Ka\u017ed\u00fd pr\u00e1zdninov\u00fd v\u00edkend byl na \u010depu pivn\u00ed speci\u00e1l \u2013 5.-6.7. Konopn\u00fd Zobak, 12.-13.7. Bezov\u00fd Zobak, 19.-20.7. \u0160vestkov\u00fd Zobak, 26.-27.7. Bor\u016fvkov\u00fd Zobak, 2.-3.8. \u010cern\u00fd Zobak, , 16.-17.8. Polotmav\u00fd Zobak, 23.-24.8. Medov\u00fd Zobak, 30.-31.8. Naku\u0159ovan\u00fd polotmav\u00fd Zobak.<\/li>\n<li>Dne 19.5.2014 na \u010depu Zobak 12\u00b0 sv\u011btl\u00e9.<\/li>\n<li>Od 4.10. 2013 na \u010depu \u010cern\u00fd Zobak.<\/li>\n<\/ul>\n<p><u>Star\u0161\u00ed info:<\/u><br \/>\nHeslem \u201eKde se pivo va\u0159\u00ed, tam se dob\u0159e da\u0159\u00ed&#8220; se nejsp\u00ed\u0161 \u0159\u00edd\u00ed Petr Holub. Ten se provoz sv\u00e9ho restaura\u010dn\u00edho za\u0159\u00edzen\u00ed v B\u00edlovci rozhodl o\u017eivit va\u0159en\u00edm vlastn\u00edho zlatav\u00e9ho moku. Pivo, kter\u00e9 dostalo netradi\u010dn\u00ed n\u00e1zev Zob\u00e1k, by se ve\u0159ejnosti m\u011blo p\u0159edstavit v polovin\u011b srpna. Hospodsk\u00e9 \u010dinnosti se Petr Holub v\u011bnoval dlouh\u00fdch 16 let. Co tedy ost\u0159\u00edlen\u00e9ho hospodsk\u00e9ho p\u0159ivedlo na n\u00e1pad za\u010d\u00edt va\u0159it vlastn\u00ed pivo? \u201eByl to z\u00e1jem a zkoum\u00e1n\u00ed pivovarnick\u00e9ho pr\u016fmyslu, r\u016fzn\u00e9 pivovarnick\u00e9 exkurze a podobn\u011b, ale hlavn\u011b touha odli\u0161it se od ostatn\u00edch hospod. Cht\u011bl jsem, a\u0165 jsme v n\u011b\u010dem jin\u00ed a m\u016f\u017eeme trochu ovlivnit cenu piva,&#8220; p\u0159iznal Petr Holub.<br \/>\nOd kur\u00e1\u017en\u00e9 my\u0161lenky zb\u00fdvalo u\u017e jen p\u00e1r krok\u016f k uva\u0159en\u00ed vlastn\u00edho piva. Po nasb\u00edr\u00e1n\u00ed dostate\u010dn\u00e9ho mno\u017estv\u00ed zku\u0161enost\u00ed a zakoupen\u00ed technologie a know-how k v\u00fdrob\u011b \u201etekut\u00e9ho chleba&#8220; se Petr Holub pustil do va\u0159en\u00ed. Pod jeho veden\u00edm tak v B\u00edlovci vznikla klasick\u00e1 sv\u011btl\u00e1 dvan\u00e1ctka plze\u0148sk\u00e9ho typu. Jakou bude m\u00edt chu\u0165, ale zat\u00edm nev\u011bd\u011bl ani s\u00e1m sl\u00e1dek. \u201ePrvn\u00ed v\u00e1rku, kter\u00e1 by m\u011bla pokr\u00fdt \u010d\u00e1st pl\u00e1novan\u00e9 spot\u0159eby, jsme ji\u017e uva\u0159ili. Jak p\u0159esn\u011b chutn\u00e1, ale nev\u00edme. Pivo se po uva\u0159en\u00ed toti\u017e ned\u00e1 ihned p\u00edt. Jeho chu\u0165 okus\u00edme a\u017e za n\u011bjak\u00fdch \u010dty\u0159icet p\u011bta\u010dty\u0159icet dn\u00ed. Tak\u017ee n\u00e1m nezb\u00fdv\u00e1 ne\u017e \u010dekat,&#8220; vysv\u011btlil v \u010dervenci 2012 sl\u00e1dek Holub.<br \/>\nN\u00e1zev b\u00edloveck\u00fd v\u00fdtvor dostal netradi\u010dn\u00ed, Zob\u00e1k. Ov\u0161em ve spojitosti s hospodsk\u00fdm Petrem Holubem a\u017e tak netradi\u010dn\u00ed a p\u0159ekvapiv\u00fd nebyl. \u201eZob\u00e1k je vlastn\u011b moje p\u0159ezd\u00edvka. \u0158\u00edkali mi tak zamlada,&#8220; sm\u00e1l se Holub. A nejen n\u00e1zvem by m\u011blo pivo budouc\u00ed \u0161tamgasty zaujmout. \u201ePodle receptury, kterou jsme pou\u017eili, by pivo ve v\u00fdsledku m\u011blo b\u00fdt snadno rozpoznateln\u00e9 od ostatn\u00edch. Nebude to toti\u017e europivo, ale klasicky va\u0159en\u00e9 pivo ze sladu, kvasnic, chmele a vody. Tak\u017ee by m\u011blo b\u00fdt takov\u00e9 poctiv\u00e9,&#8220; pl\u00e1noval sl\u00e1dek. Vz\u00e1p\u011bt\u00ed doplnil, \u017ee tak\u00e9 cena moku by m\u011bla b\u00fdt jin\u00e1 ne\u017e u b\u011b\u017en\u00fdch piv. \u201eN\u00e1mi uva\u0159en\u00e9 pivo bude ur\u010dit\u011b levn\u011bj\u0161\u00ed ne\u017e ostatn\u00ed zlatav\u00e9 moky. To ale neznamen\u00e1, \u017ee bychom je u n\u00e1s u\u017e ne\u010depovali. To nehroz\u00ed, ale chceme, aby se z na\u0161eho piva stala hlavn\u00ed dev\u00edza na\u0161eho za\u0159\u00edzen\u00ed,&#8220; vysv\u011btlil Petr Holub.(zdroj: novojicinsky.denik.cz)<br \/>\nPrvn\u00ed v\u00e1rka sv\u011btl\u00e9 dvan\u00e1ctky Zobak (kr\u00e1tk\u00e9 &#8222;a&#8220; je v ofici\u00e1ln\u00edm n\u00e1zvu) byla slavnostn\u011b nara\u017eena v restauraci U Holub\u016f v B\u00edlovci dne 17.8.2012 v 17:00. Pivo bylo prod\u00e1v\u00e1no za zav\u00e1d\u011bc\u00ed cenu 19 K\u010d. Nov\u00e1 pivn\u00ed zna\u010dka je to\u010dena do vysok\u00fdch sklenic s logem.<br \/>\nDal\u0161\u00ed v\u00e1rka piva byla na \u010depu od 10.z\u00e1\u0159\u00ed 2012.<br \/>\nVarna o objemu 200 litr\u016f byla p\u0159ivezena z minipivovaru Starokladno (U Kozl\u00edk\u016f). Kvasnice jsou odeb\u00edr\u00e1ny z Pivovaru \u010cern\u00e1 Hora.<br \/>\nDne 27.9.2012 bylo pivo Zobak ji\u017e za standardn\u00ed cenu 21 K\u010d.<br \/>\nNa konec roku 2012 byla nachyst\u00e1na polotmav\u00e1 16\u00b0 s p\u0159\u00edchut\u00ed sko\u0159ice a bady\u00e1nu.<br \/>\nV prvn\u00edch dnech ledna 2013 na \u010depu krom\u011b standardn\u00edho le\u017e\u00e1ku Zobak 12\u00b0 tak\u00e9 sv\u011btl\u00fd speci\u00e1l Zobak 13\u00b0 (0,5 l za 23 K\u010d). Pivo bylo to\u010deno do ku\u017eelovit\u00fdch sklenic s logem, t\u00e1cky ani jin\u00fd reklamn\u00ed materi\u00e1l zat\u00edm st\u00e1le nebyl.<br \/>\nDne 28.2. na \u010depu Zobak 12\u00b0 sv\u011btl\u00e9 (0,5 l za 21 K\u010d).<br \/>\nDne 15.4. st\u00e1le na \u010depu Zobak 12\u00b0 sv\u011btl\u00e9 (0,5 l za 21 K\u010d).<br \/>\nDne 22.5.2013 nov\u011b na \u010depu i Zobak 10\u00b0. Dne 25.5. tak\u00e9 polotmav\u00fd speci\u00e1l do vyprod\u00e1n\u00ed z\u00e1sob.<br \/>\nDne 3.7. na \u010depu piva Zobak 10\u00b0 sv\u011btl\u00e9, 12\u00b0 sv\u011btl\u00e9 a 12\u00b0 polotmav\u00e9.<br \/>\nPetr Holub, majitel b\u00edloveck\u00e9ho a minipivovaru, prozradil v srpnu 2013, s \u010d\u00edm v\u0161\u00edm se b\u011bhem uplynul\u00e9ho roku pot\u00fdkal, a tak\u00e9 t\u0159eba to, jak\u00e9 oslavy chystali k prvn\u00edmu v\u00fdro\u010d\u00ed minipivovaru. Cht\u011bl se odli\u0161it od ostatn\u00edch hospod a tak\u00e9 o\u017eivit provoz sv\u00e9ho restaura\u010dn\u00edho za\u0159\u00edzen\u00ed. Proto se p\u0159ed rokem rozhodl va\u0159it vlastn\u00ed pivo, kter\u00e9mu dal neobvykl\u00fd n\u00e1zev Zobak.<br \/>\n\u2022 Brzy uplyne rok od otev\u0159en\u00ed va\u0161eho minipivovaru Zobak. M\u016f\u017eete uplynul\u00fd rok zhodnotit?<br \/>\nUplynul\u00fd rok byl pro m\u011b rokem pozn\u00e1v\u00e1n\u00ed, zdokonalov\u00e1n\u00ed, z\u00edsk\u00e1v\u00e1n\u00ed informac\u00ed a neust\u00e1l\u00e9ho zkou\u0161en\u00ed. Nejt\u011b\u017e\u0161\u00ed byl samoz\u0159ejm\u011b za\u010d\u00e1tek, kdy jsme p\u0159i v\u00fdrob\u011b piva nar\u00e1\u017eeli na nejr\u016fzn\u011bj\u0161\u00ed provozn\u00ed i v\u00fdrobn\u00ed probl\u00e9my, ale se v\u0161emi jsme si postupn\u011b poradili. Za ten rok jsem poznal spoustu lid\u00ed z oblasti pivovarnictv\u00ed a sladovnictv\u00ed a k m\u00e9mu p\u0159ekvapen\u00ed byli v\u0161ichni velice vst\u0159\u00edcn\u00ed a ochotn\u00ed.<br \/>\n\u2022 Na co jste py\u0161n\u00fd a co se v\u00e1m naopak moc nepovedlo?<br \/>\nPy\u0161n\u00fd jsem ur\u010dit\u011b na na\u0161i dvan\u00e1ctku, kter\u00e1 skl\u00edz\u00ed velk\u00e9 pochvaly od ve\u0159ejnosti na pivn\u00edch festivalech a v na\u0161\u00ed restauraci si na\u0161la taky spoustu p\u0159\u00edznivc\u016f. Nov\u011b i na\u0161e des\u00edtka je na dobr\u00e9 cest\u011b. Taky n\u00e1\u0161 slogan \u201eDr\u017e Zobak a napij se\u201c se l\u00edb\u00ed hodn\u011b lidem.<br \/>\nNejv\u00edc se nepovedlo, kdy\u017e jsem loni na podzim musel vyl\u00edt asi 2500 litr\u016f piva do kan\u00e1lu, jeliko\u017e bylo kysel\u00e9. P\u0159i v\u00fdrob\u011b piva se pou\u017e\u00edvaj\u00ed n\u011bkolikr\u00e1t dokola jedny pivovarsk\u00e9 kvasnice. Tenkr\u00e1t n\u00e1m zkysla jedna v\u00e1rka a my si pak dal\u0161\u00ed v\u00e1rky nev\u011bdomky t\u011bmito kvasnicemi infikovali sami. Samoz\u0159ejm\u011b na to \u010dlov\u011bk p\u0159ijde a\u017e v dob\u011b, kdy m\u00e1 j\u00edt pivo na \u010dep, a tak \u0161lo m\u00edsto na \u010dep do kan\u00e1lu a n\u011bjakou dobu jsme byli bez piva. Na druh\u00e9 stran\u011b n\u00e1s to v mnoh\u00e9m pou\u010dilo. Zdokonalili jsme technologii, aby k tomu ji\u017e nedoch\u00e1zelo. Tak\u017ee v\u0161echno zl\u00e9 je k n\u011b\u010demu dobr\u00e9.<br \/>\n\u2022 Chyst\u00e1te k prvn\u00edmu v\u00fdro\u010d\u00ed n\u011bjakou oslavu?<br \/>\nAno. Na cel\u00e9 pr\u00e1zdniny jsme nachystali v\u00edkendov\u00fd program nazvan\u00fd Pr\u00e1zdniny se Zobakem, kdy ka\u017ed\u00fd pr\u00e1zdninov\u00fd v\u00edkend m\u00e1me na \u010depu krom na\u0161\u00ed des\u00edtky a dvan\u00e1ctky i n\u011bjak\u00fd speci\u00e1l. V sobotu 10. srpna prob\u011bhnou u p\u0159\u00edle\u017eitosti ro\u010dn\u00edho v\u00fdro\u010d\u00ed Slavnosti minipivovaru Zobak. V p\u0159\u00edpad\u011b dobr\u00e9ho po\u010das\u00ed \u010dek\u00e1 na\u0161e n\u00e1v\u0161t\u011bvn\u00edky \u017eiv\u00e1 hudba, grilov\u00e1n\u00ed, sout\u011b\u017ee pro d\u011bti, z\u00e1pasy thajsk\u00e9ho boxu a samoz\u0159ejm\u011b na\u0161e pivo.<br \/>\n\u2022 Jakou p\u0159\u00edchu\u0165 bylo nejt\u011b\u017e\u0161\u00ed vyrobit? A jak\u00fd v\u00e1\u0161 speci\u00e1l nejv\u00edce zaujal v\u00e1s osobn\u011b? Se speci\u00e1ly jsme v podstat\u011b za\u010d\u00e1tc\u00edch. D\u011blali jsme v\u00e1no\u010dn\u00ed, velikono\u010dn\u00ed, medov\u00fd, bezov\u00fd, polotmav\u00fd a v dal\u0161\u00edch v\u00edkendech n\u00e1s \u010dek\u00e1 \u010dern\u00fd, malinov\u00fd, bor\u016fvkov\u00fd, \u0161vestkov\u00fd a konopn\u00fd speci\u00e1l. Mn\u011b osobn\u011b zat\u00edm nejv\u00edce chutnal polotmav\u00fd.<br \/>\n\u2022 A co va\u0161i host\u00e9? Zvykli si na va\u0161e speci\u00e1ln\u00ed pivo, nebo d\u00e1vaj\u00ed p\u0159ednost klasick\u00fdm zna\u010dk\u00e1m?<br \/>\nMus\u00edm \u0159\u00edct, \u017ee \u0159ada na\u0161ich host\u016f \u00fapln\u011b p\u0159e\u0161la na na\u0161e pivo. Dal\u0161\u00ed \u0159ada host\u016f n\u00e1s nav\u0161t\u00edv\u00ed jenom proto, \u017ee m\u00e1me sv\u00e9 pivo. Jezd\u00ed k n\u00e1m lidi z cel\u00e9 republiky, berou to jako v\u00fdlet. P\u0159edminul\u00fd t\u00fdden u n\u00e1s byli z\u00e1kazn\u00edci ze \u0160umavy a z Plzn\u011b. Nejv\u011bt\u0161\u00ed vzd\u00e1lenost kv\u016fli na\u0161emu pivu absolvoval asi jeden Rus, kter\u00fd mi nejd\u0159\u00edve psal e-mail a pak opravdu p\u0159ijel. Pak jsou tac\u00ed, kte\u0159\u00ed to st\u0159\u00eddaj\u00ed, ale samoz\u0159ejm\u011b jsou z\u00e1kazn\u00edci, kte\u0159\u00ed z\u016fstali v\u011brni zna\u010dce, kterou pili. Celkov\u011b jsem za ten rok s t\u00edm, kolik lid\u00ed na\u0161e pivo za\u010dalo p\u00edt, velice spokojen.<br \/>\n\u2022 M\u00e1te n\u011bjakou metu pro dal\u0161\u00ed roky?<br \/>\nUr\u010dit\u011b, v tomto odv\u011btv\u00ed se m\u00e1 \u010dlov\u011bk neust\u00e1le co u\u010dit a zdokonalovat, tak\u017ee bych cht\u011bl hlavn\u011b zdokonalit v\u00fdrobn\u00ed proces, co se t\u00fdk\u00e1 technologi\u00ed, potom samoz\u0159ejm\u011b zkou\u0161et va\u0159it nov\u00e9 druhy piv a \u010dekat na reakci na\u0161ich z\u00e1kazn\u00edk\u016f. A tak\u00e9 z\u00edsk\u00e1vat co nejv\u00edce p\u0159\u00edznivc\u016f na\u0161eho piva.
