Krom\u011b pivovaru by v patrech m\u011bl vzniknout penzion a na st\u0159e\u0161e mal\u00e1 vyhl\u00eddkov\u00e1 plo\u0161ina. Pivovar je repasovan\u00fd z N\u011bmecka. Varna je bokem od hlavn\u00ed \u010d\u00e1sti pivnice pro asi 100 lid\u00ed, zbytek technologie je v p\u0159\u00edzem\u00ed a ve sklep\u011b, ro\u010dn\u00ed v\u00fdstav a\u017e 1.200 hl s mo\u017enost\u00ed roz\u0161\u00ed\u0159en\u00ed. Piva: 10\u00b0 sv\u011btl\u00e1 za 23 K\u010d a tmav\u00e1 za 25 K\u010d a 12\u00b0 sv\u011btl\u00e1 Chalupn\u00edk za 28 K\u010d. Chmel pou\u017e\u00edvaj\u00ed \u017dP\u010c a Premiant, slad z Bene\u0161ova, Kounic a od Weyermanna. Voda je m\u00edstn\u00ed. Pivovarnick\u00e9 p\u0159\u00e1n\u00ed vyryt\u00e9 ve d\u0159ev\u011b zdob\u00ed varnu soukrom\u00e9ho pivovaru Chalupn\u00edk v Per\u0161tejn\u011b. Dne 8.6.2013 ho majitel Miroslav Chalupn\u00edk slavnostn\u011b otev\u0159el. Pivovar vznikl v b\u00fdval\u00e9 tov\u00e1rn\u011b na kraji obce, kde se d\u0159\u00edv \u0161ily spac\u00e1ky. Te\u010f je tu p\u0159\u00edjemn\u00e1 restaurace se zahr\u00e1dkou a v zadn\u00edch prostor\u00e1ch minipivovar, kter\u00fd je stav\u011bn\u00fd na ro\u010dn\u00ed produkci dvan\u00e1cti set hektolitr\u016f piva. Slavnostn\u00edho otev\u0159en\u00ed se z\u00fa\u010dastnila \u0159ada v\u00fdznamn\u00fdch host\u016f v\u010detn\u011b prezidenta \u010ceskomoravsk\u00e9ho svazu minipivovar\u016f Jana \u0160ur\u00e1n\u011b. Pivovaru i restauraci tak\u00e9 po\u017eehnal d\u011bkan \u0158\u00edmskokatolick\u00e9 farnosti v Kadani Josef \u010cerm\u00e1k. \u201eByla to pro m\u011b \u010dest, proto\u017ee pivovaru jsem \u017eehnal poprv\u00e9 v \u017eivot\u011b,&#8220; usm\u00edval se. V\u0161ichni pak mohli ochutnat t\u0159i nov\u00e9 druhy piva a soud\u011b dle rychle dol\u00e9van\u00fdch skleni\u010dek v\u0161em chutnalo. Pochvaloval si ho i Ond\u0159ej Krym, majitel pivot\u00e9ky Kr\u00e1lovstv\u00ed piva v Chomutov\u011b. \u201eDo sv\u00e9 pivot\u00e9ky ur\u010dit\u011b tohle pivo objedn\u00e1m, moc se jim povedlo,&#8220; pokyvoval uznale. Pivo si tu m\u016f\u017eete vychutnat bu\u010f to\u010den\u00e9 nebo si ho koupit i v KEG sudech \u010di PET lahv\u00edch.<br \/>\nRozhovor s majitelem pivovaru M. Chalupn\u00edkem:<br \/>\n\u2022 Jak se vlastn\u011b zrodil n\u00e1pad na pivovar?<br \/>\nBudovu b\u00fdval\u00e9 textiln\u00ed tov\u00e1rny jsem koupil v roce 2008, abychom tam vybudovali sklady a roz\u0161\u00ed\u0159ili v\u00fdroby na\u0161\u00ed firmy, kter\u00e1 se zab\u00fdv\u00e1 kovov\u00fdrobou a z\u00e1me\u010dnictv\u00edm. Cel\u00fd objekt se ale vyu\u017e\u00edval jen z \u010d\u00e1sti a p\u0159edek budovy s pr\u016f\u010del\u00edm p\u0159\u00edmo vyb\u00edzel k zamy\u0161len\u00ed, co d\u00e1l. Po jedn\u00e9 n\u00e1v\u0161t\u011bv\u011b men\u0161\u00edho pivovaru bylo rozhodnuto pustili jsme se do vybudov\u00e1n\u00ed prvn\u00edho pivovaru v Per\u0161tejn\u011b.<br \/>\n\u2022 Co\u017e nen\u00ed jen tak. Co v\u00e1s hnalo kup\u0159edu?<br \/>\nNikdo si asi nedok\u00e1zal p\u0159edstavit, co n\u00e1s \u010dek\u00e1, ale c\u00edl byl jasn\u00fd uva\u0159it prvn\u00ed per\u0161tejnsk\u00fd le\u017e\u00e1k v cel\u00e9 historii. Od my\u0161lenky uplynuly necel\u00e9 t\u0159i roky a v dubnu 2013 jsme uva\u0159ili prvn\u00ed v\u00e1rku na\u0161eho piva, co\u017e je vlastn\u011b jen za\u010d\u00e1tek historie na\u0161eho pivovaru.<br \/>\n\u2022 Jak n\u00e1ro\u010dn\u00e1 byla rekonstrukce?<br \/>\nVelice n\u00e1ro\u010dn\u00e1. Bylo pot\u0159eba opravit p\u016fvodn\u00ed stavbu a dostav\u011bt nov\u00e9 prostory pro kuchy\u0148 a restauraci. M\u00e1me tu i vlastn\u00ed restauraci, kde budeme va\u0159it \u010deskou kuchyni. V dne\u0161n\u00ed usp\u011bchan\u00e9 dob\u011b se v dom\u00e1cnostech zapom\u00edn\u00e1 na klasick\u00e9 recepty. Standardn\u011b budeme m\u00edt v nab\u00eddce t\u0159i druhy piva 10\u00b0 sv\u011btl\u00e9 v\u00fd\u010depn\u00ed pivo, 12\u00b0 sv\u011btl\u00fd le\u017e\u00e1k a 12\u00b0tmav\u00fd le\u017e\u00e1k. Na\u0161e piva jsou nefiltrovan\u00e1 a nepasterizovan\u00e1 a do budoucna pl\u00e1nujeme tak\u00e9 speci\u00e1l.<br \/>\n\u2022 Pivo i pivovar jste pojmenoval po sob\u011b a je t\u0159eba uznat, \u017ee p\u0159\u00edjmen\u00ed na to m\u00e1te vhodn\u00e9. Pivo Du\u0161ek si t\u0159eba p\u0159edstavit neum\u00edm\u2026 Uva\u017eoval jste v\u016fbec o jin\u00e9m jm\u00e9n\u011b?<br \/>\nKdybych se jmenoval Nov\u00e1k, tak ho taky nepojmenuju Nov\u00e1k. Ale jm\u00e9no Chalupn\u00edk, tak to je samo o sob\u011b p\u0159\u00edb\u011bh. O jin\u00fdch jm\u00e9nech jsme uva\u017eovali, ale nakonec jsme zvolili tohle a mysl\u00edm, \u017ee dob\u0159e.<br \/>\n\u2022 Jak moc jste mluvil do v\u00fdsledn\u00e9 chuti piva?<br \/>\nV\u016fbec. A\u0165 \u010dlov\u011bk pivo pije nebo ne, ur\u010dit\u011b je zv\u011bdav\u00fd, jak se pivo vyr\u00e1b\u00ed a u n\u00e1s se o v\u00fdrob\u011b piva m\u016f\u017ee dost zaj\u00edmav\u00e9ho dozv\u011bd\u011bt. P\u0159ednost\u00ed na\u0161eho pivovaru je tak\u00e9 jeho um\u00edst\u011bn\u00ed v kr\u00e1sn\u00e9m \u00fadol\u00ed Kru\u0161n\u00fdch hor nad \u0159ekou Oh\u0159\u00ed. V okol\u00ed je mnoho historick\u00fdch pam\u00e1tek, tak\u017ee se tu turist\u00e9 ur\u010dit\u011b nebudou nudit.<br \/>\n\u2022 Kdy pl\u00e1nujete slavnostn\u00ed otev\u0159en\u00ed pro ve\u0159ejnost a jak bude akce vypadat?<br \/>\nSlavnostn\u00ed otev\u0159en\u00ed pro ve\u0159ejnost bude v sobotu 8. \u010dervna 2013, kdy k n\u00e1m m\u016f\u017ee p\u0159ijet kdokoliv, kdo bude cht\u00edt ochutnat na\u0161e pivo a pop\u0159\u00e1t n\u00e1m mnoho \u0161t\u011bst\u00ed v rozj\u00ed\u017ed\u011bj\u00edc\u00edm se pivovaru. Na tento den je tak\u00e9 pozvan\u00e1 kapela.<br \/>\n\u2022 Jak vid\u00edte pivovar za 10 a\u017e 15 let? Jak\u00e9 jsou va\u0161e pl\u00e1ny do budoucna?<br \/>\nPivovar je postaven na v\u00fdrobu 1200 hektolitr\u016f ro\u010dn\u011b. Pl\u00e1nujeme tedy tak\u00e9 distribuci do okoln\u00edch m\u011bst, a jeliko\u017e to nem\u00e1me daleko ani do N\u011bmecka, tak budeme vyv\u00e1\u017eet mo\u017en\u00e1 i tam. Do budoucna bychom r\u00e1di na\u0161e slu\u017eby roz\u0161\u00ed\u0159ili o ubytov\u00e1n\u00ed a vybudovali zde \u0161kol\u00edc\u00ed centrum. Ze v\u0161eho nejd\u016fle\u017eit\u011bj\u0161\u00ed ale je, aby se u n\u00e1s lidem l\u00edbilo. Douf\u00e1me, \u017ee se k n\u00e1m budou s oblibou vracet a \u017ee k n\u00e1m budou jezdit skaln\u00ed i nov\u00ed p\u0159\u00edznivci \u010desk\u00e9ho pivovarnictv\u00ed.
