\u0159\u00ed\u0161k\u016f uprost\u0159ed m\u011bsta, kde dnes krom\u011b minipivovaru s\u00eddl\u00ed i restaurace, pro za\u010d\u00e1tek p\u0159ipravuj\u00ed \u010dty\u0159i druhy piva. Krom\u011b bor\u016fvkov\u00e9ho a z\u00e1zvorov\u00e9ho, kter\u00e1 se u \u0161tamgast\u016f mimochodem t\u011b\u0161ila v\u00fdrazn\u011b oblib\u011b, byla k m\u00e1n\u00ed i \u201eklasika\u201c, tedy pivo sv\u011btl\u00e9 a tmav\u00e9. A pr\u00e1v\u011b jim vetkli jm\u00e9no samotn\u00ed piva\u0159i. P\u0159\u00edle\u017eitost vyj\u00e1d\u0159it sv\u016fj n\u00e1zor dostali prost\u0159ednictv\u00edm ankety. Ze v\u0161emo\u017en\u00fdch n\u00e1zv\u016f, kter\u00e9 z\u00e1jemci vkl\u00e1dali na internetov\u00e9 str\u00e1nky \u010di vypl\u0148ovali do let\u00e1\u010dk\u016f p\u0159\u00edmo v restauraci, se sl\u00e1dkovi jako n\u00e1zev pro tmav\u00e9 pivo nejv\u00edce zal\u00edbil Pacovsk\u00fd \u010dern\u00fd Rab\u00edn. Jeho sv\u011btlej\u0161\u00ed obdoba nesla ozna\u010den\u00ed Pacovsk\u00fd Golem. \u201eNedaleko odsud st\u00e1vala synagoga. Rab\u00edn se tedy p\u0159\u00edmo nab\u00edzel. Pro\u010d si n\u011bco p\u016fj\u010dovat odjinud, kdy\u017e sta\u010d\u00ed s\u00e1hnout do minulosti,\u201c vysv\u011btlil Vlastimil Simota star\u0161\u00ed, autor n\u00e1padu Sl\u00e1dek m\u011bl jasno v tom, kam rodinn\u00fd podnik nasm\u011brovat. \u201eV prvn\u00ed \u0159ad\u011b chceme va\u0159it dobr\u00e9 \u010desk\u00e9 pivo, a to pomoc\u00ed p\u016fvodn\u00edho poctiv\u00e9ho zp\u016fsobu. V\u00fdhledov\u011b bychom r\u00e1di z\u00e1sobovali pivem t\u0159eba je\u0161t\u011b jednu, dv\u011b pacovsk\u00e9 hospody,\u201c pronesl N\u011bmec. Lid\u00e9 u\u017e mohli ochutnat t\u0159eba bor\u016fvkov\u00e9, z\u00e1zvorov\u00e9 a citrusov\u00e9 pivo. Jak dodal, ovocn\u00e1 piva z\u00e1kazn\u00edk\u016fm chutnaj\u00ed. \u201eLid\u00e9 je cht\u011bj\u00ed vyzkou\u0161et. Budeme va\u0159it nap\u0159\u00edklad mandarinkov\u00e9 pivo a poprv\u00e9 uva\u0159\u00edme tak\u00e9 p\u0161eni\u010dn\u00e9 pivo. Od z\u00e1kazn\u00edk\u016f m\u00e1me plno v\u00fdborn\u00fdch ohlas\u016f. Pivo jim chutn\u00e1. Nest\u00edh\u00e1me pomalu ani va\u0159it,\u201c komentovala v \u010dervnu 2011 majitelka Vla\u010fka N\u011bmcov\u00e1. N\u011bmcovi ze za\u010d\u00e1tku zkou\u0161eli vyrobit pivo jak z klasick\u00fdch surovin, tak ze sladov\u00e9ho koncentr\u00e1tu nebo mladinov\u00e9ho koncentr\u00e1tu. \u201eDo\u0161lo i na n\u011bkolik speci\u00e1ln\u00edch piv, nap\u0159\u00edklad medov\u00e9, kter\u00e9 m\u011blo ohromn\u00fd \u00fasp\u011bch. V rodinn\u00e9m podniku ro\u010dn\u011b vyrob\u00ed zhruba okolo 300 hl piva. Krom\u011b klasick\u00e9ho sv\u011btl\u00e9ho a tmav\u00e9ho le\u017e\u00e1ku mohou vyznava\u010di zlatav\u00e9ho moku ochutnat i ovocn\u00e1 piva, stejn\u011b jako v \u010dervnu 2012 prezident \u010cR V\u00e1clav Klaus. Ten si pochutn\u00e1val na bor\u016fvkov\u00e9m pivu.<br \/>\nPrvn\u00ed my\u0161lenku vlastn\u00edho minipivovaru nyn\u00ed dev\u011btat\u0159icetilet\u00e9mu Lubo\u0161i N\u011bmcovi vnukl jeho kamar\u00e1d Pavel Van\u011bk u piva. \u201eJen tak jsme sed\u011bli a pov\u00eddali si. Najednou z ni\u010deho nic padla v\u011bta, \u017ee bychom si n\u011bkdy mohli uva\u0159it svoje vlastn\u00ed pivo. Netrvalo to nijak dlouho, a u\u017e jsem doma v hrnci na plotn\u011b va\u0159e\u010dkou m\u00edchal pivo,&#8220; zavzpom\u00ednal na prvn\u00ed za\u010d\u00e1tky sv\u00e9 pivovarnick\u00e9 kari\u00e9ry Lubo\u0161 N\u011bmec. Tehdy zlatav\u00fd mok uva\u0159il bez jak\u00fdchkoliv znalost\u00ed a\u2007zku\u0161enost\u00ed. V prvn\u00ed chv\u00edli nap\u0159\u00edklad v\u016fbec netu\u0161il, \u017ee se pivo mus\u00ed nechat zr\u00e1t. \u201eMysl\u00edm si, \u017ee to st\u00e1le nev\u00ed hodn\u011b lid\u00ed. Tak\u00e9 jsem se domn\u00edval, \u017ee se pivo va\u0159\u00ed jenom z chmelu, co\u017e je chyba. Va\u0159\u00ed se z je\u010dn\u00e9ho sladu,&#8220; upozornil otec dvou syn\u016f a pokra\u010doval: \u201eKamar\u00e1d m\u011bl svoji pr\u00e1ci, a j\u00e1 jsem se proto va\u0159en\u00ed piva v\u011bnoval \u010d\u00edm d\u00e1l t\u00edm v\u00edce. Ob\u010das jsme dali ochutnat kamar\u00e1d\u016fm, kte\u0159\u00ed pivo chv\u00e1lili \u010dast\u011bji a \u010dast\u011bji,&#8220; nechal se sly\u0161et N\u011bmec, kter\u00fd vzhledem ke sv\u00e9mu zdravotn\u00edmu stavu u\u017e nyn\u00ed d\u011bl\u00e1 jenom dohled nad minipivovarem. \u201eP\u0159ed rokem jsem prod\u011blal mozkovou mrtvici. V\u0161echno zastane m\u016fj star\u0161\u00ed syn, j\u00e1 u\u017e kv\u016fli fyzick\u00e9mu stavu bohu\u017eel nemohu,&#8220; pokr\u010dil rameny b\u00fdval\u00fd \u00fasp\u011b\u0161n\u00fd sportovec. Doma s man\u017eelkou zkou\u0161eli vyr\u00e1b\u011bt pivo jak z klasick\u00fdch surovin, tak ze sladov\u00e9ho nebo mladinov\u00e9ho koncentr\u00e1tu. \u0158ada p\u0159i\u0161la i na n\u011bkolik speci\u00e1ln\u00edch piv, t\u0159eba na medov\u00e9, kter\u00e9 m\u011blo ohromn\u00fd \u00fasp\u011bch. To u\u017e byl jen kr\u016f\u010dek od \u201elaick\u00e9ho&#8220; va\u0159en\u00ed piva pro vlastn\u00ed pot\u0159ebu k n\u011b\u010demu profesion\u00e1ln\u011bj\u0161\u00edmu. \u201eKamar\u00e1d je nav\u00edc spolumajitelem firmy, kter\u00e1 vyr\u00e1b\u00ed pal\u00edrny. Proto mi \u0159ekl: J\u00e1 m\u00e1m pal\u00edrnu, ty bude\u0161 m\u00edt pivovar. Tehdy jsme za\u010dali jezdit po republice, po minipivovarech a sh\u00e1n\u011bli jsme informace a n\u011bkoho, kdo by n\u00e1m poradil, jak za\u010d\u00edt. Jezdili jsme s man\u017eelkami, d\u011btmi. Tam jsme v\u011bt\u0161inou \u0159\u00eddili my, nazp\u00e1tek u\u017e man\u017eelky,&#8220; usm\u00e1l se p\u0159i vzpom\u00ednk\u00e1ch na n\u00e1v\u0161t\u011bvy n\u011bkolika minipivovar\u016f v \u010cech\u00e1ch i na Morav\u011b Lubo\u0161 N\u011bmec. Zlomov\u00fd okam\u017eik p\u0159i\u0161el v\u2007b\u0159eznu 2009. \u201eTehdy jsme odjeli na sedmidenn\u00ed dovolenou do It\u00e1lie. Cel\u00fd t\u00fdden jsem tam p\u0159em\u00fd\u0161lel, proto\u017ee u\u017e jsem m\u011bl cenov\u00e9 nab\u00eddky na technologie a mnoho dal\u0161\u00edch v\u011bc\u00ed, jestli to m\u00e1 smysl. Tehdy jsem se v p\u00e1tek vzbudil, \u0159ekl jsem, \u017ee to m\u00e1 smysl. Ihned jsme si zabalili a odjeli o den d\u0159\u00edve z dovolen\u00e9. V sobotu u\u017e jsme bourali p\u0159\u00ed\u010dky a jeli na pln\u00fd plyn,&#8220; popisoval s nad\u0161en\u00edm v hlase N\u011bmec prvn\u00ed okam\u017eiky zrodu minipivovaru v\u2007budov\u011b b\u00fdval\u00e9 \u017eidovsk\u00e9 synagogy, kter\u00e1 se nach\u00e1z\u00ed jen p\u00e1r krok\u016f od pacovsk\u00e9ho n\u00e1m\u011bst\u00ed. Jeho man\u017eelka Vla\u010fka N\u011bmcov\u00e1 k tomu dodala: \u201eAbych se p\u0159iznala, tak se mi p\u0159ed lety do podnik\u00e1n\u00ed moc necht\u011blo, ale dneska jsem r\u00e1da, \u017ee pivovar m\u00e1me.&#8220; Na rozjezdu pivovaru se pod\u00edlel jeden z nejzn\u00e1m\u011bj\u0161\u00edch sl\u00e1dk\u016f v \u010cesk\u00e9 republice a ve sv\u011bt\u011b, Josef Kr\u00fdsl z Plzn\u011b. \u201eT\u00edm jsme se vyhnuli p\u0159\u00edpadn\u00fdm technologick\u00fdm chyb\u00e1m i chyb\u00e1m p\u0159i v\u00fdrob\u011b piva ve v\u011bt\u0161\u00edm objemu,&#8220; uvedla N\u011bmcov\u00e1, kter\u00e1 se tak\u0159ka denn\u011b star\u00e1 o p\u0159ilehlou pivnici. Zhruba m\u011bs\u00edc p\u0159edt\u00edm, ne\u017e man\u017eel\u00e9 uva\u0159ili prvn\u00ed v\u00e1rku piva, vyhl\u00e1sili v m\u011bstsk\u00fdch novin\u00e1ch a na webov\u00fdch str\u00e1nk\u00e1ch minipivovaru anketu o nejlep\u0161\u00ed n\u00e1zev pacovsk\u00e9ho piva. Z v\u00fdsledk\u016f vznikly dva n\u00e1zvy \u2013 Pacovsk\u00fd Golem a \u010cern\u00fd Rab\u00edn. O t\u0159i m\u011bs\u00edce pozd\u011bji za\u010dali man\u017eel\u00e9 s va\u0159en\u00edm ovocn\u00fdch piv s r\u016fzn\u00fdmi p\u0159\u00edchut\u011bmi \u2013 a\u0165 u\u017e se z\u00e1zvorem, bor\u016fvkami, ho\u0159k\u00fdm pomeran\u010dem, mojitem nebo limetkou. \u201eZe sedmi p\u0159\u00edchut\u00ed n\u00e1m vy\u0161lo to, \u017ee top je bor\u016fvkov\u00e9, kter\u00e9 je nejpiteln\u011bj\u0161\u00ed. D\u00e1le jsme v nab\u00eddce ponechali mandarinku a malinu. V\u0161echna na\u0161e ovocn\u00e1 piva se chovaj\u00ed tak, \u017ee nechutnaj\u00ed sladce. O\u010dima \u010dlov\u011bk vid\u00ed fialov\u00e9 pivo, fialovou p\u011bnu, c\u00edt\u00ed bor\u016fvku, napije se piva, jako by pil bor\u016fvku, ale pak na konci, kdy\u017e polkne, tak po t\u0159ech, \u010dty\u0159ech vte\u0159in\u00e1ch c\u00edt\u00ed zp\u00e1tky chu\u0165 p\u016fvodn\u00edho sv\u011btl\u00e9ho piva,&#8220; popsal pacovsk\u00fd rod\u00e1k princip p\u0159\u00edrodn\u00edch macer\u00e1t\u016f, kter\u00e9 na sebe nep\u0159eb\u00edraj\u00ed kompletn\u00ed ovocnou chu\u0165 od za\u010d\u00e1tku a\u017e do konce, jako je to nap\u0159\u00edklad u belgick\u00fdch piv. \u201eNa\u0161e pivo je v\u00edce do zlatav\u00e9 barvy a\u017e do bronzu, m\u00e1 pln\u011bj\u0161\u00ed chu\u0165, ho\u0159kost, je nefiltrovan\u00e9 a nepasterizovan\u00e9. V\u0161echna piva jsou si hodn\u011b podobn\u00e1. Laik jej v\u011bt\u0161inou zhodnot\u00ed tak, \u017ee m\u00e1 v\u011bt\u0161\u00ed \u0159\u00edz, v\u00edce \u010dlov\u011bka po\u0161imr\u00e1 po jazyku, d\u00e1le koukne, jak pivo dr\u017e\u00ed p\u011bnu a jak je ho\u0159k\u00e9,&#8220; popsal hlavn\u00ed znaky pacovsk\u00e9ho Golema a Rab\u00edna Lubo\u0161 N\u011bmec. \u201eVa\u0159\u00edme podle toho, jak pot\u0159ebujeme pivo a kolik m\u00e1me m\u00edsta v tanc\u00edch. Nedod\u00e1v\u00e1me nikam, i kdy\u017e popt\u00e1vka je ohromn\u00e1, va\u0159\u00edme zat\u00edm pro sebe a pro m\u00edstn\u00ed, kter\u00fdm pivo pln\u00edme do pet lahv\u00ed, d\u017eb\u00e1n\u016f, soudk\u016f nebo keg sud\u016f,&#8220; vyjmenoval N\u011bmec a ihned vysv\u011btlil, pro\u010d se se \u017eenou br\u00e1n\u00ed dod\u00e1vat pivo do jin\u00fdch restaurac\u00ed a hosp\u016fdek: \u201ePokud by na\u0161e pivo hostin\u0161t\u00ed to\u010dili stejn\u011b, jako to\u010d\u00ed pivo z velk\u00fdch pivovar\u016f, tak bychom splakali nad vejd\u011blkem, proto\u017ee my pivo sice uva\u0159\u00edme, m\u016f\u017eeme se rozkr\u00e1jet, ale pokud hostinsk\u00fd nebude \u010distit kohouty, nar\u00e1\u017ee\u010de, trubky, tak je konec. A jak se \u0159\u00edk\u00e1 \u2013 sl\u00e1dek pivo va\u0159\u00ed a hostinsk\u00fd ho d\u011bl\u00e1. Nav\u00edc si ka\u017ed\u00fd mus\u00ed uv\u011bdomit, \u017ee v republice je zhruba 90 procent piv filtrovan\u00fdch,&#8220; zd\u016fraznil dev\u011btat\u0159icetilet\u00fd b\u00fdval\u00fd truhl\u00e1\u0159 a zedn\u00edk v jedn\u00e9 osob\u011b.<br \/>\nKrom\u011b mnoha aktivit jezd\u00ed N\u011bmcovi i po r\u016fzn\u00fdch festivalech piva, na kter\u00e9 si je zvou sami po\u0159adatel\u00e9. To se stalo i v p\u0159\u00edpad\u011b Festivalu minipivovar\u016f, kter\u00fd se konal p\u0159ed t\u0159emi t\u00fddny v Kr\u00e1lovsk\u00e9 zahrad\u011b Pra\u017esk\u00e9ho hradu. Vyso\u010dinu tam reprezentoval pacovsk\u00fd pivovar. Ze sto druh\u016f p\u011bniv\u00e9ho moku \u010dty\u0159i druhy ochutnal i prezident \u010cesk\u00e9 republiky V\u00e1clav Klaus. \u201eA pr\u00e1v\u011b t\u00edm jedn\u00edm pivem bylo to na\u0161e bor\u016fvkov\u00e9. Velice ho nadchlo, proto\u017ee jak \u0159\u00edkal, tak nikdy ovocn\u00e9 pivo neochutnal. Nadchlo ho to, \u017ee on c\u00edtil bor\u016fvku, vizu\u00e1ln\u011b vid\u011bl bor\u016fvku. Kdy\u017e se ale napil, tak p\u0159i\u0161la chu\u0165 sv\u011btl\u00e9ho piva. Pan prezident se ptal, odkud jsme, \u0159\u00edkal, \u017ee Pacov zn\u00e1, \u017ee tu kousek od n\u00e1s m\u00e1 chalupu. Dokonce \u0159ekl, \u017ee a\u017e p\u0159\u00ed\u0161t\u00ed rok skon\u010d\u00ed s prezidentov\u00e1n\u00edm, tak \u017ee se za n\u00e1mi i s man\u017eelkou a vnou\u010daty p\u0159ijede pod\u00edvat,&#8220; pochlubil se Lubo\u0161 N\u011bmec. O tom, \u017ee ho\u0159kost na pivu oce\u0148uj\u00ed nejen mu\u017ei, ale i \u017eeny, v\u011bd\u00ed sv\u00e9 i u N\u011bmc\u016f. \u201eNa\u0161e pivo mi nejv\u00edce chutn\u00e1 \u0159ezan\u00e9 a\u2007pak ochucen\u00e9 bor\u016fvkov\u00e9 a\u2007mandarinkov\u00e9. Kdy\u017e jsme t\u0159eba na festivalu, tak se chlapi boj\u00ed, \u017ee na\u0161e pivo bude chutnat stejn\u011b jako ochucen\u00e9 Radlery, ale ono to tak v\u016fbec nen\u00ed,&#8220; pouk\u00e1zala dev\u011btat\u0159icetilet\u00e1 Vla\u010fka N\u011bmcov\u00e1 a vyzradila, \u017ee na konci \u010dervence 2012 budou va\u0159it jejich dal\u0161\u00ed speci\u00e1l \u2013 p\u0161eni\u010dn\u00e9 pivo, do kter\u00e9ho p\u0159im\u00edchaj\u00ed dal\u0161\u00ed p\u0159\u00edchu\u0165. \u201eP\u0161eni\u010dn\u00e9 pivo chutn\u00e1 hodn\u011b \u017een\u00e1m,&#8220; zm\u00ednila N\u011bmcov\u00e1. Minipivovar st\u00e1le p\u0159ich\u00e1z\u00ed s novinkami. Tou posledn\u00ed je i tip na d\u00e1rek s n\u00e1zvem Uva\u0159 si vlastn\u00ed pivo aneb Den v pacovsk\u00e9m minipivovaru. Podle pivovarn\u00edk\u016f je to jedine\u010dn\u00e1 p\u0159\u00edle\u017eitost pivo nejen ochutnat, ale z\u00fa\u010dastnit se i jeho va\u0159en\u00ed. Je to jemn\u011b naho\u0159kl\u00e9 pivo se zlatom\u011bd\u011bn\u00fdm zabarven\u00edm.
