Chmelen\u00e1 pouze odr\u016fdami z Nov\u00e9ho Z\u00e9landu, konkr\u00e9tn\u011b Riwaka a Nelson Sauvin. Such\u00e1, ho\u0159k\u00e1 a n\u00e1dhern\u011b piteln\u00e1.<\/li>\n<li>V dubnu 2023 za\u010d\u00e1tek nov\u00e9 s\u00e9rie piv s n\u00e1zvem <strong>\u201eIts time for..\u201c<\/strong>. Nezvykl\u00e1 kombinace chut\u00ed byla mo\u017en\u00e1 zprvu zvl\u00e1\u0161tn\u00ed, nicm\u00e9n\u011b po napit\u00ed pochop\u00edte, \u017ee se k sob\u011b hod\u00ed. Tentokr\u00e1t je to DDH, co\u017e znamen\u00e1 double dry hopped, neboli dvakr\u00e1t za studena chmelen\u00e1. A jde to teda po\u0159\u00e1dn\u011b poznat! Tato \u010dtrn\u00e1cti stup\u0148ov\u00e1 IPA v\u00e1s bude bavit sv\u00fdm v\u00fdrazn\u00fdm ovocn\u00fdm aroma spolu s lehce ko\u0159enitou v\u016fni. To v\u0161e d\u00edky kombinaci chmel\u016f Idaho 7, Citra Cryo a Columbus. To v\u0161e d\u00edky kombinaci chmel\u016f Idaho 7, Citra Cryo a Columbus.<\/li>\n<li>Na ja\u0159e 2022 Starob\u011blsk\u00fd pivovar pro \u00fa\u010dely v\u00fdroby experiment\u00e1ln\u011bj\u0161\u00edch druh\u016f piv zalo\u017eil s.r.o. <strong>Haksna Brewery<\/strong>.<\/li>\n<li>Sv\u00e1te\u010dn\u00ed (13% EPM), to byl listopadov\u00fd speci\u00e1l v roce 2021. Spodn\u011b kva\u0161en\u00fd speci\u00e1l. Tento polotmav\u00fd sv\u00e1te\u010dn\u00ed speci\u00e1l byl va\u0159en\u00fd tou neklasi\u010dt\u011bj\u0161\u00ed metodou tzn. na t\u0159i rmuty a chmelen\u00fd pouze \u017eateck\u00fdm chmelem. Pln\u00e9 t\u011blo, p\u0159\u00edjemn\u00e9 chmelen\u00ed \u017dateck\u00fdm poloran\u00fdm \u010derve\u0148\u00e1kem. alk.: 5 % barva 24 EBC.<\/li>\n<li>Sl\u00e1dek p\u0159ipravil na \u010dervenec 2021 \u00fapln\u011b nov\u00e9 pivo &#8211; Starob\u011blsk\u00e1 Bezinka. Byla to p\u0161enice, svrchn\u011b kva\u0161en\u00e1, za studena chmelen\u00e1 novou americkou odr\u016fdou chmele Sabro, s citr\u00f3nem a bezov\u00fdm kv\u011btem. Lehce ho\u0159k\u00e1, v\u00fdrazn\u011b ovocn\u00e1 s typickou p\u0161eni\u010dnou v\u016fn\u00ed.<\/li>\n<li>Na konci b\u0159ezna 2021 v prodeji Velikono\u010dn\u00ed polotmav\u00fd speci\u00e1l 13\u00b0. Spodn\u011b kva\u0161en\u00fd va\u0159en\u00fd na t\u0159i rmuty a chmelen\u00fd pouze \u017dateck\u00fdm poloran\u00fdm \u010derve\u0148\u00e1kem.<\/li>\n<li>V srpnu 2020 novinka &#8211; Summer Ale 9,7% EPM. Svrchn\u011b kva\u0161en\u00e9 pivo stylu Pale Ale. Letn\u00ed varianta tohoto pivn\u00edho stylu v tomto pod\u00e1n\u00ed byla charakteristick\u00e1 svou v\u00fdraznou v\u016fn\u00ed po americk\u00e9 chmelov\u00e9 odr\u016fd\u011b Citra. Su\u0161\u0161\u00ed t\u011blo, studen\u00e9 chmelen\u00ed a n\u00edzk\u00e1 stup\u0148ovitost d\u011blaly z tohoto piva opravdov\u00e9 osv\u011b\u017een\u00ed.<\/li>\n<li>Dne 24.1.2020 v restauraci Starob\u011blsk\u00e1 Koliba na \u010depu cel\u00fd sortiment: Starob\u011blsk\u00e1 v\u00fd\u010depn\u00ed 10\u00b0, Starob\u011blsk\u00fd le\u017e\u00e1k 12\u00b0, \u010cern\u00fd \u010d\u00e1p 13\u00b0, Starob\u011blsk\u00fd Majster 14\u00b0 polotmav\u00e9, IPA 15\u00b0 a Vi\u0161\u0148ov\u00e1 10\u00b0.<\/li>\n<li>V b\u0159eznu 2019 prvn\u00ed svrchn\u011b kva\u0161en\u00e9 pivo &#8211;&nbsp; Fresh IPA 15 %. Jednalo se o spodn\u011b kva\u0161en\u00fd tmav\u00fd speci\u00e1l, kter\u00fd je pro z\u00e1kazn\u00edky, kte\u0159\u00ed dok\u00e1\u017e\u00ed ocenit kvalitn\u00ed \u010dern\u00e1 piva vyroben\u00e1 ze speci\u00e1ln\u00edch slad\u016f. Celkem byla receptura slo\u017eena ze 7 druh\u016f sladu a dvou druh\u016f chmele. Jmenuje se Starob\u011blsk\u00fd le\u017e\u00e1k a poch\u00e1z\u00ed z nov\u00e9ho rodinn\u00e9ho pivovaru, kter\u00fd s\u00eddl\u00ed v budov\u011b b\u00fdval\u00e9 prodejny aut na doln\u00edm konci obce. \u201eJezdil jsem kolem toho zpustl\u00e9ho, pr\u00e1zdn\u00e9ho objektu. Napadlo m\u011b koupit ho pro firmu a p\u0159esunout sem \u010d\u00e1st v\u00fdroby sou\u010d\u00e1stek pro auta. Jen\u017ee nakonec se mi to zd\u00e1lo nepraktick\u00e9 &#8211; t\u0159\u00ed\u0161tit v\u00fdrobu, kdy\u017e m\u00e1me pobo\u010dky ve Fr\u00fddlantu nad Ostravic\u00ed a v Humpolci. A tak je z toho pivovar,\u201c popisuje vznik pivovaru jeho zakladatel a mana\u017eer akciov\u00e9 spole\u010dnosti Lakum Pavel Kuchta. \u201eByl to spole\u010dn\u00fd n\u00e1pad m\u011b a m\u00e9 \u017eeny. Cht\u011bla mi ud\u011blat radost, proto\u017ee m\u00e1m pivo moc r\u00e1d, tak \u0159ekla: Postav si pivovar.\u201c Jako vtip, ale j\u00e1 jsem to vzal v\u00e1\u017en\u011b. My m\u00e1me ve firm\u011b i z\u00e1vod v Humpolci a ten soused\u00ed s pivovarem Bernard. Chod\u00edm tam na exkurze a pro pivo, zn\u00e1m se s lidmi, kte\u0159\u00ed tam d\u011blaj\u00ed. Tak jsem se zeptal, zda by mi do pivovaru, pokud si ho koup\u00edm, dod\u00e1vali jejich suroviny \u2013 slad, kvasnice, chmel. O tamn\u00edm pivovaru je zn\u00e1mo, \u017ee v n\u011bm pou\u017e\u00edvaj\u00ed ty nejlep\u0161\u00ed suroviny, kter\u00e9 jsou k dost\u00e1n\u00ed. Maj\u00ed vlastn\u00ed sladovnu i v\u00fdrobu kvasnic. A tak v\u0161e pot\u0159ebn\u00e9 kupujeme z Humpolce. A vodu? Bereme starob\u011blskou. Je tak dobr\u00e1, \u017ee s n\u00ed nen\u00ed pot\u0159eba nic d\u011blat. V\u0161ichni, kdo na\u0161e pivo ochutnali, jej chv\u00e1lili. Psali o n\u00e1s i v novin\u00e1ch a recenze zat\u00edm vych\u00e1zej\u00ed velice dob\u0159e. Jak dlouh\u00e1 byla cesta od n\u00e1padu k prvn\u00ed v\u00e1rce? Rozhodli jsme se loni v listopadu, na konci lo\u0148sk\u00e9ho roku jsme pivovar objednali, v \u010dervnu jsme ukon\u010dili mont\u00e1\u017e a uva\u0159ili prvn\u00ed zku\u0161ebn\u00ed s\u00e9rii. Jak jste z\u00edskali sl\u00e1dka? Sehnat sl\u00e1dka, to je dost slo\u017eit\u00e1 z\u00e1le\u017eitost. D\u00e1val jsem inzer\u00e1ty, ale nikdo se nep\u0159ihl\u00e1sil, tak jsem nakonec p\u0159emluvil sl\u00e1dka z jednoho minipivovaru v Ostrav\u011b, jestli by mi nepomohl \u2013 a pom\u00e1h\u00e1. Jednou za \u010dtrn\u00e1ct dn\u00ed p\u0159ijde a uva\u0159\u00ed pivo. O v\u0161e ostatn\u00ed se star\u00e1me sami. Jak\u00fd Starob\u011blsk\u00fd le\u017e\u00e1k je? Vyr\u00e1b\u00edme dvan\u00e1ctku le\u017e\u00e1k a chceme d\u00e1l d\u011blat jen tohle pivo, dvan\u00e1ctka se pije nejv\u00edc a ka\u017ed\u00fd piva\u0159 ji ocen\u00ed. Dvakr\u00e1t t\u0159ikr\u00e1t do roka uva\u0159\u00edme v\u00edcestup\u0148ov\u00fd sv\u011btl\u00fd le\u017e\u00e1k speci\u00e1l \u2013 na V\u00e1noce, Velikonoce, na pou\u0165. Brusinkov\u00e1, citronov\u00e1, pomeran\u010dov\u00e1 a medov\u00e1 piva, to pro m\u011b nejsou piva. Pivo m\u00e1 b\u00fdt pivo, a jestli n\u011bkdo chce, a\u0165 si do toho d\u00e1 sirup. V\u011bdom\u011b d\u011bl\u00e1me ho\u0159k\u00e9 pivo, Ostrava je zn\u00e1m\u00e1 t\u00edm, \u017ee pije ho\u0159k\u00e1 piva. Ostravar je ho\u0159k\u00fd, Radegast je ho\u0159k\u00fd, Starob\u011blsk\u00fd le\u017e\u00e1k taky. Vyr\u00e1b\u00edme podle starobyl\u00e9ho receptu, kter\u00fd jsem sehnal na Slovensku. Sl\u00e1dek va\u0159\u00ed pivo p\u0159esn\u011b podle n\u011bj, zachov\u00e1v\u00e1me v\u0161echny doby le\u017een\u00ed a v\u00fdroby piva: jeden den va\u0159\u00edme, sedm a\u017e deset dn\u00ed pivo kvas\u00ed a devades\u00e1t dn\u00ed le\u017e\u00ed. Pro n\u00e1s je d\u016fle\u017eit\u00e1 opakovatelnost, abychom v\u017edycky uva\u0159ili stejn\u00e9 pivo. To znamen\u00e1 nejp\u0159\u00edsn\u011bj\u0161\u00ed dodr\u017een\u00ed v\u0161ech technologick\u00fdch postup\u016f a hygieny. Ka\u017ed\u00e9 pivo, kter\u00e9 se vyrob\u00ed, je nefiltrovan\u00e9, z\u00e1kal jsou kvasinky &#8211; cel\u00e9 spektrum vitam\u00ednu B. Nefiltrovan\u00e9 je tedy zdrav\u011bj\u0161\u00ed. Pro ty, kte\u0159\u00ed to tak necht\u011bj\u00ed, pivo i filtrujeme \u2013 pou\u017e\u00edv\u00e1me k\u0159emelinov\u00fd filtr. Pivo v\u0161ak nepasterizujeme. Jak\u00e1 byla prvn\u00ed zku\u0161ebn\u00ed \u010dervnov\u00e1 v\u00e1rka? M\u011bli jste tr\u00e9mu, obavu o v\u00fdsledek? O\u010dek\u00e1vali jsme, \u017ee ji vylijeme. A ona se poda\u0159ila. A nevylili jsme zat\u00edm nic. V\u0161echno, co jsme vyrobili, se vypilo. J\u00e1 jsem m\u011bl p\u016fvodn\u011b receptur v\u00edce, tak\u017ee jsme napoprv\u00e9 uva\u0159ili t\u0159i receptury. Nechali jsme je le\u017eet a v z\u00e1\u0159\u00ed jsme ud\u011blali ko\u0161t piv \u2013 k ve\u0159ejn\u00e9mu ochutn\u00e1v\u00e1n\u00ed jsme dali v\u0161echny t\u0159i druhy a lid\u00e9 se v anket\u011b vyjad\u0159ovali, jak se jim jev\u00ed. Podle toho jsme se rozhodli pro sou\u010dasn\u00fd recept. Kde se d\u00e1 sehnat osv\u011bd\u010den\u00fd recept na pivo? Ono to nen\u00ed v\u00fdrobn\u00ed tajemstv\u00ed? Kdy\u017e jsem pivovar stav\u011bl, byl jsem po\u0159\u00e1d bez receptu. Pak jsme hr\u00e1li na Slovensku basketbal, kousek od Pre\u0161ova, tam byl mal\u00fd pivovar a v n\u011bm v\u00fdborn\u00e9 pivo. Tak jsem byl za majitelem, jestli by mi nedal recept. Nevid\u011bl ve mn\u011b konkurenci, kdy\u017e jsem z takov\u00e9 d\u00e1lky, tak mi poradil \u2013 v\u010detn\u011b toho, a\u0165 beru v\u0161echny suroviny z Humpolce. Kde je starob\u011blsk\u00e9 pivo k sehn\u00e1n\u00ed? Z\u00e1sobujeme dv\u011b hospody, pro v\u00edce z\u00e1jemc\u016f zat\u00edm pivo nem\u00e1me. Nejprve jsme za\u010dali prod\u00e1vat U Mat\u011bje, ohlasy byly tak dobr\u00e9, \u017ee p\u0159ed\u010dily i na\u0161e optimistick\u00e9 p\u0159edstavy. Cht\u011bl jsem tady ud\u011blat hospodu, kde by se \u010depovalo p\u0159ev\u00e1\u017en\u011b na\u0161e pivo. Naskytla se mo\u017enost pronajmout si Katolick\u00fd d\u016fm, tak jsem toho vyu\u017eil. Katolick\u00fd d\u016fm je te\u010f na\u0161e pivovarsk\u00e1 hospoda. Chyst\u00e1me \u00fapravy venku i vevnit\u0159, aby prost\u0159ed\u00ed bylo hez\u010d\u00ed, p\u0159\u00edjemn\u011bj\u0161\u00ed a host\u00e9 se tam c\u00edtili dob\u0159e. Na\u0161e vize do budoucna je m\u00edt v p\u0159\u00edzem\u00ed pivnici, naho\u0159e neku\u0159\u00e1ckou restauraci a venku atrakce pro d\u011bti. Moje my\u0161lenka je, \u017ee d\u011bti mus\u00ed p\u0159emlouvat rodi\u010de k n\u00e1v\u0161t\u011bv\u011b pivovarsk\u00e9 restaurace. Katolick\u00fd d\u016fm byl v\u017edy centrem d\u011bn\u00ed ve Star\u00e9 B\u011bl\u00e9 a te\u010f to n\u011bjak upadlo. Tak bychom zase r\u00e1di obnovili jeho v\u00fdznam. Za\u010dala plesov\u00e1 sezona, do pivnice v Katolick\u00e9m dom\u011b ur\u010dit\u011b p\u0159ijdou i n\u00e1v\u0161t\u011bvn\u00edci ples\u016f, bude dost z\u00e1sob? Od po\u010d\u00e1tku ledna a\u017e do konce b\u0159ezna je tam ka\u017ed\u00fd p\u00e1tek a sobotu ples. Jsme p\u0159ipraveni. A na n\u011bkter\u00e9 plesy d\u00e1me pivo i jako d\u00e1rek do tomboly. Katolick\u00fd d\u016fm je na\u0161e pivovarsk\u00e1 hospoda, tam bude na\u0161e pivo v\u017edy na \u010depu. D\u00e1 se starob\u011blsk\u00e9 pivo koupit i v lahvi? Ned\u00e1, m\u00e1me v\u0161ak izolovan\u00e9 soudky, kter\u00e9 udr\u017e\u00ed pivo v optim\u00e1ln\u00ed teplot\u011b a\u017e 24 hodin. Jsou o objemu 5, 10, 15, 20 a 25 litr\u016f &#8211; pro okol\u00ed, kdyby cht\u011bl n\u011bkdo na zahradu. Pivo vypije, soudky vr\u00e1t\u00ed. Ze soudku je pivo opravdu dobr\u00e9 a nav\u00edc k n\u011bmu nen\u00ed pot\u0159eba m\u00edt v\u00fd\u010depn\u00ed za\u0159\u00edzen\u00ed. Pivo se \u010depuje samosp\u00e1dem pomoc\u00ed ventilu. K tomuto \u00fa\u010delu jsou tyto soudky speci\u00e1ln\u011b vyroben\u00e9, tak\u017ee kdy\u017e \u010dlov\u011bk chce, prost\u011b si na\u010depuje. S lahvemi je to slo\u017eit\u00e9, ud\u011blat tady distribuci s mal\u00fdmi vratn\u00fdmi lahvemi, to je t\u00e9m\u011b\u0159 nemo\u017en\u00e9 \u2013 sb\u011br, um\u00fdv\u00e1n\u00ed, hygiena&#8230; Z\u0159\u00eddili jste si rodinn\u00fd pivovar, co va\u0161e rodinn\u00e9 oslavy \u2013 u\u017e p\u0159\u00edbuzn\u00ed a zn\u00e1m\u00ed hodnotili, co s man\u017eelkou va\u0159\u00edte? U n\u00e1s u\u017e se nepije nic jin\u00e9ho. A v\u0161em chutn\u00e1. Je to dobrodru\u017en\u00e9 d\u011blat pivo? Je to v\u00fdzva, n\u011bco nov\u00e9ho, co n\u00e1s nesm\u00edrn\u011b bav\u00ed. Pro n\u00e1s je to sp\u00ed\u0161e kon\u00ed\u010dek a hobby. Pom\u00e1h\u00e1 cel\u00e1 rodina. A vyplat\u00ed se to v\u016fbec? Tohle pro n\u00e1s nen\u00ed prioritou, na\u0161e pivo je t\u00e9m\u011b\u0159 za v\u00fdrobn\u00ed n\u00e1klady. P\u0159\u00edmo v hospod\u011b je dvan\u00e1ctka za 19 korun, co\u017e je o 30-40% m\u00e9n\u011b ne\u017e je b\u011b\u017en\u00e9 a a\u017e o 50% m\u00e9n\u011b ne\u017e je b\u011b\u017en\u00e9 u piva z mal\u00fdch pivovar\u016f, jako m\u00e1me my. Va\u0159it pivo je nev\u0161edn\u00ed v\u011bc, st\u00e1v\u00e1 se, \u017ee m\u011b lidi, kter\u00e9 zn\u00e1m jen od vid\u011bn\u00ed, na ulici pozdrav\u00ed a pivo pochv\u00e1l\u00ed. To mi d\u011bl\u00e1 obrovskou radost. P\u0159ipad\u00e1 mi skv\u011bl\u00e9 m\u00edt ve Star\u00e9 B\u011bl\u00e9 n\u011bco charakteristick\u00e9ho a na\u0161eho &#8211; Starob\u011blsk\u00fd pivovar. M\u00e1m pocit, \u017ee n\u00e1s to tady stmeluje. Proto na chu\u0165 samotn\u00e9ho piva a dodr\u017eov\u00e1n\u00ed p\u0159esn\u00e9ho technologick\u00e9ho postupu jeho v\u00fdroby velice db\u00e1m.
