Pivo se krom\u011b sud\u016f m\u011blo plnit i do lahv\u00ed s keramick\u00fdm uz\u00e1v\u011brem. I sb\u011bratel\u00e9 pivn\u00edch suven\u00fdr\u016f si zde m\u011bli p\u0159ij\u00edt na sv\u00e9.<br \/>\n&#8222;Tady va\u0159\u00edm, pote se pod\u00edvat,&#8220; zval v srpnu 2005 sv\u00fdm siln\u00fdm brn\u011bnsk\u00fdm p\u0159\u00edzvukem Svatopluk Strava do pivovaru, kter\u00fd vybudoval ve sv\u00e9m rodinn\u00e9m domku. Tam, kde b\u00fdv\u00e1 pr\u00e1delna, m\u011bl va\u0159\u00edrnu, chladic\u00ed za\u0159\u00edzen\u00ed a slad m\u011bl ve stodole. &#8222;Tohle je kotel na knedle, jugosl\u00e1vsk\u00e1 v\u00fdroba, dvoupl\u00e1\u0161\u0165,&#8220; ukazoval py\u0161n\u011b nabl\u00fdskanou n\u00e1dobu. &#8222;Tady bude p\u0159id\u011blan\u00e9 m\u00edchadlo s p\u0159evodovkou a termostat. Vylep\u0161uju to kv\u016fli kontrol\u00e1m, kter\u00fd m\u011b \u010dekaj\u00ed kv\u016fli registraci. Hygien\u011b by se asi nel\u00edbilo, kdybych to furt m\u00edchal va\u0159ekou.&#8220; Svatopluk Strava se toti\u017e v roce 2005 prod\u00edral slo\u017eit\u00fdm procesem, aby mohl sv\u00e9 pivo leg\u00e1ln\u011b va\u0159it ve v\u011bt\u0161\u00edm mno\u017estv\u00ed, ne\u017e je povolen\u00fdch 200 litr\u016f ro\u010dn\u011b, a sv\u016fj v\u00fdrobek tak\u00e9 prod\u00e1vat. &#8222;Napi\u0161te tam, jak je nespravedliv\u00fd, \u017ee vina\u0159i m\u016f\u017eou ro\u010dn\u011b voln\u011b vyrobit 1000 litr\u016f v\u00edna, zat\u00edmco piva se m\u016f\u017ee jen 200 litr\u016f,&#8220; lamentoval. Pro sv\u00e9 pivo u\u017e zaregistroval zna\u010dku Xaver podle stejnojmenn\u00e9 restaurace sv\u00e9ho otce. &#8222;Otec je Franti\u0161ek a narodil se den p\u0159ed svat\u00fdm Franti\u0161kem Xaversk\u00fdm,&#8220; vysv\u011btlil p\u016fvod jm\u00e9na. Pov\u00eddav\u00fd t\u0159ic\u00e1tn\u00edk v letn\u00ed kv\u011btovan\u00e9 ko\u0161ili a oran\u017eov\u00fdch kra\u0165asech byl \u017eivnostn\u00edk, obchodoval &#8222;se v\u0161\u00edm mo\u017en\u00fdm&#8220;. Vystudoval dopravn\u00ed pr\u016fmyslovku. Deset let d\u011blal \u0159idi\u010de. Po vy\u0159\u00edzen\u00ed v\u0161ech formalit se hodlal \u017eivit va\u0159en\u00edm a prodejem sv\u00e9ho Xavera. &#8222;Cht\u011bl bych to stihnout je\u0161t\u011b letos. \u010c\u00edslo 2005 se mi l\u00edb\u00ed jako datum zalo\u017een\u00ed pivovaru. Ale 2006 je\u0161t\u011b taky ujde. Budu toho samoz\u0159ejm\u011b va\u0159it v\u00edc, ale jen tak, abych to nemusel \u010durdit n\u011bjakou chemi\u00ed,&#8220; sliboval. Na sv\u00e9 pivo pou\u017e\u00edval bavorsk\u00fd (na 120 stupn\u00edch pra\u017een\u00fd) slad. &#8222;D\u00e1v\u00e1m ho i do sv\u011btl\u00e9ho piva. Z norm\u00e1ln\u00edho, \u010desk\u00fdho sladu mi to n\u011bjak neleze. Kdy\u017e se chcu napit, tak toho chcu m\u00edt plnou hubu,&#8220; sm\u00e1l se. &#8222;Chla\u010f\u00e1k&#8220; pracoval na pln\u00e9 obr\u00e1tky, byly tu t\u0159i stupn\u011b. Pan Strava na ochutn\u00e1n\u00ed na\u010depoval &#8222;sv\u011btlou patn\u00e1ctku&#8220;. &#8222;Ale je to je\u0161t\u011b mlad\u00fd pivo, m\u011blo by je\u0161t\u011b nejm\u00ed\u0148 \u0161edes\u00e1t dn\u00ed zr\u00e1t,&#8220; upozornil.<br \/>\nV listopadu 2005 dosud nebyl minipivovar v komer\u010dn\u00edm provozu.<br \/>\nMinipivovar byl od po\u010d\u00e1tku roku 2006 v ofici\u00e1ln\u00edm provozu. Od \u00fanora 2006 m\u011bl majitel pivov\u00e1rku v pron\u00e1jmu stylovou restauraci Xaver na adrese M\u011bn\u00ednsk\u00e1 74, Blu\u010dina (Otv\u00edrac\u00ed doba: Po &#8211; \u010ct: 11 &#8211; 23 hod., P\u00e1 &#8211; So: 11 &#8211; 01 hod., Ne: 11 &#8211; 22 hod.; tel: 547 235 075). Pivo Xaver se tam v pr\u016fb\u011bhu \u00fanora to\u010dilo zat\u00edm nepravideln\u011b, jeliko\u017e nebyl \u010dek\u00e1n takov\u00fd z\u00e1jem a kapacita minipivov\u00e1rku byla omezena. B\u011bhem b\u0159ezna se m\u011bla situace srovnat.<br \/>\nOd b\u0159ezna 2006 se to\u010dilo pivo z minipivovaru v Blu\u010din\u011b ve zdej\u0161\u00ed restauraci Xaver. Proto\u017ee majitel a sl\u00e1dek v jedn\u00e9 osob\u011b Svatopluk Strava ne\u010dekal takov\u00fd z\u00e1jem, nesta\u010dila kapacita pivov\u00e1rku. Na ja\u0159e 2006 byl ofici\u00e1ln\u00ed sortiment ve slo\u017een\u00ed 12 % Xaver sv\u011btl\u00e9, 15 % Franti\u0161ek polotmav\u00e9 a 18 % Old\u0159ich tmav\u00e9 s p\u0159\u00edchut\u00ed ko\u0159en\u00ed. Majitel se sna\u017eil, aby v\u017edy bylo v restauraci na \u010depu aspo\u0148 jedno vlastn\u00ed pivo. Pan Strava intenzivn\u011b pracoval na roz\u0161\u00ed\u0159en\u00ed pivov\u00e1rku.<br \/>\nPivov\u00e1rek se op\u011bt na podzim 2006 \u201evracel do hry\u201c. V\u00fdroba chmelov\u00e9ho moku zde m\u011bla t\u0159i m\u011bs\u00edce p\u0159est\u00e1vku z d\u016fvodu v\u00fdm\u011bny varn\u00edho kotle za v\u011bt\u0161\u00ed. V \u0159\u00edjnu 2006 zdej\u0161\u00ed sl\u00e1dek a majitel v jedn\u00e9 osob\u011b Svatopluk Strava ve sv\u00e9m rodinn\u00e9m domku uva\u0159il v\u00e1rku 18-stup\u0148ov\u00e9ho piva Old\u0159ich kter\u00e1 byla k ochutn\u00e1n\u00ed i v jedn\u00e9 brn\u011bnsk\u00e9 restauraci. P\u0159ipravovalo se i speci\u00e1ln\u00ed sklenice pro tento le\u017e\u00e1k, kter\u00e9 by m\u011bly b\u00fdt hotovy v pr\u016fb\u011bhu m\u011bs\u00edce listopadu. B\u011bhem nucen\u00e9 technologick\u00e9 v\u00fdluky pracoval Svatopluk Strava na chu\u0165ov\u00fdch \u00faprav\u00e1ch pivn\u00ed rarity Xaveru Speci\u00e1l 22%. To, zda tento siln\u00fd le\u017e\u00e1k konzumenty zaujme, se v\u0161ak m\u011blo uk\u00e1zat a\u017e v \u00fanoru 2007, kdy pivo dozr\u00e1lo. Mok dostal jm\u00e9no a to Vladim\u00edr.<br \/>\nOd poloviny ledna 2006 byl Old\u0159ich k ochutn\u00e1n\u00ed tak\u00e9 v Rajhrad\u011b v restauraci U kina. Postupn\u011b se v Rajhrad\u011b, stejn\u011b jako v Blu\u010din\u011b u Xavera m\u011bla vyst\u0159\u00eddat v\u0161echna piva podle toho jak dozr\u00e1vala. Po tmav\u00e9, ho\u0159k\u00e9 18% v \u00fanoru 2007 n\u00e1sledovala sv\u011btl\u00e1 22% Vladim\u00edr. Tohoto speci\u00e1lu v\u0161ak bylo jen omezen\u00e9 zku\u0161ebn\u00ed mno\u017estv\u00ed.<br \/>\nMinipivovar p\u0159edstavil v \u00fanoru 2007 nov\u00fd speci\u00e1l a to Vladim\u00edr 22% se z\u00e1zvorem. Pivo se za\u010dalo to\u010dit o v\u00edkendu 16.,17. a 18.2.2007 v restaurac\u00edch Xaver v Blu\u010din\u011b, Vegas v Brn\u011b a U kina v Rajhrad\u011b do speci\u00e1ln\u00edch sklenic.<br \/>\nV \u010dervnu 2008 minipivovar v Blu\u010din\u011b neva\u0159il.<br \/>\nNa podzim 2008 majitel a sl\u00e1dek Sv\u00e1\u0165a Strava nad\u00e1le pivo va\u0159il.<br \/>\nV l\u00e9t\u011b 2011 se pivo Xaver va\u0159ilo nepravideln\u011b. Objevovalo se sporadicky v r\u016fzn\u00fdch restaurac\u00edch v Brn\u011b.<br \/>\nV b\u0159eznu 2014 v prodeji sv\u011btl\u00e9 pivo &#8211; Xaver 12%. 13.3.
