Po operaci n\u00e1dorov\u00e9ho onemocn\u011bn\u00ed ledvin mu bylo prim\u00e1\u0159em doporu\u010deno p\u00edt pivo. Od t\u00e9 chv\u00edle se za\u010dal zaj\u00edmat nejen o chmelov\u00fd mok jako takov\u00fd, ale jako synek z vina\u0159sk\u00e9ho kraje, i o tajemstv\u00ed v\u00fdroby piva. Zpo\u010d\u00e1tku se zdrojem informac\u00ed stal internet. P\u0159ed \u010dlov\u011bkem, je\u017e l\u00e9ta pivo nepil, se objevil \u00fa\u017easn\u00fd sv\u011bt pivovarnictv\u00ed. Zjistil, \u017ee filtrovan\u00e9 a pasterizovan\u00e9 pivo, ochuzen\u00e9 o vitam\u00edny a chu\u0165 i v\u016fni sice za\u017eene \u017e\u00edze\u0148, ale na zdrav\u00ed asi nep\u0159id\u00e1. Za\u010dal se tedy zab\u00fdvat my\u0161lenkou na v\u00fdrobu vlastn\u00edho piva. Zpo\u010d\u00e1tku, jak u\u017e to tak b\u00fdv\u00e1, vyzkou\u0161el fermentaci z koncentr\u00e1t\u016f. Pivo sice pot\u011b\u0161ilo, ale nenadchlo, touha uva\u0159it si opravdov\u00fd p\u011bniv\u00fd mok klasick\u00fdm zp\u016fsobem je\u0161t\u011b zes\u00edlila. M\u011bl \u0161t\u011bst\u00ed, kdy\u017e zcela n\u00e1hodn\u011b oslovil jednoho z diskutuj\u00edc\u00edch na svetpiva.cz s prosbou o zasl\u00e1n\u00ed sladu, chmele a kvasinek. Byl to sl\u00e1dek Josef Balounek z B\u011bl\u010de, kter\u00fd poslal n\u011bco m\u00e1lo pot\u0159ebn\u00fdch surovin. Tak za\u010dalo nejen nov\u00e9 pivovarnick\u00e9 p\u0159\u00e1telstv\u00ed, ale hlavn\u011b vlastn\u00ed historie v\u00fdroby piva pana Pat\u00e1ka.<br \/>\nV\u00fdrobn\u00ed technologie se nach\u00e1z\u00ed na dvo\u0159e rodinn\u00e9ho domu. Srdce pivovaru tvo\u0159\u00ed nerezov\u00fd elektrick\u00fd varn\u00fd kotel, kter\u00fd slou\u017e\u00ed jako varna. Jako scezovac\u00ed k\u00e1\u010f slou\u017e\u00ed kotlina z dal\u0161\u00edho kotle, pak je tady je\u0161t\u011b nerezov\u00e1 spilka a le\u017e\u00e1ck\u00fd tank um\u00edst\u011bn\u00fd v le\u017e\u00e1ck\u00e9m sklep\u011b.<\/p>\n<p>Pivovar se nach\u00e1z\u00ed pod Kn\u011b\u017e\u00ed Horou (m\u00edstn\u00ed kopec) tak\u017ee se bude va\u0159it Kn\u011b\u017eihorsk\u00e9 pivo, v l\u00e9ka\u0159sk\u00e9m sv\u011bt\u011b bude zn\u00e1m\u00e9 pod zna\u010dkou Grawitz. Co do stup\u0148ovitosti des\u00edtka a dvan\u00e1ctka a ob\u010das i siln\u011bj\u0161\u00ed pive\u010dko pro gurm\u00e1ny. Provozovatel pl\u00e1nuje va\u0159it i tmav\u00e9, pro m\u00e9n\u011b vyvinut\u00e1 d\u011bv\u010data. \u010cepovat se bude ve Bzenci v restauraci Myslivna, kter\u00e1 se nach\u00e1z\u00ed hned v sousedstv\u00ed.<br \/>\nSlavnostn\u00ed otev\u0159en\u00ed prob\u011bhlo 30.6.2007. Slavnosti p\u0159i p\u0159\u00edle\u017eitosti k\u0159tu \u201eK\u0148e\u017eihorsk\u00e9ho piva\u201c se konaly na velk\u00e9m prostranstv\u00ed p\u0159ed restaurac\u00ed Myslivna, kter\u00e1 je m\u00edstem, kde m\u00edstn\u00ed pivo ochutn\u00e1te. P\u0159i otev\u0159en\u00ed se \u010depovala sv\u011btl\u00e1 (15 K\u010d) a tmav\u00e1 des\u00edtka (18 K\u010d).<br \/>\nV restauraci Myslivna v Bzenci jste v srpnu 2007 ochutnali sv\u011btl\u00e9 Kn\u011b\u017eihorsk\u00e9 pivo za 18 K\u010d.<br \/>\nV srpnu 2007 bylo v nab\u00eddce minipivovaru 10% sv\u011btl\u00e9 nefiltrovan\u00e9 Kn\u011b\u017eihorsk\u00e9 pivo a 10% sv\u011btl\u00e9 nefiltrovan\u00e9-z\u00e1zvorov\u00e9 ( toto pivo je ochucen\u00e9 \u010derstv\u00fdm z\u00e1zvorem). Chu\u0165 z\u00e1zvoru v pivu byla velmi decentn\u00ed a p\u0159\u00edjemn\u00e1. Pivo se \u010depovalo v restauraci Myslivna. U\u017e se va\u0159ilo mimo jin\u00e9 tmav\u00e9 a polotmav\u00e9 a i siln\u011bj\u0161\u00ed piva. Technologii si vyrobil pan Pat\u00e1k s\u00e1m, aktu\u00e1ln\u011b ji neust\u00e1le zdokonaloval. Pivo zr\u00e1lo na klasick\u00e9 minispilce a dozr\u00e1valo v KEG sudech. Doba le\u017een\u00ed 10% piva byla minim\u00e1ln\u011b 3 t\u00fddny.<br \/>\nV minipivovaru prob\u00edhala na konci roku 2007 v\u00fdstavba-roz\u0161\u00ed\u0159en\u00ed chlad\u00edc\u00edch prostor, speci\u00e1ln\u00ed pivo na v\u00e1noce se tud\u00ed\u017e nep\u0159ipravovalo.<br \/>\nDom\u00e1c\u00ed v\u00fdrobce Radomil Pat\u00e1k dod\u00e1val pivo v roce 2007 zat\u00edm jen soused\u016fm a zn\u00e1m\u00fdm a do restaurace, kter\u00e1 s\u00eddlila p\u0159es ulici. M\u011bl ale vy\u0161\u0161\u00ed ambice. Chystal se roz\u0161\u00ed\u0159it v\u00fdrobu a zv\u00fd\u0161it kapacitu. Nov\u00e9 odb\u011bratele mu mo\u017en\u00e1 z\u00edskali pr\u00e1v\u011b spokojen\u00ed zn\u00e1m\u00ed. \u201eNepiji nic jin\u00e9ho. Pravideln\u011b si doj\u00ed\u017ed\u00edm pro z\u00e1sobu. D\u011bl\u00e1m v\u0161e pro to, abych m\u011bl i u n\u00e1s hospodu, kam bych si mohl na Kn\u011b\u017eihorsk\u00e9 zaj\u00edt,\u201c pl\u00e1noval Miroslav Somr z Vracova.<br \/>\nV Bzenci se p\u0159i slavnosti prvn\u00edho v\u00fdro\u010d\u00ed minipivovaru v \u010dervnu 2008 to\u010dilo se sv\u011btl\u00e9, polotmav\u00e9, tmav\u00e9, z\u00e1zvorov\u00e9 a medov\u00e9, v\u0161e 12\u00b0<br \/>\nKn\u011b\u017eihorsk\u00e9 pivo se na po\u010d\u00e1tku roku 2009 nab\u00edzelo pouze v Hosp\u016fdce u Lok\u00e1lky, p\u0159\u00edmo naproti bzeneck\u00e9ho vlakov\u00e9ho n\u00e1dra\u017e\u00ed. M\u011bli tam Kn\u011b\u017eihorskou kvasnicovou dvan\u00e1ctku za velmi p\u0159\u00edjemn\u00fdch 19 korun. Vlastn\u00ed p\u016fllitry pan Pat\u00e1k moment\u00e1ln\u011b nem\u011bl k dispozici.<br \/>\nV dubnu 2010 byla v restauraci U Lok\u00e1lky v Bzenci nab\u00edzena zdej\u0161\u00ed Kn\u011b\u017eihorsk\u00e1 jeden\u00e1ctka za 20 K\u010d.<br \/>\nMinipivovar v listopadu 2010 nab\u00edzel v hostinci U lok\u00e1lky sv\u011btlou dvan\u00e1ctku za 20 K\u010d.<br \/>\n\u201eZ\u00e1jem z\u00e1kazn\u00edk\u016f neust\u00e1le roste, ov\u0161em v\u00fdstav m\u00e9ho pivovaru je omezen. Do budoucna v\u0161ak na tom nehodl\u00e1m nic m\u011bnit,\u201c vysv\u011btlil v b\u0159eznu 2011 majitel minipivovaru Radomil Pat\u00e1k.<br \/>\nMinipivovar v b\u0159eznu 2011 nab\u00edzel v restauraci U lok\u00e1lky v Bzenci pivo Kn\u011b\u017eihorsk\u00e9 11\u00b0 za 22 K\u010d.<br \/>\nNa slavnost v \u010dervenci 2011 sl\u00e1dek nava\u0159il mj.speci\u00e1ln\u00ed pivo k\u0159enov\u00e9 a p\u0161eni\u010dn\u00e9 s koriandrem.<br \/>\n\u201eVa\u0159\u00edme z moravsk\u00fdch surovin, a to polotmav\u00e1 piva z je\u010dmenn\u00e9ho sladu, po v\u011bt\u0161inu roku dvan\u00e1ctistup\u0148ov\u00e1. V l\u00e9t\u011b va\u0159\u00edme tak\u00e9 piva bylinkov\u00e1, v\u017edy z p\u0159\u00edrodn\u00edch surovin, a tak\u00e9 piva p\u0161eni\u010dn\u00e1 a \u017eitn\u00e1, v zim\u011b pak siln\u011bj\u0161\u00ed tmav\u00e1 piva,\u201d uvedl na podzim 2011 majitel bzeneck\u00e9ho pivovaru Radomil Pat\u00e1k s t\u00edm, \u017ee na Silvestra p\u0159ipravuje speci\u00e1ln\u00ed sedmn\u00e1ctistup\u0148ov\u00e9 pivo. Kn\u011b\u017eihorsk\u00e9 pivo obsahuje vysok\u00fd pod\u00edl \u017eiv\u00fdch kvasinek z p\u016fvodn\u00edho hlavn\u00edho kva\u0161en\u00ed, vitam\u00edny, miner\u00e1ly a stopov\u00e9 prvky. \u201eNav\u00edc nen\u00ed ochuzeno filtrov\u00e1n\u00edm, nen\u00ed ani pasterizovan\u00e9 \u010di konzervovan\u00e9 a neobsahuje ani p\u0159\u00eddavek pod\u00edlu rozkva\u0161en\u00e9 mladiny,\u201d uvedl bzeneck\u00fd sl\u00e1dek. O v\u00fd\u010depu bzeneck\u00e9ho piva ale neuva\u017eoval. \u201eV\u011bt\u0161ina hostinsk\u00fdch m\u00e1 smlouvy s velk\u00fdmi pivovary, aby ne\u010depovali jin\u00e9 pivo,\u201d vysv\u011btlil Pat\u00e1k.<br \/>\nV lednu 2012 jste pivo Kn\u011b\u017eihorsk\u00e9 12\u00b0 za 22 K\u010d mohli ochutnat v bzeneck\u00e9 restauraci U Lok\u00e1lky.<br \/>\nV restauraci U Lok\u00e1lky byla v polovin\u011b dubna nab\u00edzena Kn\u011b\u017eihorsk\u00e1 12\u00b0 (0,5 l za 23 K\u010d).<br \/>\nV hosp\u016fdce U Lok\u00e1lky to\u010dili v \u010dervnu 2012 sv\u011btl\u00e9 Kn\u011b\u017eihorsk\u00e9 12\u00b0 za 23 K\u010d.<br \/>\nOp\u011bt nov\u00fd druh piva uva\u0159il pivovarn\u00edk Radomil Pat\u00e1k ze Bzence pro tradi\u010dn\u00ed Slavnosti P\u0159\u00e1tel Kn\u011b\u017e\u00ed hory. N\u00e1v\u0161t\u011bvn\u00edci se mohli posledn\u00ed den v \u010dervnu 2012 t\u011b\u0161it na tradi\u010dn\u00ed druhy, jako tmav\u00e9, sv\u011btl\u00e9, \u010di medov\u00e9 pivo, ale i netradi\u010dn\u00ed, p\u0159esto velmi \u017e\u00e1dan\u00e9 \u2013 kozi\u010dkov\u00e9. \u201eMn\u011b osobn\u011b nechutn\u00e1, ale lid\u00e9 se po n\u011bm po\u0159\u00e1d ptaj\u00ed. Uva\u0159il jsem ho tedy znovu,&#8220; \u0159ekl pivovarn\u00edk. Kozi\u010dkov\u00e9 pivo bylo p\u0159ed dv\u011bma lety novinkou a od t\u00e9 doby si ho n\u00e1v\u0161t\u011bvn\u00edci slavnost\u00ed \u017e\u00e1dali.\u201eLetos ale p\u0159edstav\u00edm tak\u00e9 pivo svrchn\u011b kva\u0161en\u00e9. Je to n\u011bco zcela odli\u0161n\u00e9ho. Pij\u00ed ho lid\u00e9 nap\u0159\u00edklad v Anglii nebo v Nizozemsku. Ohledn\u011b chuti se to \u0161patn\u011b popisuje. Kdysi jsem zkou\u0161el uva\u0159it pivo s vinn\u00fdmi kvasinkami, to chutnalo trochu podobn\u011b,&#8220; sna\u017eil se vystihnout zvl\u00e1\u0161tnost piva Pat\u00e1k, podle n\u011bho\u017e lze nep\u0159esn\u011b, ale zato nejjednodu\u0161eji svrchn\u011b kva\u0161en\u00e9 pivo charakterizovat n\u00e1sledovn\u011b: \u201eJako kdy\u017e se do piva uleje hru\u0161kov\u00fd kompot.&#8220; Nad t\u00edmto popisem se mohou mu\u017ei u\u0161kl\u00edbnout, ale jen do t\u00e9 doby, ne\u017e se dozv\u011bd\u00ed, \u017ee svrchn\u011b kva\u0161en\u00e9 pivo sl\u00e1dek ze Bzence uva\u0159il s p\u0159id\u00e1n\u00edm kotvi\u010dn\u00edku zemn\u00edho, rostliny p\u0159ezd\u00edvan\u00e9 laiky jako bylinn\u00e1 viagra. Podle popis\u016f odborn\u00edk\u016f l\u00e1tky z kotvi\u010dn\u00edku podstatn\u011b zvy\u0161uj\u00ed pohlavn\u00ed touhy sm\u011b\u0159uj\u00edc\u00ed k dosa\u017een\u00ed slasti a zp\u016fsobuj\u00ed i dramatick\u00fd n\u00e1r\u016fst svalov\u00e9 hmoty na \u00fakor tuk\u016f. U mu\u017e\u016f zvy\u0161uj\u00ed hladinu testosteronu \u00fadajn\u011b a\u017e o t\u0159icet procent u \u017een podstatn\u011b zvy\u0161uj\u00ed hladinu estrogen\u016f. Pivovarn\u00edk nav\u00edc tuto v\u00e1rku piva va\u0159il o Filipojakub\u00acsk\u00e9 noci. Jedno z piv se bude op\u011bt \u010depovat ze z\u0159ejm\u011b nejv\u011bt\u0161\u00ed p\u00edpy na sv\u011bt\u011b vyroben\u00e9 v roce 2011 bzeneck\u00fdm \u0159ezb\u00e1\u0159em Janem Bendou. Minul\u00fd rok museli po\u0159adatel\u00e9 \u0159e\u0161it, kam tuto ob\u0159\u00ed p\u00edpu p\u0159esunou po ukon\u010den\u00ed slavnost\u00ed. Nakonec z\u016fstala v z\u00e1meck\u00e9m parku, co\u017e byl p\u016fvodn\u011b kv\u016fli hrozb\u011b vandalismu v\u0161emi zatracovan\u00fd sc\u00e9n\u00e1\u0159. B\u011bhem cel\u00e9ho roku se ale na zcela nekontrolovan\u00e9m m\u00edst\u011b tomuto pivn\u011b \u2013 um\u011bleck\u00e9mu d\u00edlu v\u016fbec nic nestalo. \u201eD\u00e1val jsem vandal\u016fm m\u011bs\u00edc, ne\u017e se objev\u00ed prvn\u00ed zn\u00e1mky jejich p\u016fsoben\u00ed, ale nic se nestalo. Byl jsem p\u00edpu zkontrolovat p\u0159ed p\u00e1r dny a nen\u00ed na n\u00ed jedin\u00fd \u010dm\u00e1ranec ani r\u00fdha po no\u017ei \u010di jin\u00e9m n\u00e1stroji,&#8220; potvrdil Pat\u00e1k.
