Nikoliv v\u0161ak v pivovaru na ulici 4. kv\u011btna, kter\u00fd byl ji\u017e n\u011bkolik let uzav\u0159en. Tradice va\u0159en\u00ed zlatav\u00e9ho moku sah\u00e1 ve Vset\u00edn\u011b do sedmn\u00e1ct\u00e9ho stolet\u00ed. V 90.letech v\u0161ak byla v\u00fdrazn\u011b naru\u0161ena. &#8220; V roce 1995 se tehdej\u0161\u00ed majitel\u00e9 z Moravskoslezsk\u00fdch pivovar\u016f P\u0159erov rozhodli vset\u00ednsk\u00fd z\u00e1vod prodat. Cht\u011bl sem jej koupit, opravit a pokra\u010dovat ve v\u00fdrob\u011b. Nedostal jsem ale \u00fav\u011br a pivovar z\u00edskala ostravsk\u00e1 spole\u010dnost. Pod jej\u00edm veden\u00edm se zde v\u00fdroba v minul\u00fdch letech zastavila, &#8220; \u0159ekl v b\u0159eznu 2002 Jan Dohnal, kter\u00fd ve vset\u00ednsk\u00e9m pivovaru pracoval od roku 1966 jako vedouc\u00ed v\u00fdroby a v letech 1983-1995 jako \u0159editel. V roce 2002 byla tradice va\u0159en\u00ed piva ve Vset\u00edn\u011b obnovena. Pr\u00e1v\u011b Jan Dohnal se sv\u00fdm synem vybudovali na Doln\u00ed Jasence pivovar s restaurac\u00ed a kav\u00e1rnou. &#8220; Hodl\u00e1me v n\u011bm va\u0159it sv\u011btlou des\u00edtku, dvan\u00e1ctku a \u010dernou t\u0159in\u00e1ctku. V\u011bt\u0161inu piva, kter\u00e9 uva\u0159\u00edme, tak\u00e9 v restauraci vyto\u010d\u00edme. St\u00e1\u010det budeme je\u0161t\u011b do mal\u00fdch soudk\u016f. Vyrobit chceme ro\u010dn\u011b jeden a\u017e dva tis\u00edce hektolitr\u016f. Pro srovn\u00e1n\u00ed v pivovaru na ulici 4. kv\u011btna se uva\u0159ilo a\u017e kolem osmdes\u00e1ti tis\u00edc hektolitr\u016f,&#8220; \u0159ekl Dohnal s t\u00edm, \u017ee v \u010dervenci by m\u011bl b\u00fdt uva\u0159en prvn\u00ed zku\u0161ebn\u00ed vzorek, v z\u00e1\u0159\u00ed druh\u00fd a koncem roku se ji\u017e v\u00fdroba m\u011bla rozjet naplno.<br \/>\nprosince 2002. Kapacita je 2500-3000 hl piva ro\u010dn\u011b. Zat\u00edm dod\u00e1val pivo jen pro svoji restauraci.<\/p>\n<p>V lednu 2003 bylo pivo pln\u011bno jen do sud\u016f bez etiket, m\u011bli 2 druhy t\u00e1ck\u016f a sklenice s logem. Restaurace byla otev\u0159ena Po-So 10:30-23:00. V kv\u011btnu 2003 pivovar uva\u0159il M\u00e1jov\u00e9 piv\u00ed\u010dko (sv\u011btl\u00e1 kvasnicov\u00e1 14 %).<\/p>\n<p>P\u0159\u00edznivci zlatav\u00e9ho moku \u010dasto tvrd\u00ed, \u017ee jedno pivo dok\u00e1\u017ee skute\u010dn\u011b zahnat \u017e\u00edze\u0148. \u017de to nen\u00ed teorie zcela ojedin\u011bl\u00e1, dokl\u00e1daj\u00ed slova majitele jedin\u00e9ho pivovaru na Vset\u00ednsku okrese. Vysok\u00e9 teploty na spot\u0159ebu piva maj\u00ed pochopiteln\u011b zcela jednozna\u010dn\u00fd vliv, potvrdil v \u010dervenci 2003 Jan Dohnal, spolumajitel pivovaru Val\u00e1\u0161ek. &#8220; N\u00e1r\u016fst prodeje jsme za\u010dali pozorovat asi p\u0159ed m\u011bs\u00edcem. V sou\u010dasn\u00e9 dob\u011b prod\u00e1v\u00e1me o 25 % piva v\u00edce ne\u017e obvykle. Samoz\u0159ejm\u011b v\u011bt\u0161\u00ed z\u00e1jem je o pivo sv\u011btl\u00e9,&#8220; uvedl Dohnal a z\u00e1rove\u0148 dodal: Nen\u00ed bez zaj\u00edmavosti, \u017ee lidem v\u00edce chutn\u00e1, co\u017e se projevilo a\u017e pades\u00e1tiprocentn\u00edm n\u00e1r\u016fstem prodan\u00fdch j\u00eddel v na\u0161\u00ed restauraci.&#8220;<\/p>\n<p>Minipivovar chystal na podzim 2003 dv\u011b novinky. Na \u010depu mohli z\u00e1jemci ochutnat sv\u011btl\u00fd kvasnicov\u00fd Speci\u00e1l 14 % a d\u00e1le byla p\u0159ipravov\u00e1na sv\u011btl\u00e1 kvasnicov\u00e1 des\u00edtka s n\u00e1zvem Klob\u016f\u010dek (nab\u00edzena od 21.11 2003).<\/p>\n<p>Sortiment v prosinci 2003: 10 %, 11.5 %, 14 v\u0161e sv\u011btl\u00e9 a 11.5 % tmav\u00e1 v\u0161e v nefiltrovan\u00e9 podob\u011b.<br \/>\nDobr\u00e9ho sl\u00e1dka si ur\u010dit\u011b pova\u017euje ka\u017ed\u00fd v\u00fdrobce piva. Jan Dohnal ze Vset\u00edna probl\u00e9my se sl\u00e1dkem nem\u011bl. Pivo pro sv\u016fj pivovar si toti\u017e va\u0159il s\u00e1m. Na\u0161e pivo je dost ho\u0159k\u00e9, hodn\u011b chmelen\u00e9, ale chutn\u00e1 jemn\u011b. Ho\u0159kost nez\u016fst\u00e1v\u00e1 v krku,&#8220; hovo\u0159il v b\u0159eznu 2004 s l\u00e1skou o sv\u00e9m produktu sl\u00e1dek Jan Dohnal. I kdy\u017e \u010d\u00e1st produkce na \u017e\u00e1dost hospodsk\u00fdch filtruje, vyzdvihuje chu\u0165 tradi\u010dn\u00edho kvasnicov\u00e9ho, tedy nefiltrovan\u00e9ho piva. &#8222;Kvasnicov\u00e9 pivo je jemn\u011bj\u0161\u00ed na chu\u0165. Filtrovan\u00e9 je ost\u0159ej\u0161\u00ed,&#8220; vysv\u011btlil. Vzpom\u00edn\u00e1 tak\u00e9 na \u010dl\u00e1nek v odborn\u00e9m \u010dasopisu, kde ned\u00e1vno n\u011bjak\u00fd l\u00e9ka\u0159 tvrdil, \u017ee kvasnicov\u00e9 pivo je zdrav\u00e9. &#8222;Tvrdil jsem to v\u017edycky, \u017ee pivo je zdrav\u00e9. V pivova\u0159e nikdo filtrovan\u00e9 nepije, jedin\u011b kvasnicov\u00e9,&#8220; \u0159ekl. Jan Dohnal va\u0159il pivo u\u017e p\u0159es t\u0159icet let. Z toho v\u011bt\u0161inu piva uva\u0159il ve star\u00e9m vset\u00ednsk\u00e9m pivova\u0159e, kter\u00fd p\u0159ed n\u011bkolika lety skon\u010dil svou v\u00fdrobu. S\u00e1m poch\u00e1z\u00ed z B\u00edlovic na Uherskohradi\u0161\u0165sku. Na v\u00fdrobu le\u017e\u00e1ku Val\u00e1\u0161ek, tak si sv\u00e9 pivo pojmenovali vset\u00edn\u0161t\u00ed milovn\u00edci p\u011bniv\u00e9ho moku, pou\u017e\u00edval sl\u00e1dek tradi\u010dn\u00ed technologii. Pivo se va\u0159\u00ed z vody, sladu a chmele. Voda mus\u00ed b\u00fdt m\u011bkk\u00e1. My m\u00e1me velice dobrou vodu ze Stanovnice,&#8220; pochvalil si vset\u00ednsk\u00fd sl\u00e1dek. Slad se mus\u00ed podle n\u011bj ze\u0161rotovat, rozpustit ve vod\u011b a zah\u0159\u00e1t. Potom se odd\u011bl\u00ed sladov\u00fd v\u00fdluh od ml\u00e1ta a vznik\u00e1 takzvan\u00e1 mladina. Proces trv\u00e1 12 hodin. Mladina se zchlad\u00ed a p\u0159idaj\u00ed se pivovarsk\u00e9 kvasnice. Mlad\u00e9 pivo se pak prokva\u0161uje, prozradil sl\u00e1dek. Le\u017e\u00e1k Val\u00e1\u0161ek se dostane ke sv\u00fdm milovn\u00edk\u016fm a\u017e po dvou m\u011bs\u00edc\u00edch. Prvn\u00ed rodinn\u00e9 pivo va\u0159il sl\u00e1dek v srpnu 2002 v je\u0161t\u011b rozestav\u011bn\u00e9m pivova\u0159e. &#8222;Bylo to takov\u00e9 nerv\u00f3zn\u00ed. V\u0161ude se je\u0161t\u011b stav\u011blo. V srpnu jsme va\u0159ili a za\u010d\u00e1tkem prosince jsme poprv\u00e9 \u010depovali,&#8220; vzpom\u00ednal na hektick\u00fd za\u010d\u00e1tek. St\u00e1lo to podle n\u011bj ale za to. Prvn\u00ed pivo m\u011blo devades\u00e1t dn\u016f. Dlouho le\u017eelo, bylo proto vysoce kvalitn\u00ed, pochvalil si Jan Dohnal.<br \/>\n&#8222;N\u00e1\u0161 nov\u00fd minipivovar Val\u00e1\u0161ek nebyl koncipov\u00e1n tak, aby t\u011bmto gigant\u016fm konkuroval co do objemu v\u00fdroby, ale p\u0159edev\u0161\u00edm kvalitou sv\u00e9ho piva,&#8220; \u0159ekl v b\u0159eznu 2004 majitel. Pivovar produkoval ro\u010dn\u011b 900 a\u017e 1000 hektolitr\u016f piva. To bylo zat\u00edm polovi\u010dn\u00ed mno\u017estv\u00ed, kter\u00e9 mohl vyprodukovat. N\u00e1zev Val\u00e1\u0161ek si sl\u00e1dek se synem nevymysleli sami. &#8222;Uspo\u0159\u00e1dali jsme anketu v m\u00edstn\u00edch novin\u00e1ch. Cht\u011bli jsme, aby lid\u00e9 sami \u0159ekli, jak by se jejich pivo m\u011blo jmenovat. Mysleli jsme si, \u017ee Vala\u0161i jsou vlastenci a budou bojovat za slivovici i za pivo. Te\u010f u\u017e jenom \u010dek\u00e1me, aby ho pili,&#8220; \u0159ekl Jan Dohnal. &#8222;Na surovin\u00e1ch ne\u0161et\u0159\u00edme. Sna\u017e\u00edme se nakupovat nejkvalitn\u011bj\u0161\u00ed slad a chmel. Do piva ned\u00e1v\u00e1me \u017e\u00e1dn\u00e9 extrakty. Pivo va\u0159\u00edme podle tradi\u010dn\u00edch receptur ze sam\u00e9ho sladu. Nenahrazujeme jej cukrem,&#8220; vysv\u011btlil. Na velikono\u010dn\u00ed sv\u00e1tky roku 2004 p\u0159ipravil minipivovar Val\u00e1\u0161ek speci\u00e1ln\u00ed velikono\u010dn\u00ed sv\u011btlou \u010dtrn\u00e1ctku. \u010cepovala od p\u00e1tku 9.dubna 2004.<br \/>\nCena piva: leden, b\u0159ezen, listopad 2003 ob\u011b za cenu 16,50 K\u010d\/0,5l, des\u00edtka za 11,50 K\u010d; 14 % za 19,50 K\u010d.<br \/>\nV srpnu 2004 jste mohli v minipivovaru ochutnat krom\u011b standardn\u00ed skv\u011bl\u00e9 11,5 sv\u011btl\u00e9 a 11,5 tmav\u00e9 (za 17,50 K\u010d) samoz\u0159ejm\u011b v nefiltrovan\u00e9 podob\u011b, i jako speci\u00e1l 11,5 polotmav\u00e9 Vi\u0161\u0148ov\u00e9 nefiltrovan\u00e9 (za 21 K\u010d za 0,5 l).<br \/>\nMinipivovar na konec roku 2004 p\u0159ichystal speci\u00e1ln\u00ed sv\u011btlou v\u00e1no\u010dn\u00ed \u010dtrn\u00e1ctku. Mal\u00e9 pivovary toti\u017e nemaj\u00ed v \u010cesku na r\u016f\u017e\u00edch ustl\u00e1no a vedle pivn\u00edch gigant\u016f se prosad\u00ed jen z\u0159\u00eddka. \u201eJe to t\u011b\u017ek\u00e9. Velk\u00e9 pivovary hospody doslova skupuj\u00ed,\u201c posteskl si vset\u00ednsk\u00fd sl\u00e1dek. Pokud toti\u017e hostin\u0161t\u00ed podep\u00ed\u0161\u00ed s velk\u00fdm pivovarem smlouvu, z\u00edskaj\u00ed podle mno\u017estv\u00ed nato\u010den\u00e9ho piva finan\u010dn\u00ed injekci. \u201eHospodu si kompletn\u011b vybav\u00ed a nic je to nestoj\u00ed. Ov\u0161em nesm\u00ed se tam \u010depovat jin\u00e9 pivo,\u201c upozornil Dohnal. S t\u00edm, \u017ee dokonce ani antimonopoln\u00ed \u00fa\u0159ad s takovou diskriminac\u00ed \u00fadajn\u011b nem\u016f\u017ee nic d\u011blat. \u201eNem\u00e1me \u0161anci se do takov\u00fdch hospod dostat. Jedin\u00e1 mo\u017enost je, vz\u00edt si n\u011bco do n\u00e1jmu nebo postavit vlastn\u00ed,\u201c tvrdil. Nap\u0159\u00edklad Val\u00e1\u0161ek \u010depuje ve vlastn\u00ed hospod\u011b, kter\u00e1 pat\u0159\u00ed k pivovaru ve Vset\u00edn\u011b a pak u\u017e jenom v jedn\u00e9 restauraci ve Zl\u00edn\u011b a v Prost\u011bjov\u011b. P\u0159itom z\u00e1jem o tuto zna\u010dku st\u00e1le roste. \u201eP\u0159edev\u0161\u00edm te\u010f v l\u00e9t\u011b si z\u00e1kazn\u00edci jezd\u00ed pro sudy p\u0159\u00edmo do pivovaru,\u201c doplnil Jan Dohnal.<br \/>\nNa konec roku 2008 minipivovar p\u0159ipravil tradi\u010dn\u00ed \u010dtrn\u00e1ctku.<br \/>\nMinipivovar z\u00e1kazn\u00edk\u016fm nab\u00edzel i v roce 2010 kvasnicov\u00fd le\u017e\u00e1k sv\u011btl\u00fd, tmav\u00fd, \u0159ezan\u00fd. Obl\u00edben\u00e9 byly i p\u0159\u00edchut\u011b, jako nap\u0159\u00edklad k\u00e1vov\u00e1, mandlov\u00e1, vi\u0161\u0148ov\u00e1 \u010di bor\u016fvkov\u00e1. &#8222;V \u010cesk\u00e9 republice je asi 70 mal\u00fdch pivovar\u016f, ale kvalita jejich produkt\u016f je velmi rozd\u00edln\u00e1. Pivo va\u0159\u00edme sedm let a do podv\u011bdom\u00ed lid\u00ed se za\u010d\u00edn\u00e1me dost\u00e1vat a\u017e nyn\u00ed, kdy se o minipivovarech st\u00e1le v\u00edce mluv\u00ed. Je b\u011b\u017en\u00e9, \u017ee si lid\u00e9 zavolaj\u00ed, a\u0165 jim nachyst\u00e1me do PVC lahv\u00ed ten a ten druh, \u017ee si za chv\u00edli p\u0159ijedou,&#8220; \u0159ekl v lednu 2010 sl\u00e1dek minipivovaru Val\u00e1\u0161ek Jan Dohnal.<br \/>\nMinipivovar v \u00fanoru 2010 nab\u00edzel: Val\u00e1\u0161ek 12\u00b0 mandlov\u00e9 za 27 K\u010d, Val\u00e1\u0161ek 12\u00b0 vi\u0161\u0148ov\u00e9 za 27 K\u010d, Val\u00e1\u0161ek 14\u00b0 za 27 K\u010d, Val\u00e1\u0161ek 12\u00b0 sv\u011btl\u00fd za 24 K\u010d.<br \/>\nSl\u00e1dek pivovaru Ji\u0159\u00ed Havl\u00edk \u0159\u00edk\u00e1, \u017ee kvalita je to, \u010d\u00edm si m\u016f\u017ee vset\u00ednsk\u00fd mok z\u00edskat a udr\u017eet konzumenty. Z\u00e1kladem piva Val\u00e1\u0161ek jsou proto v\u017edy kvalitn\u00ed tuzemsk\u00e9 suroviny. \u201eVa\u0159\u00edme z moravsk\u00e9ho sladu, \u010desk\u00e9ho \u017eateck\u00e9ho chmele. Velk\u00e9 pivovary \u010dasto pou\u017e\u00edvaj\u00ed chmelov\u00e9 extrakty, kter\u00e9 jsou samoz\u0159ejm\u011b levn\u011bj\u0161\u00ed,\u201c p\u0159ibl\u00ed\u017eil Havl\u00edk. Ve Vset\u00edn\u011b nav\u00edc dbaj\u00ed na tradi\u010dn\u00ed postup. Po hlavn\u00edm kva\u0161en\u00ed, kter\u00e9 trv\u00e1 jeden t\u00fdden, zraje pivo Val\u00e1\u0161ek je\u0161t\u011b alespo\u0148 \u010dty\u0159icet dn\u00ed v tanc\u00edch. \u201eV\u00fdsledkem je \u017eiv\u00e9 pivo, kter\u00e9 se nav\u00edc nepasterizuje ani nestabilizuje a p\u0159\u00edmo z tank\u016f m\u00ed\u0159\u00ed do v\u00fd\u010depu,\u201c popsal sl\u00e1dek. Zachov\u00e1v\u00e1n\u00ed \u201estar\u00e9ho\u201c postupu p\u0159i va\u0159en\u00ed piva si sice vyb\u00edr\u00e1 svoji da\u0148 v jeho krat\u0161\u00ed trvanlivosti, kter\u00e1 dosahuje zhruba t\u0159\u00ed t\u00fddn\u016f. \u201eNa druhou stranu ale z\u016fst\u00e1vaj\u00ed zachov\u00e1ny ve\u0161ker\u00e9 kvasinky a l\u00e1tky, kter\u00e9 m\u00e1 pivo obsahovat. Takov\u00fd mok je rozhodn\u011b tak\u00e9 zdrav\u011bj\u0161\u00ed,\u201c trval na v\u00fdhod\u00e1ch Ji\u0159\u00ed Havl\u00edk. \u201eVyr\u00e1b\u00edme sv\u011btl\u00fd a tmav\u00fd le\u017e\u00e1k, d\u0159\u00edve takzvanou dvan\u00e1ctku a tak\u00e9 \u010dtrn\u00e1ctistup\u0148ov\u00e9 speci\u00e1ln\u00ed pivo. Pro zpest\u0159en\u00ed nab\u00edz\u00edme tak\u00e9 piva s bor\u016fvkovou, vi\u0161\u0148ovou \u010di mandlovou p\u0159\u00edchut\u00ed,\u201c vyjmenoval Havl\u00edk. Podle jeho slov u\u017e se za\u017eit\u00e9 ozna\u010den\u00ed jako des\u00edtka \u010di dvan\u00e1ctka u\u017e p\u0159\u00edli\u0161 nepou\u017e\u00edvaj\u00ed. \u201eM\u00e1lokter\u00e9 velk\u00e9 pivovary tak\u00e9 skute\u010dnou des\u00edtku d\u011blaj\u00ed. B\u00fdv\u00e1 to sp\u00ed\u0161e osmi a\u017e dev\u00edtistup\u0148ov\u00e9 pivo ozna\u010dovan\u00e9 jako v\u00fd\u010depn\u00ed,\u201c poznamenal zku\u0161en\u00fd sl\u00e1dek.<br \/>\nSl\u00e1dek Jan Dohnal se synem Romanem za\u010dali va\u0159it pivo p\u0159ed osmi lety. \u201eInvestice se n\u00e1m je\u0161t\u011b nevr\u00e1tily, ale z\u00e1jem o na\u0161e pivo lid\u00e9 maj\u00ed. Pokud to tak p\u016fjde, d\u00e1l, tak to zvl\u00e1dneme,\u201c popsal v \u010dervenci 2010 Jan Dohnal. Rodinn\u00fd pivovar se zam\u011b\u0159il na vysokou kvalitu piva. \u201eRo\u010dn\u011b uva\u0159\u00edme kolem tis\u00edce hektolitr\u016f, \u010d\u00edm\u017e absolutn\u011b nem\u016f\u017eeme velk\u00fdm firm\u00e1m konkurovat. Proto m\u00e1me jedinou mo\u017enost, jak se udr\u017eet na trhu \u2013 nab\u00eddnout lidem kvalitn\u00ed dobr\u00e9 a n\u011b\u010d\u00edm v\u00fdjime\u010dn\u00e9 pivo,\u201c \u0159ekl Dohnal. I proto se sna\u017eili kupovat jen kvalitn\u00ed slad ze zahrani\u010d\u00ed a chmel ze \u017datce. Vodu pak brali z nedalek\u00e9 Stanovnice. Fakt, \u017ee z\u00e1kazn\u00edk je u n\u011bj na prvn\u00edm m\u00edst\u011b, potvrzuje jm\u00e9no minipivovaru, kter\u00e9 vybrali sami host\u00e9. \u201eN\u00e1zev Val\u00e1\u0161ek vze\u0161el z ankety, kterou jsme p\u0159ed lety ud\u011blali v novin\u00e1ch,\u201c vysv\u011btlil Dohnal.<br \/>\nNa podzim 2010 minipivovar nab\u00edzel i pivo s p\u0159\u00edchut\u00ed citronu.<br \/>\n\u201eSymbolicky na Zelen\u00fd \u010dtvrtek zah\u00e1j\u00edme prodej zelen\u00e9 dvan\u00e1ctky. P\u0159i sv\u00e1te\u010dn\u00ed p\u0159\u00edle\u017eitosti m\u00e1me ale uva\u0159en i \u010dtrn\u00e1ctistup\u0148ov\u00fd kvasnicov\u00fd speci\u00e1l,\u201c p\u0159edstavila nab\u00eddku pivovaru v dubnu 2011 jeho provozn\u00ed Jana Dohnalov\u00e1.
