Na \u010depu byl Javo\u0159ick\u00fd sv\u011btl\u00fd le\u017e\u00e1k, Javo\u0159ick\u00e9 v\u00fd\u010depn\u00ed a Javo\u0159ick\u00e1 p\u0161enice.<\/li>\n<\/ul>\n<p><u>Star\u0161\u00ed info:<\/u><br \/>\nSe stavbou za\u0159\u00edzen\u00ed na va\u0159en\u00ed piva a odbornou radou p\u0159i va\u0159en\u00ed piva zde pomohl pan Rambousek z Hradce Kr\u00e1lov\u00e9. Piva je vyr\u00e1b\u011bno klasick\u00fdm varn\u00edm zp\u016fsobem. Kva\u0161en\u00ed prob\u00edh\u00e1 v otev\u0159en\u00fdch spilk\u00e1ch a zr\u00e1n\u00ed (le\u017een\u00ed) v tanc\u00edch um\u00edstn\u011bn\u00fdch v le\u017e\u00e1ck\u00e9m sklep\u011b. Piva jsou nefiltrovan\u00e1 a nepasterovan\u00e1. V lednu 2008 zde fungovala varna na 100 litr\u016f, ale u\u017e byla vyrobena 200 litrov\u00e1, kter\u00e1 m\u011bla b\u00fdt instalov\u00e1na na ja\u0159e 2008. Pivo zat\u00edm zr\u00e1lo p\u0159\u00edmo v sudech ve vychlazen\u00e9 m\u00edstnosti. Ale i to se m\u011blo zm\u011bnit, brzy zde m\u011bly b\u00fdt 450 litrov\u00e9 stojat\u00e9 tanky. Ro\u010dn\u00ed kapacita byla 80 hektolitr\u016f piva.<br \/>\nNa po\u010d\u00e1tku roku 2008 va\u0159\u00edli 3 druhy piva:<br \/>\n&#8211; sv\u011btl\u00fd Javo\u0159ick\u00fd le\u017e\u00e1k s v\u00fdraznou ho\u0159kost\u00ed, po staru dvan\u00e1ctka. Obsah alkoholu je 5% objemov\u00fdch.<br \/>\n&#8211; sv\u011btl\u00fd Javo\u0159ick\u00fd speci\u00e1l &#8211; 13\u00b0- 15\u00b0(d\u0159\u00edve ozna\u010dov\u00e1no jako \u010dtrn\u00e1ctka), obsah alkoholu 5.9% objemov\u00fdch<br \/>\n&#8211; polotmav\u00fd Javo\u0159ick\u00fd speci\u00e1l s v\u00fdraznou sladovou p\u0159\u00edchut\u00ed a gran\u00e1tovou barvou, 13\u00b0-15\u00b0, obsah alkoholu 5.9% objemov\u00fdch<\/p>\n<p>Zat\u00edm zde m\u011bli jen etikety na l\u00e1hve. Pivo dod\u00e1vali jen do hostince U l\u00edpy, kter\u00fd najdete ve vesni\u010dce Zborn\u00e1 u Jihlavy.<br \/>\nV malink\u00e9m pivovaru v Horn\u00edch Dub\u00e9nk\u00e1ch va\u0159il pivo u\u017e t\u0159et\u00ed rok truhl\u00e1\u0159 Milan Kozl\u00ed\u010dek z Jihlavy. Jeho pivo je oce\u0148ovanou raritou vyhled\u00e1vanou fajn\u0161mekry. Koupit jej lze jen na objedn\u00e1vku v pivov\u00e1rku a na Vyso\u010din\u011b jej zat\u00edm \u010depoval v \u010dervnu 2009 jen hostinec ve Zborn\u00e9. Zato v den \u010depu Kozl\u00ed\u010dka tam b\u00fdv\u00e1 doslova p\u0159epln\u011bno. Kozl\u00ed\u010dek p\u0159itom pivo poprv\u00e9 va\u0159il v roce 2005 \u2013 doma v kastrolech.<br \/>\n* Jak jste ho tehdy p\u0159ipravil?<br \/>\n\u010clov\u011bk si nech\u00e1 se\u0161rotovat slad, m\u011bl jsem ho z jihlavsk\u00e9ho pivovaru. Je tam ur\u010dit\u00fd v\u00fdrobn\u00ed postup, kter\u00fd nen\u00ed tajn\u00fd. Pak se ale naraz\u00ed na technick\u00e9 obt\u00ed\u017ee souvisej\u00edc\u00ed s teplotou, kterou je t\u0159eba dodr\u017eovat p\u0159i kva\u0161en\u00ed a le\u017een\u00ed. P\u0159i kva\u0161en\u00ed se kvasinky r\u016fzn\u011b chovaj\u00ed a maj\u00ed z\u00e1sadn\u00ed vliv na chu\u0165 piva. P\u0159i le\u017een\u00ed piva mus\u00ed taky b\u00fdt zabezpe\u010den\u00fd takzvan\u00fd hrad\u00edc\u00ed p\u0159etlak, aby pivo bylo spr\u00e1vn\u011b nasycen\u00e9 a dr\u017eela na n\u011bm p\u011bna.<br \/>\n* Toho se d\u00e1 v hrnc\u00edch dos\u00e1hnout?<br \/>\nTo pr\u00e1v\u011b ned\u00e1. Na za\u010d\u00e1tc\u00edch mi t\u0159eba pivo vyp\u011bnilo po otev\u0159en\u00ed z lahv\u00ed. Ale nezdary m\u011b p\u0159im\u011bly, abych se do toho po\u0159\u00e1dn\u011b zakousl.<br \/>\n* Co v\u00e1s k va\u0159en\u00ed piva p\u0159im\u011blo?<br \/>\nNa za\u010d\u00e1tku byla snaha vyzkou\u0161et, jestli se d\u00e1 pivo uva\u0159it v dom\u00e1c\u00edch podm\u00ednk\u00e1ch, jak za\u010d\u00ednala asi v\u011bt\u0161ina lid\u00ed. Postupn\u011b jsem zji\u0161\u0165oval, \u017ee hrnce nejsou to prav\u00e9. Dal\u0161\u00ed v\u00e1rky jsem d\u00e1val ochutnat kamar\u00e1d\u016fm. Zjistil jsem, \u017ee pivo nen\u00ed \u0161patn\u00e9, povzbudili m\u011b. Domluvil jsem si sch\u016fzku s majitelem mal\u00e9ho pivovaru panem Rambouskem z Hradce Kr\u00e1lov\u00e9. Ten mi dal ledovou sprchu: na rovinu mi \u0159ekl, \u017ee jestli to chci d\u011blat, jak se m\u00e1, tak to mus\u00edm d\u011blat se v\u0161\u00edm v\u0161udy, leg\u00e1ln\u011b, co\u017e obn\u00e1\u0161\u00ed ale i vy\u0159\u00edzen\u00ed ve\u0161ker\u00fdch \u00fa\u0159edn\u00edch povolen\u00ed. Postupn\u011b jsem to dal dohromady a za\u010d\u00e1tkem roku 2007 za\u010dal pivo ofici\u00e1ln\u011b va\u0159it. Po\u0159\u00e1d v mal\u00e9m, ale u\u017e ofici\u00e1ln\u011b. Popt\u00e1vku nesta\u010d\u00edm uspokojit, ale ned\u00e1 se nic d\u011blat, v\u00edc zat\u00edm vyrobit nem\u016f\u017eu.<br \/>\n* Kolik piva ro\u010dn\u011b uva\u0159\u00edte?<br \/>\nTe\u010f je to kolem stovky hektolitr\u016f. S druhou kvasnou n\u00e1dr\u017e\u00ed se to mo\u017en\u00e1 trochu zvedne, ale jak se to d\u011bl\u00e1 jen o v\u00edkendech, nejste schopen v\u00edc zvl\u00e1dat. Nejde jen o uva\u0159en\u00ed, ale je t\u0159eba taky \u010distit a dezinfikovat za\u0159\u00edzen\u00ed a lahve, plnit lahve&#8230;<br \/>\n* Nechcete vyr\u00e1b\u011bt v\u00edc, kdy\u017e z\u00e1jem stoup\u00e1?<br \/>\nJedna diplomantka z Vysok\u00e9 \u0161koly zem\u011bd\u011blsk\u00e9 z katedry staveb bude d\u011blat diplomovou pr\u00e1ci na t\u00e9ma modernizace m\u00e9ho pivovaru. Tak jsem zv\u011bdav\u00fd, co z toho vyjde, proto\u017ee sou\u010d\u00e1st\u00ed by m\u011bla b\u00fdt i anal\u00fdza rizik a v\u00fdhod. Pak budu chyt\u0159ej\u0161\u00ed, jestli do toho j\u00edt, nebo nej\u00edt. Zat\u00edm chci pokra\u010dovat jako dosud, s t\u00edm, \u017ee kdy\u017e se n\u011bco vyd\u011bl\u00e1, zase to do pivovaru zp\u00e1tky vlo\u017e\u00edm.<br \/>\n* P\u0159esto pl\u00e1nujete zm\u011bny, d\u00edky kter\u00fdm budete moci vyr\u00e1b\u011bt piva op\u011bt o n\u011bco v\u00edc, o co se jedn\u00e1?<br \/>\nM\u00e1m zadanou v\u00fdrobu druh\u00e9 kvasn\u00e9 k\u00e1d\u011b na kva\u0161en\u00ed, abych byl schopen kvasit v\u00edc a t\u00edm p\u00e1dem o n\u011bco nav\u00fd\u0161it v\u00fdstav. On nen\u00ed probl\u00e9m pivo uva\u0159it, ale probl\u00e9m je, aby m\u011blo kde kvasit a zr\u00e1t. Mus\u00ed na to b\u00fdt n\u00e1dr\u017ee z potravin\u00e1\u0159sk\u00e9 nerezi, kter\u00e9 mus\u00ed odpov\u00eddat potravin\u00e1\u0159sk\u00fdm po\u017eadavk\u016fm, to nen\u00ed levn\u00e1 z\u00e1le\u017eitost. V tom tkv\u00ed to hlavn\u00ed, proto\u017ee pivo kvas\u00ed osm a\u017e deset dn\u00ed, a\u017e dos\u00e1hne stup\u0148ovitosti n\u011bjak\u00e9 dvan\u00e1ctky. Pak je je\u0161t\u011b v le\u017e\u00e1ck\u00e9m sklep\u011b, kde p\u0159i ur\u010dit\u00e9 teplot\u011b dozr\u00e1v\u00e1, ne\u017e se d\u00e1 st\u00e1\u010det do sud\u016f nebo lahv\u00ed.<br \/>\n* Pivov\u00e1rek m\u00e1te v Horn\u00edch Dub\u00e9nk\u00e1ch, co\u017e je obec na okraji Javo\u0159ick\u00fdch vrch\u016f, kde je tradi\u010dn\u011b roz\u0161\u00ed\u0159en\u00e1 turistika a tramping. Kdy\u017e se n\u011bkdo z kolemjdouc\u00edch u v\u00e1s dnes zastav\u00ed, m\u016f\u017ee si tam pivo d\u00e1t?<br \/>\nZat\u00edm to nen\u00ed mo\u017en\u00e9. Kv\u016fli kapacit\u011b sklep\u016f v pivovaru si to zat\u00edm nem\u016f\u017eu dovolit. J\u00e1 jsem na za\u010d\u00e1tku v\u016fbec nepl\u00e1noval, \u017ee by se to n\u011bjak takhle rozjelo, tak\u017ee jsem ani nepl\u00e1noval otev\u0159en\u00ed n\u011bjak\u00e9ho v\u00fd\u010depu. Kdy\u017e si lidi zavolaj\u00ed dop\u0159edu, jsem jim schopen p\u0159ipravit lahvov\u00e9 pivo. To ale t\u0159eba pro cyklisty nen\u00ed praktick\u00e9, proto\u017ee d\u00e1v\u00e1mpivo do z\u00e1lohovan\u00fdch dvoulitrov\u00fdch sklen\u011bn\u00fdch lahv\u00ed. Na p\u0159\u00ed\u0161t\u00ed rok chci ale ud\u011blat st\u00e1\u010den\u00ed do p\u0159ijateln\u011bj\u0161\u00edch lahv\u00ed. D\u011bl\u00e1 se mi sice hus\u00ed k\u016f\u017ee z PET lahv\u00ed, ale pro cyklistu, kter\u00fd m\u016f\u017ee tu l\u00e1hev n\u011bkde pak hodit do kontejneru, je to v\u00fdhodn\u00e9.<br \/>\n* Pl\u00e1nujete, \u017ee n\u011bkdy opust\u00edte sou\u010dasn\u00e9 zam\u011bstn\u00e1n\u00ed v truhla\u0159in\u011b a budete se \u017eivit jen va\u0159en\u00edm piva?<br \/>\nSp\u00ed\u0161 bych cht\u011bl, aby to prom\u011b z\u016fstalo jako kon\u00ed\u010dek. Aby to bylo \u017eivotaschopn\u00e9 a u\u017eivilo to \u010dlov\u011bka, musel by b\u00fdt v\u00fdstav piva kolem 500 hektolitr\u016f ro\u010dn\u011b, co\u017e odpov\u00edd\u00e1 standardn\u00edmu minipivovaru s v\u00fd\u010depem nebo restaurac\u00ed. Proto\u017ee se ale nechci pou\u0161t\u011bt do n\u011bjak\u00fdch \u00fav\u011br\u016f, cht\u011bl bych to d\u011blat bez dluh\u016f \u2013 na co si vyd\u011bl\u00e1m, to se po\u0159\u00edd\u00ed.<br \/>\n* Jste schopen uva\u0159it ka\u017edou v\u00e1rku piva stejnou?<br \/>\nV\u011bt\u0161inou chutn\u00e1 stejn\u011b, ale samoz\u0159ejm\u011b tammohou b\u00fdt odchylky. Z\u00e1le\u017e\u00ed na surovin\u00e1ch i na procesu kva\u0161en\u00ed. Laik to ale mysl\u00edm bez anal\u00fdzy nepozn\u00e1.<br \/>\n* Usp\u011blo va\u0161e pivo v sout\u011b\u017e\u00edch?<br \/>\nZe sout\u011b\u017e\u00ed, kter\u00fdch jsem se zat\u00edm \u00fa\u010dastnil, jsem loni na Jarn\u00ed cen\u011b \u010desk\u00fdch sl\u00e1dk\u016f na pivovarsk\u00e9m dvo\u0159e Zv\u00edkov za dvan\u00e1ctku le\u017e\u00e1k dostal t\u0159et\u00ed m\u00edsto.<br \/>\n* M\u011b zaujalo, \u017ee se v\u00e1m poda\u0159ilo za\u010d\u00edt naprosto od nuly a p\u0159esto velmi rychle uva\u0159it v\u00fdrazn\u00e9 dobr\u00e9 pivo, o kter\u00e9 je velk\u00fd z\u00e1jem, p\u0159esto\u017ee je relativn\u011b m\u00e1lo zn\u00e1m\u00e9. Je to d\u00e1no talentem toho, kdo pivo va\u0159\u00ed?<br \/>\nJe to sp\u00ed\u0161 t\u00edm, \u017ee se pivo d\u011bl\u00e1 poctiv\u011b, jak se m\u00e1 d\u011blat, nejsou tam snahy o rychl\u00e9 zbohatnut\u00ed, nebo \u2013 jak to nazvat? \u2013 n\u011bjak to o\u0161idit. Dobr\u00e9 pivo je schopn\u00fd uva\u0159it kdekdo, kdy\u017e bude dodr\u017eovat ur\u010dit\u00e9 z\u00e1sady. D\u016fle\u017eit\u00e9 jsou kvalitn\u00ed suroviny a voda. Pak je to jen o tom, dot\u00e1hnout to na chu\u0165, jakou si \u010dlov\u011bk p\u0159edstavuje, a naslouchat lidem, jak\u00e9 maj\u00ed po\u017eadavky. Kolikr\u00e1t \u010dlov\u011bk m\u00e1 jakousi svou p\u0159edstavu o chuti, ale zjist\u00ed, \u017ee zrovna o to nen\u00ed a\u017e takov\u00fd z\u00e1jem.
