Jeho zrod je popisov\u00e1n n\u011bkolika teoriemi.<\/p>\n<p>Ta romanti\u010dt\u011bj\u0161\u00ed p\u0159i\u010d\u00edt\u00e1 p\u016fvod tohoto n\u00e1poje Hugenot\u016fm. Byli to francouz\u0161t\u00ed protestanti pron\u00e1sledov\u00e1n\u00ed ve sv\u00e9 zemi katolick\u00fdmi kr\u00e1li. N\u00e1bo\u017eensk\u00fd \u00fatisk vyvolal masovou vlnu emigrace do protestantsk\u00fdch zem\u00ed Evropy. Hugenoti se p\u0159i \u00fat\u011bku p\u0159es severn\u00ed Evropu setkali s mno\u017estv\u00edm region\u00e1ln\u00edch piv z Flander, Bruselu a Por\u00fdn\u00ed. V t\u011bchto regionech se tradi\u010dn\u011b p\u0159ipravovalo svrchn\u011b kva\u0161en\u00e9 pivo s vyu\u017eit\u00edm voln\u011b \u017eij\u00edc\u00edch kvasinek, p\u0159i va\u0159en\u00ed byla hojn\u011b pou\u017e\u00edv\u00e1na p\u0161enice.<\/p>\n\n<p>Dal\u0161\u00ed teorie poukazuje na sl\u00e1dka jm\u00e9nem Cord Broyhan. Ten jako mlad\u00fd p\u0159i\u0161el do Hamburku, aby pracoval jako pomocn\u00edk v pivovaru. V roce 1524 opustil Hamburk a p\u0159est\u011bhoval se do Hannoveru. Vyu\u017eil sv\u00e9 nabyt\u00e9 znalosti o pivovarnictv\u00ed a za\u010dal se intenzivn\u011b v\u011bnovat v\u00fdrob\u011b piva.<\/p>\n<p>V roce 1526 je v Hannoveru uv\u00e1d\u011bno sv\u011btl\u00e9 pivo s n\u00e1zvem \u201eHalberst\u00e4dter Broihan (Broyhan)\u201c. Krom\u011b vody, chmele a kvasnic ho sl\u00e1dek vyrobil z t\u0159etinov\u00e9ho d\u00edlu p\u0161eni\u010dn\u00e9ho sladu a dvou t\u0159etin je\u010dn\u00e9ho sladu. Toto svrchn\u011b kva\u0161en\u00e9 pivo z\u00edskalo rychle oblibu nejen ve m\u011bst\u011b, ale vyv\u00e1\u017eelo se \u00fasp\u011b\u0161n\u011b do \u0161irok\u00e9ho regionu.<\/p>\n<p>Ani po smrti tv\u016frce piva v roce 1570 z\u00e1jem o mok nepoklesl. V 17.stolet\u00ed se pivo uchytilo v berl\u00ednsk\u00fdch pivovarech a v tomto tehdy kosmopolitn\u00edm m\u011bst\u011b rychle zdom\u00e1cn\u011blo. M\u00edstn\u00ed pivovary upravily recept a v dokumentu z roku 1680 je poprv\u00e9 uvedeno pivo &#8222;Berlinische Weitzenbier&#8220;.<\/p>\n<p><img decoding=\"async\" class=\"ngg-singlepicngg-center\" src=\"https:\/\/www.pivovary.info\/wp-content\/gallery\/galerie-pivni\/berliner-weisse-h.jpg\" alt=\"\"><\/p>\n<p>Je mo\u017en\u00e9, \u017ee pravda o skute\u010dn\u00e9m zrodu stylu Berliner Weisse je kombinac\u00ed obou zm\u00edn\u011bn\u00fdch teori\u00ed.<\/p>\n<p>Druh\u00e1 polovina 19.stolet\u00ed p\u0159inesla do obru v\u00fdroby piva d\u00edky \u201epr\u016fmyslov\u00e9 revoluci\u201c z\u00e1sadn\u00ed technologick\u00e9 zm\u011bny. Vyn\u00e1lez um\u011bl\u00e9ho chlazen\u00ed umo\u017enil pivovar\u016fm celoro\u010dn\u00ed masivn\u00ed v\u00fdrobu spodn\u011b kva\u0161en\u00fdch je\u010dn\u00fdch le\u017e\u00e1k\u016f. M\u00edstn\u00ed speciality byly vytla\u010dov\u00e1ny z kr\u010dem. Byly uzav\u00edr\u00e1ny drobn\u00e9 pivov\u00e1rky zalo\u017een\u00e9 na ru\u010dn\u00ed pr\u00e1ci. Beliner Weisse postihl stejn\u00fd nedobr\u00fd osud jako mnoho region\u00e1ln\u00edch piv.<\/p>\n<p>Nev\u00fdhodou tohoto n\u011bmeck\u00e9ho druhu p\u0161eni\u010dn\u00e9ho piva bylo n\u00e1ro\u010dn\u011b \u0159\u00edzen\u00e9 spont\u00e1nn\u00ed kva\u0161en\u00ed. Z\u00e1chranou pro Berliner Weisse byl objev biochemika Maxe Delbr\u00fccka, jednoho ze zakladatele berl\u00ednsk\u00e9ho v\u00fdzkumn\u00e9ho \u00fastavu pivovarnick\u00e9ho. Ten na po\u010d\u00e1tku 20.stolet\u00ed izoloval bakteri\u00e1ln\u00ed kmen, pozd\u011bji pojmenov\u00e1n po sv\u00e9m objeviteli Lactobacillus delbruckii. Ten dok\u00e1zal p\u0159i v\u00fdrob\u011b n\u011bkter\u00fdch druh\u016f piv dodat charakteristickou v\u00fdraznou kyselost.<\/p>\n<p>Pot\u00e9 ji\u017e byl Berliner Weisse vyr\u00e1b\u011bn nikoliv spont\u00e1nn\u00edm kva\u0161en\u00edm, ale svrchn\u00edm kva\u0161en\u00edm a p\u0159id\u00e1n\u00edm ml\u00e9\u010dn\u00fdch bakteri\u00ed. Z pivn\u00ed mapy sv\u011bta tak druh sice nevymizel, ale d\u0159\u00edv\u011bj\u0161\u00ed obliby ji\u017e nedos\u00e1hl.<\/p>\n<p>Asi nejzn\u00e1m\u011bj\u0161\u00ed je tento produkt v sou\u010dasnosti z varen berl\u00ednsk\u00fdch pivovar\u016f Berliner Kindl a Schulheiss, kter\u00e9 se v lednu 2006 spojily do spole\u010dnosti Berliner-Kindl-Schultheiss-Brauerei.<\/p>\n<p>Celosv\u011btov\u00fd rozvoj zakl\u00e1d\u00e1n\u00ed minipivovar\u016f p\u0159inesl i opra\u0161ov\u00e1n\u00ed recept\u016f star\u00fdch region\u00e1ln\u00edch druh\u016f piv. P\u0159i v\u00fdrob\u011b starobyl\u00e9ho n\u011bmeck\u00e9ho piva se dnes pou\u017e\u00edv\u00e1 50-60 % p\u0161eni\u010dn\u00e9ho sladu (\u010di nesladovan\u00e9 p\u0161enice). Tradi\u010dn\u011b se jedn\u00e1 o velmi slab\u00e9 pivo se stup\u0148ovitost\u00ed 7 a\u017e 8\u00b0 Plato. Typick\u00e1 je velmi sv\u011btl\u00e1 barva (4 &#8211; 8 EBC), velmi n\u00edzk\u00e1 chmelov\u00e1 ho\u0159kost (3 &#8211; 8 IBU) a n\u00edzk\u00fd obsah alkoholu (2,8 &#8211; 3,8%). \u010casto se pod\u00e1v\u00e1 pro zjemn\u011bn\u00ed kyselosti s p\u0159\u00eddavkem ovocn\u00e9ho sirupu nebo je ovoce pou\u017eito p\u0159\u00edmo p\u0159i v\u00fdrob\u011b.<\/p>\n<p>Typick\u00e1 je barva sl\u00e1mov\u011b \u017elut\u00e1, s rychle miz\u00edc\u00ed p\u011bnou a ost\u0159e trpkou, kyselou a velmi osv\u011b\u017euj\u00edc\u00ed chut\u00ed, ve kter\u00e9 t\u00e9m\u011b\u0159 nen\u00ed patrn\u00e1 chmelov\u00e1 ho\u0159kost.<\/p>\n<p>Tak\u00e9 n\u011bkter\u00e9 \u010desk\u00e9 pivovary se pustili do v\u00fdroby t\u00e9to speciality:<\/p>\n\n<p>Pivovar Cobolis dne 5.11. 2018 narazil sud se speci\u00e1lem Strong Berliner Weisse s Aroni\u00ed 14. (6,5%).<br \/>\nPivovar Lobe\u010d v \u010dervnu 2018 p\u0159i\u0161el s dlouho o\u010dek\u00e1vanou kyselou letn\u00ed chu\u0165ovkou Lobe\u010d Weisse 9. Osv\u011b\u017euj\u00edc\u00ed velmi slab\u00e9 a nakysl\u00e9, z poloviny p\u0161eni\u010dn\u00e9 jemn\u011b chmelen\u00e9 pivo nar\u016f\u017eov\u011bl\u00e9 barvy a ovocit\u00e9ho n\u00e1dechu po koko\u0159\u00ednsk\u00fdch trnk\u00e1ch. (EPM: 9,5%, IBU 4,9, alk. 3,8% obj.). Pou\u017eili n\u011bmeck\u00fd chmel Hallertauer Hersbrucker a japonsk\u00fd Sorachi Ace.<br \/>\nPivovar Clock v srpnu 2017 nab\u00eddl kysel\u00fd speci\u00e1l Nina Blueberry Berliner Weisse (200 g bor\u016fvek na 1 l piva).<br \/>\nV Pivovaru Zichovec v \u00fanoru 2018 uva\u0159ili sv\u00e9ho prvn\u00edho \u201ekysel\u00e1\u010de\u201c.
